MEDIEVAL APPLE TART (SILVER PALATE)



Medieval Apple Tart (Silver Palate) image

I adopted this from the Silver Palate Cookbook and added it to our Thanksgiving Menu. It's a flaky version of a French croustade made with thinly sliced apples and Grand Marnier and served warm with Creme Fraiche.

Number Of Ingredients 6

12 phyllo pastry sheets (fresh or thoroughly defrosted)
2 cups unsalted butter, about 4 sticks, plus extra for greasing pan
1 cup sugar
6 tablespoons Grand Marnier
6 medium tart apples, peeled, cored and thinly sliced
creme fraiche

Steps:

  • Unwrap the phyllo sheets and cover them with a damp towel for 10 minutes. Melt the butter in a saucepan over low heat.
  • Preheat the oer to 425°F.
  • Using a pastry brush, lightly butter a 14-inche baking pan. Lay a phyllo sheet on the pan. Remember to re-cover the unused phyllo with a damp towel each time. Brush the phyllo with some of the melted butter and sprinkle with 1 tablespoon of the sugar and 1 teaspoon of the Grand Marnier. Repeat using 5 more phyllo leaves.
  • Arrange the apples in the center of the top sheet of phyllo in a circular mount about 6 inches in diameter. Brush them with butter and sprinkle with some sugar and Grand Marnier.
  • Stack 6 more phyllo sheets on top of the apples, repeating and buttering and sprinkling with sugar and Grand Marnier. The top (twelfth) sheet of phyllo should only be buttered.
  • Trim off the corners of the phyllo sheets so you have a large round about 8 inches in diameter. Turn up the edges of the phyllo and pinch lightly to seal. Be tidy but don't work too long on this; the tart should look rustic.
  • Set the pan on the center of the oven and bake until golden, 30-40 minutes. If the pastry becomes too brown before this time, cover it loosely with aluminum foil.
  • Serve the tart immediately or reheat gently before serving.
  • Serve with a dollop of Creme Fraiche.

Tart Crust - Sweet n Buttery - (Silver Palate) Recipe image

Number Of Ingredients 7

1 1/2 cups unbleached all purpose flour
1/4 cup very fine granulated sugar
1/2 tsp salt
10 Tbsp sweet butter, chilled (1 1/4 sticks)
2 egg yolks
1 tsp vanilla extract
2 tsp cold water

Steps:

  • 1. Sift flour, sugar and salt into a mixing bowl. Cut chilled butter into pieces into the bowl. Using your Fingertips ONLY, rapidly rub the butter and dry ingredients together until the mixture resemble coarse meal. (Your palms will warm the dough) 2. Stir egg yolks, vanilla and water together and add to the flour-butter mixture and blend in, using a fork. Shape dough into a ball. This should not take more than 30-45 seconds. 3. Place the gall of dough on a pastry board. With the heel of your hand, smear about 1/4 cup of dough away from you into a 6-8 inch smear; repeat until all dough has been dealt with. Scrape dough together; re-form into a ball, wrap in wax paper, and chill for 2-3 hours. 4. Roll out dough between 2 sheets of wax paper, or use a floured pastry cloth and floured stockinette on your rolling pin, into a round large enough to line your pan. Work quickly, as the dough can become sticky. 5. Line either and 8 or 9 inch false bottom tart pan with the dough, fitting it loosely into pan and pressing to fit sides. Trim edges 3/4 inch outside top of pan, and fold this edge over to inside, and press into place with fingers. Chill 6. Preheat oven to 425 degrees 7. Line dough in the tart pan with a piece of aluminum foil or wax paper and weight with rice or beans. Bake for 8 minutes. Remove foil and beans. Prick the bottom of the dough with a fork in several places. For a partially baked shell, return to oven for 3 to 4 minutes longer. For a fully baked shell, return for 8-10 minutes longer, or until edges are a light brown.

Crust:
2 1/2 cups all-purpose flour
5 tablespoons sugar
3/4 teaspoon salt
3/4 teaspoon ground cinnamon
6 tablespoons cold unsalted butter
6 tablespoons cold shortening
4 to 6 tablespoons apple juice
Filling:
2/3 cup sour cream
1/3 cup sugar
1 egg, lightly beaten
1/4 teaspoon salt
1 teaspoon vanilla extract
3 tablespoons all-purpose flour
5 or 6 tart apples, peeled and sliced
Topping:
3 tablespoons brown sugar
3 tablespoons sugar
1 teaspoon ground cinnamon
1 cup chopped walnuts

Steps:

  • 1. Prepare crust: Sift flour, sugar, salt, and cinnamon into a bowl. Cut in the butter and shortening with a fork until the mixture resembles coarse meal. Moisten with just enough apple juice, tossing ingredients lightly with a fork. Form dough into a ball. Wrap and refrigerate for 2 hours.
  • 2. Cut off 1/3 of the dough and return it to the refrigerator. Roll out the other 2/3 between 2 sheets of wax paper. Line a greased 9-inch pie pan with the dough. Trim overhang and crimp decoratively. Preheat oven to 350°F.
  • 3. Whisk all filling ingredients, except apples, in a bowl. Add apples, then spoon into the pastry-lined pie pan. Combine topping ingredients and sprinkle over filling.
  • 4. Roll out the remaining dough between wax paper to form a circle 10 inches in diameter. Cut into strips 1/2-inch wide and arrange lattice-fashion over apples; trim ends of strips and crimp edges decoratively.
  • 5. Bake pie in the center of the oven until the juices are bubbling and the apples are tender, about 55-60 minutes. (Cover loosely with foil if the crust browns too quickly.) Serve warm or cooled.
