MARS BAR STUFFED SKILLET CHOCOLATE CHIP COOKIE RECIPE
A giant skillet cookie stuffed with mini Mars bars.

Steps:
- Cream your butter and sugars together until they are light and fluffy.
- Add in the eggs, one at a time, beating in completely after each addition.
- Add the vanilla and mix in.
- Whisk together your dry ingredients and add to the butter/sugar mixture. Combine well then add the chocolate chips, mixing until they are spread through the dough evenly.
- Take half of the cookie dough and press into the bottom of a pre-seasoned cast iron skillet.
- Take the cut up Mars bars and place into the skillet, making sure they are distributed evenly across the surface of the cookie dough.
- Take the remaining cookie dough and cover the Mars bars, filling in the spaces all the way to the skillets edge, making a smooth top. If you are using a 10 inch skillet, using all the cookie dough will bring the cookie right up to the top of the skillet. If you are using a 12 inch, it will be just below the skillet's edge. Both are lovely, but choose your size depending on the look you wish to achieve.
- Bake in a 350 degree oven for 30-35 minutes, until the cookie is baked through.
- Serve warm, cutting into pie shaped wedges and top with vanilla ice cream if desired.

- Position the rack in the middle of the oven and preheat to 350 degrees F.
- Put the butter in a microwave-safe bowl, cover and microwave on medium power until melted. Alternatively melt the butter in a small saucepan. Brush some butter on the inside of a 9-by-13-inch pan and cool the remaining butter slightly. Whisk the remaining cooled butter, brown sugar, eggs and vanilla in a large bowl until smooth.
- Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a spoon or spatula, taking care not to over mix. The batter should be thick and all of the flour mixture should be fully incorporated. Fold in the chocolate chips.
- Spread the batter evenly in the prepared pan. Bake until the edges are browned and the center is completely set, about 30 minutes. Cool completely, at least one hour, cut into 24 pieces and serve.
CHOCOLATE CHIP MARSHMALLOW COOKIE BARS

- Preheat the oven to 375 degrees F. Lightly coat a 9-by-13-inch baking pan with butter.
- Whisk together the butter, brown sugar, granulated sugar, eggs and vanilla in a large bowl until smooth. Whisk together the flour, baking soda and salt in a medium bowl. Stir the flour mixture into the butter-sugar mixture. Stir in 2 cups of the chocolate chips.
- Spread the batter in the prepared pan. Bake until the edges are light brown and set, about 45 minutes. Cool slightly.
- Preheat the broiler. Cover the cookie bars with the marshmallows and remaining 1 cup chocolate chips. Broil at least 8 inches from the heat until the marshmallows turn golden brown, about 2 minutes. (Watch carefully to make sure the marshmallows toast but don?t burn.) Cool and then cut with a sharp knife.

- In a large bowl, beat together the butter, vanilla and sugar until light and fluffy. Sift together the salt and flour and mix into the butter mixture. Fold in the chocolate chips and nuts. Mix until well blended. Press batter into a 15x10 inch jelly roll pan.
- Bake 20 minutes or until golden brown. Cut into bars and let cool in pan on wire rack.

MARS BAR SURPRISE COOKIES
This is a recipe my aunt gave me a few years ago. She sold these at a bake sale and they were gone in a few minutes. I use lard in the recipe because it makes for a more moist cookie - you can use butter if you prefer but margarine doesn't work in this recipe at all.

- Preheat the oven to 350 degrees.
- In a large bowl beat the brown sugar and 3/4 cups of the white sugar with the lard (save the other 1/4 cup of white sugar). Add the eggs and vanilla. Add the cocoa powder and baking powder. Mix in the flour until you have formed the dough.
- Cut the mars bars into one inch cubes. Take a chunk of the dough and form it into a small cup shape in your hand. Put in a cube of the mars bar and roll the dough around it to form a ball. Roll the ball into the 1/4 cup of white sugar. Place on parchment paper on a baking sheet.
- Once you have all the cookies formed and on the baking sheet - bake for 12 minutes. Let them cool before you eat them as the melted caramel middle can burn!

MARS BAR MUFFINS
After making a million muffin recipes that were all rejected by my BF, I compiled this calorie riddled, chocolate loaded recipe especially for him. It's revoltingly unhealthy but really incredibly yummy! I'm afraid I only have the recipe in grams. I've put the approx. cup and ounce amounts in brackets at the end, but you'll need to bear with me on the translation as they've not been tried and tested.

- Cream the butter and sugar.
- Add the eggs one at a time, beating well.
- Add vanilla essence.
- Sift the flour, cocoa and baking powder and fold into the butter/sugar/egg mixture.
- Stir in the milk.
- Chop (quite finely) the Mars Bars and add to the mix.
- Grease/line a muffin tray and spread the batter evenly.
- Bake at Gas Mark 6/200C/400F for approximately 15 minutes.
- Eat!
- NB. The number of Mars Bars you use will affect the amount of muffins this mixture makes, so I've approximated the serving figures.
