MEAN GREEN JUICE (FOR JUICER)



Mean Green Juice (For Juicer) image

This is the recipe for "Mean Green" juice used in the documentary "Fat, Sick, and Nearly Dead." I was a little nervous about trying it -- I couldn't imagine that a juice with kale in it would be palatable -- but it turned out to be delicious! That film has really gotten us into juicing.

1 cucumber (I peeled it)
4 celery ribs
2 apples, cored
6 -8 kale leaves
1/2 lemon (rind removed)
1 tablespoon fresh ginger (I used about 1-inch of the root)

Steps:

  • Wash all ingredients thoroughly.
  • Run through juicer and enjoy! Great over ice.

Here's what you need: medium cucumber, green apple, celeries, lemon, ginger, kale

Number Of Ingredients 6

½ medium cucumber, diced
1 green apple, cored and diced
2 celeries, diced
½ lemon, juiced
1 teaspoon ginger, minced
3 cups kale, chopped

Steps:

  • Add the cucumber, apple, celery, lemon juice, ginger, and kale to a blender, and blend until smooth.
  • Using a mesh strainer, strain the juice over a large liquid measuring cup to remove the pulp. Use a spoon to help stir the pulp and press out the liquid. Reserve the pulp to make pulp muffins.
  • Chill the juice for at least 30 minutes (and keep up to 3 days).
  • Enjoy!
