MEDITERRANEAN CHICKPEA AND LENTIL SALAD



Mediterranean Chickpea and Lentil Salad image

Healthy, fresh and filling, this mediterranean chickpea and lentil salad is perfect for lunch or dinner! With roasted vegetables and a zippy lemon dressing, it's packed with flavor. Gluten free and vegetarian with dairy free and vegan options.

1 cup green lentils, picked through and rinsed
2 ½ cups water
1 medium red onion, chopped
1 medium zucchini, chopped
1 small eggplant, cut into ½ inch chunks
2 tablespoons olive oil
¼ teaspoon salt
1 (15 ounce) can chickpeas, drained and rinsed
1 (14.5 ounce) can fire-roasted diced tomatoes, drained well
1 tablespoon freshly squeezed lemon juice
1 tablespoon honey*
1 tablespoon red wine vinegar
¼ teaspoon salt
¼ teaspoon dried oregano
freshly ground pepper, to taste
¼ cup olive oil
½ cup crumbled feta**
1 tablespoon minced fresh parsley

Steps:

  • Preheat the oven to 375ºF.
  • Add the lentils and the water to a medium saucepan. Bring to a boil then reduce the heat, partially cover with a lid and let simmer gently for about 20 to 25 minutes, until tender but not mushy (if the water evaporates before they are done cooking, add a little more as needed). Drain off any excess water.
  • Meanwhile, add the red onion, zucchini and eggplant to a large rimmed baking sheet. Drizzle with the olive oil and then sprinkle with the salt. Toss to combine then spread in an even layer.
  • Bake for about 15 minutes, stirring once halfway through, until tender. Transfer to a large bowl.
  • Add the chickpeas and drained tomatoes to the bowl. When the lentils are done cooking, add them to the same bowl.
  • In a small bowl, whisk together the lemon juice, honey, vinegar, salt, oregano and pepper. Add in the olive oil and whisk vigorously until combined. Pour the dressing into the bowl with the lentils and toss to combine. Add in the feta and fresh parsley and toss again.
  • Serve warm or at room temperature.

This Marinated Lentil Chickpea Salad is bursting with garlicky lemon flavor, layered with texture and loaded in nutrition. Easy to make, vegan, and perfect to serve as a meal or side.

Juice of 1 large lemon (about 1/4 cup juice)
1 tbsp maple syrup
1 tsp Dijon mustard
2 cloves garlic, crushed (I like using a garlic press)
1/2 tsp coriander
1/2 tsp red pepper flakes
1, 15 oz can chickpeas, rinsed and drained
1 cup cooked small brown or green lentils
1 green scallion, sliced
1/2 large cucumber, de-seeded and cubed
1 cup cherry tomatoes
Kosher salt and pepper to taste
Extra virgin olive oil, to taste

Steps:

  • In a small bowl, add lemon juice, syrup, mustard, garlic, and spices and whisk together well.
  • In a medium sized mixing bowl, add your beans and lentils, diced vegetables and scallions then pour over your dressing.
  • Give everything in the bowl a quick toss to coat, then adjust salt to taste.
  • Place this salad in the fridge to chill for an hour before serving, and save remaining salad in the fridge to continue marinating overnight. When serving, you can drizzle your salad with some extra virgin olive oil.

TURMERIC ROASTED CHICKPEA AND LENTIL SALAD

One 15.5-ounce can chickpeas, rinsed and drained
1 teaspoon canola oil
1/2 teaspoon kosher salt
1/2 teaspoon turmeric
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground cumin
2 cups low-sodium chicken stock
1/2 pound dried brown lentils
1 small yellow onion, halved
1 clove garlic, smashed
1 small bay leaf
1 lemon, halved
1/4 cup chopped roasted red bell peppers
2 tablespoons chopped flat leaf parsley

Steps:

  • Preheat an oven to 375 degrees F.
  • Combine the chickpeas with the oil, salt, turmeric, pepper and cumin in a bowl and toss to coat well. Transfer to a cast-iron skillet and spread evenly across the pan. Bake the chickpeas until golden brown, about 45 minutes.
  • Meanwhile, bring the chicken stock to boil saucepan over high heat. Add the lentils, onion, garlic, bay leaf and half lemon. Cook until the lentils are tender, about 18 to 20 minutes; drain. Be sure to discard the lemon, onion, garlic and bay leaf.
  • Combine the chickpeas, lentils, roasted red bell pepper, and parsley in a medium bowl. Juice the remaining lemon half into the bowl and toss to combine.

These marinated chickpeas are great on their own, but even better for bulking up salads into a full meal. Because the chickpeas soak in vinaigrette, there's typically no need to add any extra dressing when you combine them with other vegetables; they come with enough seasoning to flavor everything. Combine a cup of the dressed chickpeas with a cup of cooked whole grains (such as farro, barley, wheat berries or quinoa), a half cup of shredded carrots, a handful of minced fresh parsley, a pinch of cumin, plus some cayenne or harissa for heat. You could also stir together equal parts marinated chickpeas and diced fresh cucumber with some slivered red onions and chopped fresh dill, or massage some chopped kale with olive oil and a pinch of salt, then toss in a big scoop of marinated chickpeas and some crumbled feta or Cotija.

Steps:

  • Place chickpeas in a bowl. Add olive oil, oregano, lemon juice, lemon zest, parsley, garlic, and sea salt and mix well. Marinate chickpeas in the refrigerator, 8 hours to overnight.
