MARBLED MINT-CHOCOLATE PUDDING



Marbled Mint-Chocolate Pudding image

Number Of Ingredients 12

4 ounces white chocolate, chopped
1/4 teaspoons mint extract
1 cup heavy cream
1/4 teaspoons kosher salt
2 large egg yolks
4 ounces bittersweet or semisweet chocolate, chopped
1/2 cup heavy cream
1/2 cup whole milk
2 tablespoons sugar
1/4 teaspoons kosher salt
2 large egg yolks
Chocolate cookies, broken into large pieces (for serving)

Steps:

  • Place white chocolate and mint extract in a small bowl. Bring cream to a simmer in a small saucepan over medium heat.
  • Meanwhile, whisk salt into egg yolks in a medium bowl. Gradually whisk hot cream into egg mixture until incorporated. Return to saucepan; cook over medium heat, stirring constantly, until custard is thick enough to coat spoon, about 4 minutes. (Scrape bottom of saucepan while you stir to keep eggs from curdling.) Pour custard over white chocolate; let sit a minute or two. Stir until chocolate is melted and mixture is smooth.
  • Place chocolate in a small bowl. Bring cream and milk to a simmer in a small saucepan over medium heat.
  • Meanwhile, whisk sugar and salt into egg yolks in a medium bowl. Gradually whisk hot cream mixture into egg mixture until incorporated. Return to saucepan; cook over medium heat, stirring constantly, until custard is thick enough to coat spoon, about 4 minutes. (Scrape bottom of saucepan while you stir to keep eggs from curdling.) Pour custard over chocolate; let sit a minute or two. Stir until chocolate is melted and mixture is smooth.
  • Spoon a little chocolate custard into small glasses, then top with a little mint custard. Repeat layering until custard is evenly divided among glasses. Swirl with a skewer or the tip of a thin knife to marble, making sure to extend all the way to the sides of the glass. Let chill until cold, at least 2 hours.
  • Serve pudding topped with cookies.
  • Do ahead: Pudding can be made 3 days ahead. Cover and keep chilled.

1 pkg. (4 oz.) BAKER'S Unsweetened Chocolate
1/2 cup butter
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed, softened
1-1/4 cups sugar, divided
1 egg
1 tsp. vanilla
1/3 cup red raspberry jam

Steps:

  • Mix flour, baking soda and salt. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min.; stir until chocolate is completely melted. Add cream cheese; stir until completely melted. Stir in 1 cup sugar, egg and vanilla. Add flour mixture; mix well. Refrigerate 15 min.
  • Heat oven to 375°F. Roll dough into 1-inch balls; coat with remaining sugar. Place, 2 inches apart, on baking sheets. Press your thumb into center of each ball; fill each indentation with about 1/4 tsp. jam.
  • Bake 8 to 10 min. or until lightly browned. Cool 1 min. on baking sheets; transfer to wire racks. Cool completely.

1/2 cup plus 1 tablespoon butter, softened, divided
1/4 cup packed brown sugar
1 egg yolk
1 teaspoon vanilla extract
1 cup all-purpose flour
1 egg white, lightly beaten
3/4 cup finely chopped pecans
3/4 cup semisweet chocolate chips

Steps:

  • In a small bowl, cream 1/2 cup butter and brown sugar until light and fluffy. Beat in egg yolk and vanilla. Gradually add flour; mix well. Cover and refrigerate for 2 hours or until easy to handle., Roll dough into 1-in. balls. Dip in egg white, then coat with pecans. Place 2 in. apart on greased baking sheets. Using the end of a wooden spoon handle, make a 1/2-in. indentation in the center of each ball. , Bake at 325° for 10 minutes. Press again into indentations with the spoon handle. Bake 10-15 minutes longer or until pecans are golden brown. Remove to wire racks to cool., In a microwave-safe bowl, heat the chocolate chips and remaining butter until melted; stir until blended and smooth. Spoon into cooled cookies.

I never cared for jam-filled thumbprints, so I decided to fill them with frosting instead. This makes them easy to ship, which you can't do with the sticky jam filling. 1 cup butter, softened
1/2 cup packed brown sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
Colored sprinkles or nonpareils
FILLING:
1 cup sugar
1/4 cup butter, cubed
1/4 cup 2% milk
8 ounces white candy coating
1 teaspoon vanilla extract
Red and green food coloring

Steps:

  • Preheat oven to 350°. Cream butter and brown sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Place sprinkles in a shallow bowl or bowls., Shape dough into 1-in. balls; dip tops in sprinkles. Place 2 in. apart on ungreased baking sheets. Press a deep indentation in center of each with your thumb. Bake until edges are light brown, 10-12 minutes. Using a wooden spoon handle, enlarge any indentations that may have narrowed or closed. Remove from pans to wire racks to cool., For filling, bring sugar, butter and milk to a boil in a small saucepan, stirring constantly. Cook and stir 1 minute. Remove from heat. Add candy coating and vanilla; stir until smooth. Divide filling between 2 bowls. Using food coloring, tint filling in one bowl red and in the other bowl green. Spoon fillings into indentations; let stand until set.,

1 pound butter, softened
1 ½ cups white sugar
1 teaspoon vanilla extract
4 cups all-purpose flour
2 teaspoons baking powder
1 cup chopped walnuts
1 (8 ounce) jar seedless raspberry jam
3 (1.55 ounce) bars white chocolate, chopped
1 tablespoon vegetable shortening

Steps:

  • Beat butter, sugar, and vanilla extract together in a bowl until creamy and smooth. Mix flour and baking powder together in a separate bowl; gradually beat flour mixture into creamed butter mixture until dough is smooth. Fold walnuts into the dough. Refrigerate dough for 1 hour.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Roll cookie dough into 6 dozen small balls and place them 2 inches apart on a baking sheet. Press the center of each ball using your thumb to form a small well. Fill the depressions with jam.
  • Bake in the preheated oven until cookies are light golden brown, about 18 minutes.
  • Melt white chocolate and shortening together in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Drizzle melted white chocolate mixture over cookies.
  • Cool cookies on the sheet for 5 minutes before removing to cool completely on a wire rack.
