SAUSAGE AND POTATO BAKE
This is an easy and delicious breakfast casserole that our whole family loves. I usually lighten it up by using lower-fat sausage and cheese.

Steps:
- Heat oven to 350. Grease 11x7x2 inch baking dish.
- Cut sausage links into slices.
- Stir together all ingredients in large bowl. Pour mixture into baking dish.
- Bake 50 minutes or until knife inserted in center comes out clean.
- Let stand 10 minutes.

BEEF, POTATO & EGG BAKE
Steps:
- Preheat oven to 350°. In a large skillet, cook beef with onion powder, 1/2 teaspoon salt, garlic powder, sage and pepper flakes over medium heat 6-8 minutes or until no longer pink, breaking up beef into crumbles; drain. Stir in spinach. Remove from heat., Spread potatoes in a greased 13x9-in. baking dish; top with beef mixture. In a large bowl, whisk eggs, ricotta cheese, milk, pepper and remaining salt; pour over top. Sprinkle with cheese. Top with tomatoes., Bake, uncovered, 45-50 minutes or until a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.

This casserole layers thinly sliced potatoes, seasoned ground beef and cheese for a hearty, home-style main dish the whole family will enjoy.

Steps:
- Preheat oven to 350°F. Spread potatoes evenly onto bottom of lightly greased 9-inch square baking pan; set aside.
- Reserve 1/4 cup of the steak sauce. Mix remaining 1/4 cup steak sauce with the meat, bread crumbs and onion. Place evenly over potatoes, pressing firmly to form solid layer. Brush with reserved steak sauce.
- Bake 1 hour 10 min. or until meat mixture is cooked through. Sprinkle with cheese; continue baking 5 min. or until cheese is melted. Let stand 10 min. before serving.

Steps:
- Preheat the oven to 350°F (180°C).
- Carefully pierce potatoes with a fork. On a baking sheet, oil the potatoes well and sprinkle with salt.
- Bake for about one hour. If making more potatoes, an additional 15 minutes per potato is needed.
- Once cooled, cut the potatoes vertically, scoop out the inside, and save the scooped out insides (for mashed potatoes, etc.).
- Spread butter on the inside of each scooped out potato.
- Add cheese, bacon, one egg per potato, salt, and pepper. Top with chives.
- Bake 25 minutes, until the egg white has cooked through.
- Serve warm with chives.

- In a large skillet, cook the sausage and bacon over med heat until the bacon is crisp and the sausage is brown; drain.
- Layer frozen potatoes and sausage/bacon mixture in a lightly greased 2 quart casserole dish; set aside.
- In a mixing bowl, whisk the eggs, milk, mustard, and pepper together.
- Pour egg mixture over contents in casserole dish.
- Bake, uncovered, at 350° for about 45 minutes or until a knife comes out clean.
- Sprinkle with cheese.
- Let stand 10 minutes before serving.

- Clean the potatoes and cut into fourths or sixths, depending on their size. You want them slightly smaller than bite-sized.
- Place the potatoes in a large pot and fill with enough water to cover them. Place over high heat and bring the water to a boil. Once it is boiling, set a timer for 5 minutes. When the time is up, drain the potatoes and return them to the pot to dry out slightly.
