Time 50m

Number Of Ingredients 14

6 cups Chocolate Cake Mix
1 Tsp Vanilla Extract
1 Tsp Orange Extract
2 Tbsp Ground Coffee Beans
1 cup Brown Sugar
1 Tsp Orange Zest
2 Tbsp Orange Juice
¼ cup Vegetable Oil
2 Tbsp Thick Yogurt
1 cup Buttermilk
2 cups Whipping Cream
100 gm Dark Chocolate (3.5 Oz)
1 stick Butter
1 Drop Orange Food Color

Steps:

  • Preheat the oven to 350F or 180C and line a styrofoam cake pan with parchment paper
  • In a bowl, combine Chocolate cake mix with Vanilla Extract, Orange Extract, Ground Coffee Beans, Brown Sugar, Orange Zest, Orange Juice, Yogurt, Vegetable Oil, and Buttermilk. Mix everything with a spatula to make a smooth Cake batter.
  • Pour this into a cake pan. Bake for 30 minutes at 350F or 180 C or until a skewer inserted in the center comes out clean.Once the Chocolate cake is baked, get it out of the oven and cool it down.
  • Melt Dark Chocolate with butter in a double boiler. Keep stirring at regular intervals so that the chocolate doesn't get burned. Once the chocolate is smooth and lump-free, get it off in a separate bowl.Combine the melted dark chocolate with whipped cream, using a handheld mixer or stand mixer. Beat until you get a smooth and creamy Chocolate ganache ready. Now slather it over the baked and cooled cake. Even it out using an offset spatula.
  • For Orange whipped cream frosting, combine Whipping cream with 1 drop of orange gel food color, using a handheld mixer or stand mixer, until you get stiff peaks. Take it up in a piping bag, snip the edge and do the frosting over the cake. If you want, you can even add a nozzle into your piping bag and do the frosting over your chocolate cake.
  • Top the cake with orange rinds. Orange Rinds are basically, the skin of Orange cut into thin juliennes. This will give an edge to your Cake decoration. To make Orange Rinds, peel an orange, and then chop up thin slices of the skin. It should be long and it should be thin. Keep an orange slice in the center of your Cake. Top that with melted chocolate and do some frosting on it. Sprinkle some Orange zest and ground coffee beans over your Chocolate Orange Mocha Cake and then cut into slices and serve!

ORANGE MOCHA CHOCOLATE CAKE

Orange Mocha Chocolate Cake image

Nothing says I love you, happy birthday, happy Valentine's day, cheer up or congratulations like chocolate cake! That goes double for this easy vegan Orange Mocha Chocolate Cake!

Provided by Kelly, Kitchen Gone Rogue

Categories     Dessert

Yield 12 pieces

Number Of Ingredients 11

1 1/2 cups organic all-purpose flour
1 cup organic sugar
1 tsp sea salt
1 tsp baking soda
1/3 cup cocoa powder
1 cup hot coffee (minus 2 Tbsp)
2 Tbsp fresh squeezed orange juice
1 Tbsp fresh orange zest
1/3 cup canola oil
1 Tbsp apple cider vinegar
1/2 cup chocolate chips (dairy-free if vegan or have dairy issues) ((you can use 1/2 to 3/4 cup) :))

Steps:

  • Preheat oven to 350 degrees F
  • In large bowl, mix all of the dry ingredients
  • Add the wet ingredients and mix well (I use a hand whisker - this is easy to mix together and doesn't need electric beaters). DO NOT ADD the CHOCOLATE CHIPS YET
  • Coat a 10 inch cast iron skillet (or 9x9 baking dish) lightly with oil
  • Pour the batter into your skillet or baking dish
  • Top with the chocolate chips and bake 28-30 minutes or until done (the center will be a little softer than the edges; that's ok, but you don't want it liquidy!)
  • (Optional) Add sprinkles that fit your occasion, let cool some (or completely) and serve. It's really good served warm!
  • Enjoy!

CHOCOLATE CAKE WITH MOCHA FROSTING

Chocolate Cake with Mocha Frosting image

Provided by Ina Garten

Categories     dessert

Time 1h45m

Yield 12 servings

Number Of Ingredients 18

12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
2 cups sugar
1 tablespoon pure vanilla extract
3 extra-large eggs, at room temperature
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
2/3 cup hottest tap water
2/3 cup unsweetened cocoa powder, such as Droste Cocoa Powder
1 teaspoon instant espresso powder
2/3 cup half-and-half
Mocha Frosting, recipe follows
12 ounces bittersweet chocolate, such as Lindt, 1/4-inch-chopped
3 tablespoons unsalted butter, diced, at room temperature
2 teaspoons instant espresso powder
1 1/4 cups heavy cream
1 tablespoon Kahlua
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking pan. Line with parchment paper, then grease and flour the pan.
  • Place the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 4 to 5 minutes, until light and fluffy, scraping down the bowl. On medium speed, add the vanilla, then beat in the eggs, one at a time, until incorporated and the batter is smooth.
  • Sift the flour, baking soda, and salt together in a medium bowl. In another bowl or a liquid measuring cup, whisk together the hot water, cocoa powder, and espresso powder until smooth. Add the half-and-half and whisk until smooth. With the mixer on low, add the flour and chocolate mixtures alternately in thirds, starting and ending with the flour. With a rubber spatula, scrape down the bowl to be sure the batter is well mixed.
  • Pour the batter into the prepared pan, smooth the top, and bake for 25 to 35 minutes, until a cake tester inserted in the center comes out clean. Cool completely in the pan. Turn out onto a flat platter or board and frost the top with the Mocha Frosting. Cut in squares and serve.
  • Place the chocolate, butter, and espresso powder in a bowl. Heat the cream to simmer and pour it over the chocolate mixture, stirring occasionally, until the chocolate is melted. (If the chocolate isn't melted, microwave the mixture for 15 seconds.) Stir in the Kahlua and vanilla and stir until the mixture is smooth. Cover and refrigerate for 30 minutes only, until cool but not cold.
  • Scrape down the bowl and beat the frosting with a handheld mixer on high speed for 15 to 20 seconds only, until the mixture forms soft peaks. (If you overbeat it, it will curdle!) Spread on the cake immediately with a metal spatula.

MOCHA CHOCOLATE CHIP CAKE

Mocha Chocolate Chip Cake image

Alice's Tea Cup, which is owned by the sisters Haley Fox and Lauren Fox, is known for its scones, but the chainlet of teahouses in New York also makes pastries, cakes and other treats. This recipe is an adaptation of a chocolate chip cake with mocha frosting that originated with the Fox sisters' mother. The cake has a tender crumb, and the frosting is silky and rich.

Provided by Alex Witchel

Categories     cakes, dessert

Time 1h

Yield One 2-layer 8-inch cake

Number Of Ingredients 16

113 grams (1/2 cup or 1 stick) salted butter, softened, more for pans
250 grams (2 1/4 cups) sifted unbleached all-purpose flour, more for pans
300 grams (1 1/3 cups) turbinado sugar
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/2 teaspoons baking powder
1 teaspoon kosher salt
1 cup milk (2 percent or whole)
3/4 cup to 1 cup semisweet or bittersweet chocolate chips, roughly chopped; or mini chocolate chips
360 grams (3 cups) confectioners' sugar
226 grams (1 cup) salted butter, softened
1/8 teaspoon kosher salt
1/2 teaspoon vanilla extract
2 tablespoons plus 1 teaspoon instant espresso
2 tablespoons boiling water
3/4 cup to 1 cup semisweet or bittersweet chocolate chips, for decorating

Steps:

  • Make the cake: Heat oven to 350 degrees. Butter and flour two 8-inch cake pans, and line the bottoms with rounds of parchment paper cut to fit.
  • Using an electric mixer or by hand, in a bowl, mix the butter and turbinado sugar until evenly blended. Add eggs and vanilla, and mix again until smooth. In a separate bowl, whisk or sift the flour, baking powder and salt together. Add half the dry ingredients to the egg mixture, mix well, then add half the milk and mix again. Repeat with remaining dry ingredients and milk. Add the chocolate chips and mix well. The batter may look curdled.
  • Pour the batter into the pans and bake until a tester inserted into the center comes out clean, 30 to 35 minutes. Let cool for 15 minutes before removing cakes from pans to a rack to cool completely. If the cakes are domed, use a long, serrated knife to level the tops.
  • Make the frosting: Using an electric mixer or by hand, mix the confectioners' sugar with the butter, salt and vanilla, until well blended. In a small bowl, mix the espresso powder with the boiling water to dissolve; add it to the frosting, blending well.
  • Place one cake layer on a serving platter and spread about one-third of the frosting over the top in an even layer. Top with the second cake layer and use an offset spatula or butter knife to spread frosting over top and, optionally, sides of the cake. Decorate with the chocolate chips.
