Pork meatballs cooked in the oven with potatoes and veg - healthy, tasty and thrifty

Steps:

  • Preheat oven to 200 or fan 180. Cut potatoes into thirds or quarters depending on size. Put oil into oven tray, add potatoes and half the garlic, toss to coat. Cook in oven for 15 mins.
  • Meanwhile make the meatballs - put pork mince, breadcrumbs, remaining garlic and half of the herbs into a bowl. Mix well and shape into about 16-20 balls.
  • Add the vegetables and the meatballs to the potatoes in the tray. Add the remaining herbs and season. Mix well to get everything coated.
  • Place in oven and cook for 35-40 minutes until meatballs are cooked through. If the meatballs are browning too quickly you can turn the oven temperature down a little.
  • Optional - if you prefer a bit of spice you can add chilli powder to the meatballs and chilli and / or paprika to the tray when adding the vegetables.

350g turkey thigh mince
1 tsp dried oregano
1 tsp fennel seeds
1½ tbsp olive oil
1 large onion, chopped
3 garlic cloves, crushed
1 tbsp tomato purée
2 x 400g cans chopped tomatoes
2 tsp sugar
150g ball mozzarella, torn into pieces
4 garlic breadsticks or garlic bread slices, torn or chopped into chunks
25g cheddar, grated
green salad or spaghetti, to serve

Steps:

  • Combine the mince, oregano, fennel seeds and some seasoning in a bowl. Take walnut-sized pieces of the mixture and roll into balls. Heat half the oil in a large, shallow ovenproof pan and cook the meatballs until browned all over - don't worry if they're not cooked through. Transfer to a plate. Heat the oven to 200C/180C fan/gas 6.
  • Heat the remaining oil in the pan and add the onion. Cook until softened, about 10-12 mins, stirring regularly. Stir in the garlic for another minute, then the tomato purée, chopped tomatoes and sugar.
  • Simmer for 10-15 mins, then season to taste. Place the meatballs on top of the sauce, then add the mozzarella, garlic bread and the cheddar on top. Bake for 15-20 mins until golden and crisp.

  • Preheat the oven to 200°C, fan 180°C, gas 6. Add the potato wedges to a large roasting tin, drizzle with half the olive oil, season and toss well to mix. Combine the passata and stock, then pour over the potatoes. Bake in the oven for 40 minutes, turning over with a large metal spoon halfway through.
  • Meanwhile, make the meatballs. Tear up the bread (leave the crusts on) and whiz to breadcrumbs in a food processor. Tip into a mixing bowl and stir in the milk. Leave to soak for 5 minutes; add the minced beef, egg, onion, garlic and paprika. Finely grate the zest from the lemon into the mixture then cut the lemon into quarters and set aside. Pick the leaves from the coriander, chop roughly and set aside. Finely chop the stalks and add to the meatball mix. Season and mix well with clean hands. Roll into about 28 walnut-sized balls; pop on a plate.
  • Once the potatoes have had their initial cooking time, give them a stir and add the meatballs. Cook for 20 minutes.
  • Meanwhile blanch the green beans in boiling water for 2-3 minutes until just tender; drain well. When the meatballs have had their 20 minutes, remove the tin from the oven and tuck the beans around them. Slide back into the oven for a final 10 minutes, by which time the potatoes should be tender and the meatballs golden and cooked through.
