1 (12 ounce) package jumbo pasta shells
1 (26 ounce) jar spaghetti sauce
36 frozen italian meatballs, thawed (1/2 oz. each)
2 cups shredded mozzarella cheese

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place 1/2 cup sauce in a greased 13 x 9 inch baking dish.
  • Place a meatball in each shell; transfer to baking dish. Top with remaining sauce and sprinkle with cheese.
  • Cover and bake at 350 degrees for 35 minutes. Uncover; and bake 5-10 more minutes or until bubbly and cheese is melted.

5 large eggs
2 cups seasoned breadcrumbs
1 cup grated Parmesan
2 tablespoons dried parsley
2 teaspoons garlic powder
1 teaspoon salt
1 teaspoon black pepper
1 cup shredded mozzarella
5 slices spicy capicola, diced
5 slices sharp provolone, diced
5 slices Black Forest ham, diced
5 slices Genoa salami, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the ground meat with the eggs and mix well. Add the meat mixture and breadcrumbs to the bowl of a small stand mixer fitted with a paddle attachment and mix until well combined. Add the Parmesan, parsley, garlic powder, salt and pepper and mix on medium speed for 3 minutes (do not over mix). Scoop out 18 meatballs using an ice-cream scoop (or form the meatballs to ice-cream-scoop size). Mix the mozzarella, capicola, provolone, ham and salami in a mixing bowl. Stuff each meatball by making a hole in the middle and placing 1 tablespoon of the meat-and-cheese mixture in the center. Seal the meatballs well by pinching them back together. Bake, covered with foil, 45 minutes.

1 (15 ounce) can fire-roasted diced tomatoes
½ medium onion, diced
2 teaspoons minced garlic
1 tablespoon Italian seasoning
salt and ground black pepper to taste
3 cups loosely packed fresh spinach
1 (15 ounce) container ricotta cheese
1 large egg, beaten
1 (24 ounce) jar marinara sauce
1 cup shredded Parmesan cheese
1 cup shredded mozzarella cheese
¼ teaspoon Italian seasoning, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes.
  • While the shells are cooking, heat olive oil in a large pan or skillet over medium-high heat. Add meatless ground beef and cook and stir until brown, 2 to 3 minutes. Add tomatoes, onion, garlic, 1 tablespoon Italian seasoning, salt, and pepper. Simmer for 2 minutes; add spinach and simmer until spinach is wilted, about 2 minutes more. Taste and adjust salt and pepper if needed. Remove from heat and mix in ricotta cheese and egg until fully incorporated.

  • Bake in the preheated oven until cheese is golden and bubbly, 35 to 45 minutes.

Steps:

  • In a medium bowl, mix together the beef, pork, bread crumbs, onion, Parmesan cheese, garlic, parsley, eggs, salt, and pepper until just combined.
  • Preheat the oven to 425°F (220°C).
  • Take a walnut-sized portion of the meat mixture and roll into a ball. Repeat with remaining meat and transfer to an oiled wire rack set over a baking sheet.
  • Bake the meatballs for 10 minutes, until golden brown.

12 jumbo pasta shells
1 1/2 cups ricotta cheese

  • Preheat oven to 350.
  • Spray a 9x13 baking pan with nonstick cooking spray.
  • Boil the jumbo pasta shells according to the package directions.
  • Drain and rinse shells with cool water.

1 (28 ounce) jar pasta sauce
8 ounces sliced fresh mushrooms

Steps:
