Mint Cooler is a refreshing summer drink made using fresh mint leaves, lime juice, and chia seeds. Add a splash of your favorite alcohol to make a cocktail.

1 tablespoon chia seeds
1/2 cup fresh mint leaves (packed, plus more for garnishing)
1/4 cup freshly squeezed lime Juice
1/4 cup sugar (or to taste)
4 cups chilled water
1 cup crushed Ice
lime rounds (for garnishing)

Steps:

  • Soak the chia seeds in 1/2 cup of water for 30 minutes.
  • Add mint leaves, lime juice, sugar, and 1/2 cup water to a blender and blend to make a smooth paste.
  • Transfer the paste to a pitcher.
  • Add the remaining water to the pitcher and stir well.
  • Pass the mixture through a fine-mesh strainer.
  • Stir in soaked chia seeds.
  • Add a few ice cubes, lime round and mint leaves to serving glasses.
  • Pour the mint mixture over ice and serve chilled.

12 cups chilled orange juice, fresh
1/2 cup fresh lemon juice, more if desired
1 bunch of fresh mint
2 lemons, thinly sliced
2 limes, thinly sliced
1 large orange, thinly sliced
ice cube

Steps:

  • Mix orange juice and 1/2 cup lemon juice in a tall pitcher. Add half of mint and bruise with the back of a spoon against side of the pitcher.
  • Taste, adding more lemon juice, if desired. Mix in lemon, lime and orange slices.(can be prepared 4 hours ahead at this point and refrigerate).
  • Add ice to the pitcher and mix. Pour into glasses. Garanish with remaining fruit.

1 1/4 cups fresh orange juice
1 1/4 cups fresh grapefruit juice
1 1/4 cups fresh lemon juice
4 lemon slices (to garnish) (optional)
4 fresh mint sprigs, for garnisah (optional)

Steps:

  • In large saucepan, stir together water and sugar; bring to a boil, stirring until sugar is dissolved.
  • Reduce heat and simmer for 5 minutes; let cool.
  • Stir in orange, grapefruit and lemon juices; chill until ready to serve.
  • Pour over ice cubes in tall glasses.
  • Garnish with a lemon slice and mint sprig.
