DEEP SOUTH OLD FASHIONED TEA CAKES



Deep South Old Fashioned Tea Cakes image

Southern tea cakes made the old-fashioned way. Simple ingredients just the way Granny made them.

Number Of Ingredients 11

1/4 cup unsalted butter (room temperature)
1/4 cup butter-flavored shortening
1 cup granulated sugar
1 egg (room temperature)
lemon zest (1 small lemon)
1/2 vanilla bean (scraped)
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 cup buttermilk

Steps:

  • In a large bowl cream together butter and shortening until creamy.
  • Mix in sugar until well combined.
  • Mix in egg.
  • Mix in lemon zest and vanilla bean paste. Set aside.
  • In a medium bowl, sift together flour, baking powder, salt, and nutmeg.
  • Mix the dry ingredients into the wet ingredients, alternating with the buttermilk.
  • Turn dough onto a smooth surface and knead until dough is soft.
  • Shape into a disk and cover with plastic wrap.
  • Refrigerate for 1 hour (or freeze for 30 minutes)
  • Preheat oven to 350 F.
  • Line a large baking sheet with parchment paper. Set aside.
  • Remove dough from fridge and plastic wrap.
  • Knead dough to soften it.
  • Roll dough to 1/4-inch thick.( I rolled the dough on parchment to prevent sticking)
  • Use a round cookie cutter to cut out circle shapes.
  • Place cookies on prepared pan about 2 inches apart. (see note)
  • Bake for 8-10 minutes until bottoms are lightly golden. (see note)
  • Remove from pan and place on cooling rack to finish cooling.
  • Once cooled store in airtight container.

These Old Fashioned Tea Cakes are simply irresistible.

4-5 cups self-rising flour
2 cups granulated sugar
¼ tsp salt
2 eggs
½ cup oil
½ cup milk
1 tsp vanilla flavoring
1 tsp lemon flavoring

Steps:

  • Preheat oven to 450° Fahrenheit.
  • Place flour, sugar and salt in a large mixing bowl.
  • Make a well in the center and add remaining ingredients. Mix until all ingredients are thoroughly combined. The dough will be stiff.
  • Place on lightly floured surface and knead. Roll out and cut using a cup.
  • Place on baking stone and bake for 7-9 minutes or until lightly browned.
  • Cool and enjoy.

1 ½ cups white sugar
3 cups all-purpose flour
1 teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Beat butter and sugar in a bowl until creamy. Stir in flour, vanilla extract, baking powder, and baking soda until dough is well mixed. Drop spoonfuls of dough 2 inches apart onto prepared baking sheet.
  • Bake in preheated oven until lightly browned, 5 to 10 minutes.

When I was a child, these golden cookies were a special treat from my grandmother, who often invited me to tea parties at her house. Now when I make these cookies. I remember those warm special times.

1 cup shortening
2 cups sugar
3 eggs
1/2 teaspoon lemon extract
3 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
6 tablespoons milk

Steps:

  • In a bowl, cream shortening and sugar. Add eggs and extract; beat well. Add remaining ingredients; mix well. Chill for 1-2 hours. Shape into 1-1/4-in. balls. Place 2-1/2 in. apart on lightly greased baking sheets. Bake at 375° for 11-13 minutes or until lightly browned (do not overbake). Cool 1 minute on pan before removing to a wire rack.

1 cup butter
1 ¾ cups white sugar
2 eggs
3 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract

Steps:

  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt and nutmeg; stir into the creamed mixture. Knead dough for a few turnns on a floured board until smooth. Cover and refrigerate until firm.
  • Preheat the oven to 325 degrees F (165 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

2 1/2 cups self-rising White Lily or cake flour
2 sticks (1 cup) unsalted butter, softened
1 1/2 cups sugar
1 large egg, lightly beaten
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • Put flour in a bowl and make a well in center. Beat together butter and sugar in another bowl with an electric mixer until light and fluffy, then beat in egg and vanilla until blended.
  • Add butter mixture to flour and rub it into flour with your fingertips just until dough comes together in a ball (do not overwork dough, or it will be tough). 3Halve dough and work with 1 half at a time. Roll out dough 1/4 inch thick on a floured surface with a lightly floured rolling pin. Cut out cookies with a floured cutter (we used a 2 1/2-inch fluted round cutter), arranging cookies, as cut, 1 inch apart on ungreased baking sheets. Reroll scraps once, using as little flour as possible, and cut out more cookies.
  • Bake cookies, 1 sheet at a time, in middle of oven until very pale golden, 12 to 15 minutes. Cool on baking sheet 1 minute, then transfer to a rack to cool 5 minutes if serving warm, or to cool completely.

3 cups all-purpose flour

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to the creamed mixture (the dough will be soft). , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 7-8 minutes or until the edges are golden brown. Remove to wire racks to cool.

This recipe is posted in honor of my Grandmother. When I was a little girl, I stayed with her during the day while my Mom worked. We made these Tea Cakes at least once a week. She was the most wonderful cook I've ever known. I hope someday to be as good as she was. (On the servings, I'm only guessing! Prep time includes chilling the dough.)

1 1/2 cups powdered sugar
1 1/2 granulated sugar
1 cup margarine
1 cup vegetable oil
2 eggs
2 teaspoons vanilla
4 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cream of tartar

Steps:

  • Combine the powdered sugar, granulated sugar, margarine, oil, eggs and vanilla.
  • Cream well.
  • Add in the flour, baking soda, baking powder, and cream of tartar.
  • Mix well.
  • Chill the dough in the refrigerator for 1 hour.
  • Pinch off pieces of the dough and roll in small walnut-sized balls.
  • Place on a cookie sheet.
  • Bake at 300-325 degrees for 10-15 minutes, depending on your oven and how crisp you like them.
  • Baking for approx.
  • 10 minutes will yield a softer cookie, as they get crisper the longer they bake.
