This chili is so easy to make and is so good! Trust me. To make a double batch, double everything except the meat and onion. Use 1 can each of pinto and kidney beans, that is how I normally make it.

1 pound ground beef
1 onion, chopped
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (16 ounce) can pinto beans
1 teaspoon chili powder
1 teaspoon ground cumin
½ teaspoon ground cayenne pepper
1 teaspoon minced garlic

Steps:

  • In a large saucepan over medium-high heat, cook beef and onion until meat is no longer pink. Stir in tomatoes, tomato sauce, beans, chili powder, cumin, cayenne and garlic. Cover, reduce heat and simmer 20 minutes.

1 tablespoon olive oil
1 small onion, diced
2 garlic cloves, minced
Coarse salt and ground pepper
2 zucchini (about 1 pound total), halved lengthwise and thinly sliced crosswise
2 carrots, thinly sliced
1 tablespoon chili powder
1 teaspoon ground cumin
2 cans (19 ounces each) black beans, rinsed and drained
1 can (28 ounces) crushed tomatoes
1 package (10 ounces) frozen corn kernels, thawed

Steps:

  • In a 5-quart Dutch oven or heavy pot, heat oil over medium-high. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until beginning to soften, about 4 minutes.
  • Add zucchini, carrots, chili powder, and cumin. Cook, stirring occasionally, until carrots are crisp-tender, 6 to 8 minutes. Add beans, tomatoes, corn, and 1 cup water. Simmer until slightly thickened and carrots are soft, 8 to 10 minutes more.

3 tablespoons olive oil
1/2 lb ground turkey or 1/2 lb ground chicken
1/4 teaspoon salt (to taste)
1/4 teaspoon fresh ground black pepper (to taste)
1 onion, chopped
1 tablespoon garlic, minced
2 small eggplants, cubed
1 medium zucchini, chopped
2 carrots, chopped
1 cup mushroom, quartered
1 chile, seeded and minced (fresh or dried)
1 teaspoon ground cumin
1/2 teaspoon dried oregano leaves
1 cup canned tomato, seeded and chopped
4 cups canned kidney beans, liquid reserved
2 cups vegetable stock (adjust as needed)
2 tablespoons fresh cilantro, for garnish

Steps:

  • Heat the oil in a large pot over medium; add the meat, season with salt and pepper, and cook until browned. Remove meat from pan and drain off all but three tablespoons of fat.
  • Heat the pan over medium-high. Add the onion and garlic; cook for about a minute. Add the vegetables; cook for 10 minutes or until they start to caramelize and dry out.
  • Add the seasonings and stir, then add the tomatoes and beans with enough of their liquid to submerge everything (use the stock if there isn't enough). Bring the mixture to a boil and cook about 15 minutes. Garnish with cilantro. Serves six.

1½ tbsp rapeseed oil
1 onion , sliced
2 peppers , sliced
2 garlic cloves , crushed
1 tbsp ground cumin
1 tbsp ground coriander
2 tsp hot smoked paprika
400g can chopped tomatoes
400g can mixed beans , drained
400g can black beans , drained
pinch of sugar
250g brown rice
½ small bunch coriander , chopped
soured cream or guacamole, to serve (optional)

Steps:

  • Heat the oil in a casserole dish and fry the onion and peppers for 10 mins over a medium heat until the onion is golden brown. Add the garlic and spices, and fry for 1 min. Pour in the tomatoes, both cans of beans, 50ml water, then add the sugar and season. Simmer, stirring regularly, for 15-20 mins until thickened.
  • Meanwhile, cook the rice following pack instructions. Serve the chilli on the rice and scatter over the coriander. Top with a spoonful of soured cream, or guacamole, if you like.

This is probably like many other recipes out there, and admittedlyI don't make it the same every time...but here's the basic recipe. I LOVE to make a giant pot of t his healthy chili and eat it for lunch during the week or even in/on my egg-substitute omelet for breakfast.

2 celery ribs, diced
1 (28 ounce) can diced tomatoes
1 large fresh tomato, diced
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can dark red kidney beans, drained and rinsed
1 small red onion, diced
1 green bell pepper, diced
3 (15 ounce) cans chicken stock, fat free
2 garlic cloves, minced
3/4 cup green chili, fresh roasted, seeded & peeled
1 (15 ounce) can corn, drained
2 teaspoons chili powder
2 teaspoons cayenne powder
salt, to taste
pepper, to taste

Steps:

  • Place all ingredients into a crock pot, and cook on medium-low heat for 4-6 hours. The longer it cooks at a low heat intensifies the flavor.
  • Adjust the seasoning as you feel necessary for your taste buds.
  • I like to serve with some fresh chopped cilantro and a teaspoon of fat free sour cream.
