CLASSIC MATZO BREI



Classic Matzo Brei image

In this matzo brei (rhymes with fry) recipe, the matzo sheets are browned in butter until crisp before being lightly scrambled with eggs. You make this either sweet or savory as you prefer. Add black pepper, plenty of salt and chives for a savory version, or Demerara sugar and maple syrup or honey if you would like something sweeter. It's a fine breakfast or brunch any time of the year, and especially during Passover.

Number Of Ingredients 8

2 sheets matzo
2 to 3 tablespoons unsalted butter
4 large eggs, beaten with 1 tablespoon water
Large pinch fine sea salt, more to taste
Large pinch black pepper
Chopped chives, for serving
1 tablespoon Demerara sugar, more to taste
Honey or maple syrup, for serving

Steps:

  • Under cool running water, rinse matzo sheets until they are quite wet. Set it aside and let sit to soften while you prepare the pan.
  • Place a large, preferably nonstick skillet over medium-high heat and add butter. Once it melts and the foam subsides, break matzo sheets into bite-size pieces and add to pan. Sauté matzo in butter until it browns all over, about 2 minutes.
  • Add eggs, salt and pepper (if you're making the dish savory) to pan and scramble the mixture until it is just set but still light and fluffy, about 1 minute. Sprinkle with sugar (if you're making it sweet) and toss well.
  • Serve matzo brei sprinkled with salt and topped with chives (savory), or with salt, additional sugar and maple syrup (sweet).

1 egg

1 teaspoon vegetable oil

Steps:

  • Take the matzo and break into small pieces into a bowl. Cover with hot water for a minute. Then squeeze out the water.
  • In a small bowl, beat one egg with salt and pepper to taste and add to matzo. Mix well.
  • Heat frying pan with a little oil. Pour mixture into the pan. Brown one side and turn over.

3 sheets matzos
3 eggs
salt and pepper
butter or margarine (for frying)
salt and pepper
boiling water
1 tablespoon sugar (optional)
1 tablespoon apple juice concentrate (optional)
jelly or sour cream

Steps:

  • Break matza into bite size pieces and place in large bowl.
  • If you like sweet matza brie as we do you can add the sugar and/or apple juice concentrate at his point.
  • Slowly pour boiling water over the matza until matza starts to get soggy, but not soaked.
  • About 1/2-1 cup of boiling water.
  • I usually pour half, stir and wait a minute to see if it needs more.
  • Beat eggs and add to matza mixture.
  • Season with salt and pepper.
  • Heat frying pan with oil/butter/margarine and place entire mixture inside.
  • You can cover and let it fry on a low heat and then try to flip whole or in sections when it has set.
  • My family likes that I fry it liked scrambled eggs and it is separate and clumpy.
  • Serve with sugar, jelly or sourcream.

  • In a mixing bowl, break the matzo into 1-inch pieces. Bring the water to a boil and pour over the matzos. Quickly toss the matzo, then drain off any excess. In a bowl, beat the eggs with a fork. Mix the eggs, salt and pepper into the matzo. Over high heat, heat the butter and oil in a large saute pan. Add the matzo and fry until crisp. 2 (6 inch) matzo sheets
2 large eggs
⅛ teaspoon kosher salt
1 tablespoon butter, divided
kosher salt to taste

Steps:

  • Heat vegetable oil in a non-stick frying pan over low heat.
  • Pour hot water into a bowl. Break matzoh sheets into small chunks and soak in hot water, about 2 minutes.
  • Whisk eggs and 1/8 teaspoon kosher salt in a separate bowl.
  • Strain matzoh and shake to remove excess water; stir matzoh into egg mixture.
  • Pour the heated oil out of non-stick frying pan; place 1/2 tablespoon butter in hot pan.
  • Pour matzoh and egg mixture into hot butter; cover and cook until a 'pancake' forms, about 10 minutes.
  • Slide matzoh 'pancake' onto a plate.
  • Place remaining 1/2 tablespoon butter in hot pan.
  • Place a second plate over matzoh 'pancake' and flip plates over so the uncooked side is on the bottom.
  • Lie matzoh 'pancake' in melted butter; cover pan and cook until bottom of pancake is browned, about 8 minutes. Remove from heat and season with kosher salt.

  • Crumble matzos into a large sieve placed over a bowl to catch crumbs, then hold sieve under running cold water until matzos are moist and softened but not completely disintegrated, about 15 seconds. Transfer to bowl with crumbs, then add eggs and salt and mix gently with a fork.

