HAM AND NOODLE CASSEROLE
Our creamy ham and noodle bake is a comforting casserole recipe that you can put together in a snap. This is a classic family casserole recipe that I make over and over throughout the year.

Steps:
- Preheat oven to 350 degrees. Lightly spray a 13x9-inch baking dish with non-stick cooking spray.
- In a large saucepan cook noodles according to package directions to al dente. Drain noodles and return to the pan. Stir in the ham, chicken soup, sour cream, milk, garlic powder, and the pepper; stir well.
- Transfer the mixture to the 13x9-inch baking dish. Sprinkle the 2 cups cheese over the top. Bake for 25 to 30 minutes or until heated through. Garnish with fresh parsley, optional.

HAM AND NOODLE CASSEROLE
This is one of my favorite ways to use leftover ham.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
- Bring water to a full rolling boil in a pot.. Cook the egg noodles in the boiling water, stirring occasionally, for 3 minutes; remove from heat, cover, and let stand until the noodles are tender, about 10 minutes. Drain.
- Stir the noodles, onion, sour cream, chicken soup, ham, and Swiss cheese together in a large bowl. Season with salt and pepper. Spoon into the prepared casserole. Sprinkle the top with bread crumbs.
- Bake in the preheated oven until the casserole is bubbling and the bread crumbs have browned, about 40 minutes.

MARIE METZEL'S HAM-NOODLE CASSEROLE
This recipe of my mother's was one of her go-to meals for a weeknight supper and is one of the first things I learned to cook. The recipe itself is of Austrian origin. When I was growing up we called it by its Bohemian name: Sunkou Flicky. This is pronounced, as near as I remember: shoon'kuh fleeech'key. This is a good way to use up bits and pieces of leftover ham; use a well-flavored ham for best results. When I was a child we had to contend with ham to which water had been added, making a very bland flavored casserole. For additional flavor I remember making up an envelope of cream of leek soup according to package directions. I would substitute one cup of the soup for the milk called for in the recipe. The rest of the soup may be eaten another day. The casserole may be topped with grated Cheddar cheese, if desired. It does need a topping of some type--if not cheese perhaps buttered cracker crumbs--to protect the noodles on top from drying and becoming hard to the bite.

- Cook the noodles according to package directions; drain. Preheat the oven to 350 degrees F. Butter a 2-quart round casserole dish.
- Grind up leftover ham using the medium or coarse blade of a hand grinder or your food processor.
- Blend together the milk, eggs, and salt. Be cautious with the salt as the ham is salty.
- Combine the cooked noodles, ham, and the egg-milk mixture. Place in prepared casserole. Bake in preheated oven for 30-40 minutes or until custard is set.

(Talk about easy to please!) Nothing gourmet here, just yummy and great with salad and crispy garlic bread. (Recipe via my sister, who says she got it from Southern Living way back when...)
