PEPPERONI MEATZA
For people that are gluten-intolerant, low-carb, paleo, or whatever, it can be hard to go without pizza. This dish makes it a lot easier. It is made pretty much exactly the same as pizza, but with ground beef as the crust. Sounds weird at first, but it is absolutely delicious and very filling. This is something great to make ahead of time and then eat as leftovers later on. It's great hot or cold, just like pizza! I find that if you make 6 square slices, each slice is usually more than enough to fill you up. Feel free to add whatever toppings you normally eat on pizza. It will taste just as good!

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Mix together salt, caraway seeds, oregano, garlic salt, ground black pepper, and crushed red pepper flakes in a small bowl.
- Mix ground beef and eggs in a mixing bowl until thoroughly incorporated. Add Parmesan cheese and seasoning mixture to beef; combine. Press ground beef mixture into a 12x17-inch pan, spread out evenly.
- Bake in the preheated oven until meat is no longer pink, about 10 minutes. Drain grease.
- Set oven rack about 6 inches from the heat source and turn on the oven's broiler.
- Sprinkle 1/3 of the mozzarella cheese over baked meat, followed by tomato sauce in an even layer. Sprinkle another 1/3 of the mozzarella cheese over the sauce and top with slices of pepperoni. Sprinkle remaining mozzarella cheese over pizza.
- Broil until cheese is melted, bubbling, and lightly browned, 3 to 5 minutes.

MEATZZA RECIPE (MEAT-CRUST PIZZA)

- Preheat your oven to 400 degrees F. Line a 14-inch rimmed, non-perforated pizza pan with a circle of high-heat-resistant parchment paper. You can also use a rimmed baking sheet lined with parchment and make the pizza a bit smaller in diameter.
- On the prepared baking sheet, flatten the ground beef into a very thin, large circle - make it as thin as you can (1/8-inch thick is good). I use a rolling pin to roll it as thin as I can, then use my fingers to spread it evenly so that it covers the entire pan.
- Sprinkle the ground beef with kosher salt, black pepper, garlic powder, oregano, and red pepper flakes.
- Bake the meat crust in the preheated oven until fully cooked. If rolled thin, this should take about 10 minutes.
- Remove the pan from the oven and switch the oven to broil. By now, the meat crust has shrunk and is sitting in a pool of cooking liquids. Carefully transfer it, using two wide spatulas, to a foil-lined rimmed baking sheet.
- Spread the meat base with pizza sauce, then sprinkle the cheese evenly on top. Add your toppings. Return to the oven and broil just until the cheese is melted, 1-2 minutes. You can also bake in the 400F oven for 5 more minutes instead of broiling, but I do like the way broiling crisps up the meaty edges.
- Allow the meatzza to rest for 5 minutes before cutting it into 8 triangles and serving.

- Pour olive oil in a skillet on medium-high heat. Dice the onion and saute until softened. Add the garlic and saute about 2 minutes. Add both cans of tomatoes and simmer for about 5 to 7 minutes. Stir in oregano, thyme, red pepper, salt and pepper to taste. After heated through, reduce heat, and stir in fresh basil. Reserve sauce.
- In a large skillet brown Italian sausage. Drain and set aside. Cut the andouille sausage into bite size pieces and heat through and brown in the same skillet. Remove from the pan and mix with the Italian sausage.
- Preheat the oven to 350 degrees F.
- Take about 1 cup of the marinara sauce and cover the bottom of a 9- by 13-inch lasagna pan.
- Arrange uncooked lasagna noodles to cover the bottom of the pan. On top of the noodles place about 8 slices of the provolone cheese in 1 layer. Spread 1/2 of the ricotta cheese on top of the provolone. Spread 1/2 of the sausage mixture on top of the cheese. Spread out 1/2 of the slices of pepperoni on top of the sausage. Then spread 1/2 of the sauce on top. Repeat layers: noodles, provolone, ricotta, sausage, pepperoni, sauce.
- Then finish off the top with the shredded mozzarella cheese. Cover pan with foil and bake about 45 minutes. Remove foil and bake for another 15 minutes until golden brown and bubbly. Let stand for 15 minutes then serve.
STEAK SALAD WITH ZA'ATAR CHIMICHURRI
I absolutely adore the combination of za'atar with steak. Plus, serving this [for Mother's Day] is a deliciously subtle way of smashing the patriarchy - and I'm totally on board.