8 large eggs, beaten
1/2 cup whole milk or half-and-half

  • Coarsely crumble matzo crackers into a fine mesh sieve set over a large bowl; reserve crumbs in bowl. Place sieve under cold running water until matzo is softened, about 15 seconds; drain. Matzo brei is one of my all-time favorite foods! It is typically eaten on Passover since it is customary to avoid leavened bread. Matzo, a cracker-like unleavened bread, gets soft and chewy when it's soaked and scrambled with eggs in this traditional dish. Some people like sweet matzo brei sprinkled with cinnamon sugar, but I am on Team Savory Brei 4ever!

2 tablespoons olive oil or unsalted butter
1 large shallot, finely chopped
Kosher salt and freshly ground black pepper
4 sheets matzo, broken into approximately 1-inch pieces
4 large eggs
Splash heavy cream
3 ounces fresh spinach, chopped
1/2 cup shredded mozzarella
Hot sauce and ketchup, for serving

Steps:

  • Heat the oil or butter in a large skillet over medium heat. Add the shallot and a pinch of salt and pepper. Cook, stirring occasionally, until soft and translucent, about 5 minutes.
  • Meanwhile, fill a medium bowl with cold water and submerge the matzo. Soak for 1 minute, then drain and set aside. In a separate medium bowl, whisk together the eggs and heavy cream until homogenous. Stir in the matzo and set aside.
  • Add the spinach to the shallots, one handful at a time, stirring until wilted. Add another pinch of salt. Pour in the egg mixture and cook until the bottom is set. Use a spatula to gently pull the bottom cooked parts to the sides of the skillet to make space for more of the mixture to cook. Add the cheese. Repeat this gentle pulling process until a majority of the mixture is set, 1 to 2 more times, then turn off the heat. The eggs should still be quite wet, but they'll continue to cook a bit in the skillet. Continue folding them gently, and once they've reached your desired firmness, remove them from the skillet and serve them immediately. Top with the hot sauce and ketchup.

To all my friends who may not be familiar with Old Testament cuisine, matzoh is the unleavened bread that the Jews were in the midst of making when they had to quickly leave Egypt and didn't have time to wait for the yeast to work. If you go into most any New York City delicatessen and ask the waiter what matzoh brie is, he'll probably say "scrambled eggs and matzoh!" Period!! I would prefer to think of matzoh brie as the Jewish answer to French toast. So, please, don't wait for Passover to enjoy this wonderful treat. You can have it for breakfast, brunch, or even a midnight snack...anytime of the year. Many people, including me, enjoy a savory version (and at the end of the recipe instructions, I have that version), but, I'm usually in the mood for sweet, so, I like my matzoh brie sprinkled with cinnamon-sugar and accompanied with orange marmalade.

8 plain matzoh boards
5 large eggs
1/2 cup sour cream
1 pinch salt (to taste)
4 tablespoons butter (or 3 tablespoons of butter and 1 tablespoon of corn oil)

Steps:

  • In a large bowl, break the matzoh boards into large pieces. Fill the bowl with very warm water and immediately drain all the water out. The matzoh should be barely dampened.
  • In another bowl, beat the eggs, the sour cream, and a little salt together. Stir this mixture gently into the matzohs, coating all the broken crackers completely without breaking them into lots of tiny pieces.
  • In a large skillet, melt the butter (or butter and corn oil) over medium heat. Pour the matzoh/egg mixture into the pan, spreading it out evenly. When the bottom begins to brown, in about 5 minutes, begin flipping it over, It will break into pieces as you flip the matzoh. (You can try to turn it pancake-style, but I prefer to break up the mixture, so that there are more browned, crunchy edges -- I love those!). Continue cooking, stirring, and flipping until all the pieces of matzoh are cooked through.
  • Remove from heat and serve immediately with some more sour cream and applesauce on the side, if desired. (Some people even like maple syrup on the fried matzoh -- not me, but whatever you like!).
  • FOR A MORE SAVORY VERSION: Chop up a small onion and cook until softened in the butter before adding the matzoh/egg mixture, to which you can add a little ground black pepper.

4 sheets plain matzoh, broken into quarters
3 tablespoons butter

Steps:

  • In a mixing bowl, beat the eggs and add a dash of salt and pepper. In another bowl, soak the matzoh in warm water for about 30 seconds. Remove and set aside. In a large skillet over medium heat, melt the butter. Add the matzoh to the egg mixture, tossing gently to coat (making sure not to break up the matzoh too much), and add this to the hot skillet. Allow the matzoh to cook undisturbed for 2 to 3 minutes, or until the bottom begins to brown. Turn it over, stirring gently to cook through and allow the other side to brown (the matzoh will begin to break up at this point, which is fine). Add salt and pepper to taste. Serve immediately.
