MARINATED PORK RIBS WITH VEGGIES AND MASHED POTATOES
Sometimes you just need some seriously epic food! Not a snack, nor a salad! Something that fills your plate and satisfies your hunger. For those times, choose these marinated pork ribs with veggies and mashed potatoes.

Steps:
- Add the pork ribs in a large bowl. Add the celery, carrots, leek slices, garlic, salt, thyme powder, pepper, red wine, and bay leaves.
- Combine all the ingredients with your hands and let them marinate for 6 hours.
- When the time's up, remove the pork ribs from the marinade and place them on some paper towels. Also, cover them with a paper towel and press with your hands, so the paper absorbs the excess liquid.
- Heat the vegetable oil in a skillet.
- Coat the pork ribs with flour, then place them in the skillet. Fry them on the first side until the ribs turn brown, then turn them over and fry again until brown. Remove them from the skillet and set them aside.
- Preheat the oven to 400 degrees F/200 degrees C.
- Add the marinated vegetables in the same skillet, and also add about a third of the liquid.
- Add the tomato sauce and the chicken stock and let it simmer for about 5-7 minutes.
- Transfer the pork ribs in a baking pot, then add the vegetables and wine sauce over them.
- Cover the baking pot and transfer to the oven for the next 30 minutes.
- Serve 1/2 cup (165 grams) of mashed potatoes, 2 pork ribs, and one third of the vegetables for one serving. Garnish with fresh parsley.

MOM'S STOVETOP PORK RIBS
This is how my Brazilian mom prepares pork ribs. Boiling the ribs with the seasonings ensures that the meat will remain moist and juicy, and that the flavors will fully penetrate the meat. I hope you like these as much as I always have! Serve with lime wedges, rice and a fresh green salad.

- Place the spareribs into a large pot, and fill with just enough water to cover. Add the soy sauce, garlic, rosemary, oregano, bay leaves, lime juice and 3/4 of the parsley. Bring to a boil, then simmer uncovered over medium heat until the water has completely evaporated, about 25 minutes.
- When all of the water is gone, remove the bay leaves, and allow meat to brown, turning occasionally. Use a spatula to scrape up browned bits and softened garlic from the bottom of the pot, and toss them with the pork. The garlic will dissolve onto the meat. Remove the meat, and drain on paper towels. Season with black pepper and garnish with lime wedges and remaining parsley.

- Cut ribs into serving-size pieces; place in a large resealable plastic bag. Combine remaining ingredients; pour half the marinade over the ribs. Seal bag and turn to coat; refrigerate for several hours or overnight, turning bag occasionally. Cover and refrigerate remaining marinade. , Drain and discard marinade from ribs. Place ribs on a rack in a greased shallow baking pan. Cover and bake at 350° for 1 hour. Drain. Pour reserved marinade over ribs. - Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, thoroughly blend soy sauce, vegetable oil, Worcestershire sauce, lemon juice, brown sugar, and ketchup.
- Place pork chops in a medium baking dish, and spread with 1/2 the sauce.

- Arrange pork in two oven-proof 9x13 dishes. Add red potatoes in between the ribs. Salt and pepper all to taste.
- Mix the rest of the ingredients and spoon over the meat/potatoes.
- Cover with foil or plastic wrap and marinate in the refrigerator for 2 hours. Flip meat, salt and pepper lightly, recover and marinate for 2 more hours.
- Preheat oven to 425 degrees. Remove cover from pans and cook for 40-45 minutes or until 165 degrees internal temperature is reached. Potatoes will be tender.