- Make the chimichurri: Combine the cilantro, mint, parsley, olive oil, vinegar, za'atar, jalapeño, lime juice, shallot and a pinch of salt in a blender. Puree, scraping down the sides as needed, until smooth with just a few small chunks remaining. Set aside or refrigerate for up to 3 days in advance.
- Prepare the steaks: Sprinkle the steaks all over with 1 teaspoon salt and a generous amount of pepper. Melt the butter in a large skillet over medium-high heat. Add the steaks and cook, flipping halfway through, until a nice golden crust has formed on both sides and the temperature registers 125˚ F (for medium rare) on an instant-read thermometer, 7 to 8 minutes total. Transfer to a cutting board and let rest for 3 to 4 minutes.
- Return the skillet to the heat and turn to medium. Add more butter to the skillet if it is dry and add the za'atar. Toast until fragrant, about 1 minute. Stir in the shallot and cook, stirring occasionally, until softened, 5 to 6 minutes. Add the peas and sauté until tender but still crisp, 1 to 2 minutes. Transfer to a plate, leaving any remaining butter in the skillet.
- Mix the arugula and spinach together and place on a platter. Sprinkle with the avocado, radishes, peas and shallots. Slice each steak into thick pieces and place atop the salad. Drizzle with some of the chimichurri and serve immediately with the remaining chimichurri on the side.
ZA'TAR RUB/MARINADE FOR CHICKEN, MEAT OR FISH
The eastern Mediterranean za'tar is a combination of olive oil, lemon juice, sesame, garlic, dried mint and oregano. It is particularly good on chicken, especially if slipped under the skin as well as over it, and is delicious on lamb and more strongly flavoured fish such as salmon, trout or mackerel. Can be used to prepare- 4 Chicken legs, or 8 Lamb cutlets or 6 Lamb chops or 2 Pork tenderloins or 1 Whole chicken or 2lbs Chicken wings, thighs or drumsticks or 8 Fish fillets or steaks

- Place the sesame seeds and spices in a pestle and mortar or spice grinder and lightly crush. Mix with the oil, lemon zest and juice and season to taste.
- Rub the mixture all over the food, cover and marinate for 4 hours or overnight in the fridge for meats and poultry. Fish needs only 30 minutes. Allow the food to return to room temperature for 20 minutes before cooking.
- To cook- If barbecuing, turn frequently and baste with any excess marinade.
- To roast a whole chicken, rub all over and roast at 400F for 1-1½ hours.
GYOZA
I learned this recipe for pot stickers while living in Japan. They're great hot or cold, and may be eaten plain or with the dipping sauce. Any ground meat can be substituted for pork.

- Heat sesame oil in a large skillet over medium high heat. Mix in cabbage, onion, garlic and carrot. Cook and stir until cabbage is limp. Mix in ground pork and egg. Cook until pork is evenly brown and egg is no longer runny.
- Preheat vegetable oil in a large skillet over medium high heat.
- Place approximately 1 tablespoon of the cabbage and pork mixture in the center of each wrapper. Fold wrappers in half over filling, and seal edges with moistened fingers.
- In the preheated vegetable oil, cook gyoza approximately 1 minute per side, until lightly browned. Place water into skillet and reduce heat. Cover and allow gyoza to steam until the water is gone.
- In a small bowl, mix soy sauce and rice vinegar. Use the mixture as a dipping sauce for the finished wrappers.

This is my SIL's recipe and was a great favorite of her two children. As little tots my niece and nephew came out here to Arizona to visit and brought this recipe with them "so they wouldn't feel so homesick!"

- Preheat oven to 375 degrees.
- Place meat, milk, crumbs, and garlic salt in a 9-inch pie plate; mix thoroughly with a fork. Pat evenly onto bottom and up sides of pie plate; rim with fingers, pressing firmly into place.
- Spread tomato paste over meat mixture. Arrange drained mushrooms over top of tomato paste. Add Cheddar cheese, oregano, Parmesan cheese, and onion in layers. Top with sliced olives, if used.
- Bake in preheated oven for 25 minutes or until meat is done and cheese is lightly browned.

- Preheat oven to 400°F. Sit a wire rack on a rimmed baking sheet. Place 10 bacon slices side by side on wire rack. Use remaining 7 bacon slices to weave into a lattice pattern. Use kitchen shears to trim edges of lattice pattern around rim of bowl to form a circle lattice bacon crust; reserve bacon trimmings. Bake at 400°F until cheese is melted, 8 to 10 minutes. Remove from oven, and garnish with crushed red pepper. Cut into 8 slices.
