MELE ALLA CREMA (BAKED APPLES WITH CREAM)

Steps:
- Soak 4 ounces of amaretti cookies in the wine until very soft.
- Meanwhile, dissolve sugar in saucepan over moderate heat, stirring.
- In separate saucepan, heat 1/2 cup heavy cream until it boils. When sugar has dissolved and browned, add boiling cream, mixing well. Scrape down sides and corners of saucepan. Let cool.
- Preheat oven to 350 degrees.
- Whip the remaining 1/2 cup cream until firm. Reserve Y of the whipped cream for decorating. Add the rest to the cooled sauce.
- Fill each apple with the soaked amaretti. Put apples in a greased baking dish and add water to a depth of 1/8 inch. Place in the oven and bake about half an hour, until the apples are tender but still firm.
- Remove from the oven and let cool. Arrange the apples in a deep serving dish. Pour cream sauce over them and pipe reserved whipped cream around them. Crumble the remaining amaretti cookies and sprinkle over all.

BAKED APPLES
Steps:
- In a small saucepan, bring 2 tablespoons of the apple juice just to a simmer and remove from the heat. Add the currants, stir, and let them sit for 10 minutes to swell. Preheat the oven to 350 degrees.
- In a bowl, stir together the apricot jam, almonds, and brown sugar. Add the currants with their juice and mix together well. Use this mixture to stuff the apples. Place them in a small roasting pan and place a dab of butter on the top of each. Pour the remaining 1 cup of apple juice into the pan and bake for 50 to 60 minutes, or until tender but not split or mushy. Serve hot, with a dollop of Crema, if desired.
- Whisk the cream and the buttermilk together in a bowl. Cover and set in a warm place (a gas oven with just the heat from the pilot light is fine) for 8 hours. Crema may be kept in the refrigerator for as long as a week.
BAKED APPLES WITH CARAMEL SAUCE
Steps:
- Preheat the oven to 350 degrees F.
- Core the apples. Using a paring knife, score a ring around the midriff of each apple, just cutting through the skin to prevent the apples from bursting during baking. Stuff the apples with the figs and almonds. Set on a baking sheet, and bake until puffed up and soft all the way through, about 30 minutes.
- Meanwhile, put the sugar in a saucepan with a spoonful of water, and boil to a golden caramel, about 5 minutes, depending on how much water you've added. Do not stir the sugar with a spoon, gently swirl the saucepan over the heat until the desired color. You want a nice rich caramel color, but don't let it get too dark.
- Serve the baked apples warm from the oven with the sauce poured over and with a generous slump of cinnamon whipped cream or creme fraiche on the side.
BAKED APPLES IN CARAMEL CREAM

- Combine brown sugar and water in a 9-in. square baking dish. Peel the top half of each apple; brush with lemon juice. , Place in the baking dish. Fill each with three caramels. Bake at 350° for 60-65 minutes or until apples are tender, basting every 20 minutes. , Carefully lift apples, allowing any caramel in centers to drip into pan, and place in individual dessert dishes. Pour sauce into a small saucepan; add cream. Cook and stir over medium-low heat until sauce is smooth and thick. Spoon over apples; serve immediately.

CREAMY BAKED APPLES
You've never had baked apples like this before! This is an old family recipe that is 'required' at Thanksgiving but eaten all year round.

Steps:
- Peel& core apples, cut in eights.
- (I use my apple corer/slicer and then just peel the slices) Place in a baking dish, and dot with butter.
- Sprinkle generously with cinnamon-sugar.
- Bake in microwave on HIGH for about 10 minutes or until fork inserts easily, stirring at least once.
- Remove from microwave and set aside.
- In saucepan bring flour, sugar and milk to a boil over medium heat (it will be thick) stirring constantly.
- Remove from heat, add vanilla and stir well.
- Pour over apples and sprinkle with cinnamon and nutmeg if you desire.
- Serve hot or let cool some.
OBSTKUCHEN (FRUIT TARTS)
Almost any kind of raw or poached fruit can be used, allowing 1 1/2 to 2 cups for each tart.

- Add vegetable shortening and sugar to scalded milk and stir to melt thoroughly.
- When mixture is lukewarm (105 to 115 degrees), add yeast and stir to dissolve. Add well-beaten eggs and flour to yeast mixture. Beat thoroughly.
- Place dough in a large, greased mixing bowl, and cover with a damp kitchen towel. Set aside in a warm, draft-free place to rise for 8 hours or overnight. The dough will be very spongy.
- Almost any kind of raw or poached fruit can be used, allowing 1 1/2 to 2 cups for each tart. The ingredients listed are suggested toppings. If necessary, drain the fruits well.
- Unsweetened fruit may benefit from 1/2 cup of sugar sprinkled over it and mixed well before the fruit is added to the tart.
- Using an electric mixer, beat eggs and sugar together until they are thick, pale yellow and form a ribbon. Add milk, flour and salt. Beat briefly to blend well. (See note.)
- Divide the dough in two. Roll out half the dough, and use it to line a lightly greased 9-inch pie pan. Arrange fruit on dough, and set aside for an hour or more for the dough to rise until double in bulk.
- When ready to cook, preheat oven to 350 degrees. Spoon custard mixture over fruit and place in preheated oven. Bake for about 30 minutes, or until custard is set and tart is baked through. Serve warm or at room temperature.

- Preheat oven to 375 degrees F (190 degrees C).
- Place apples in pie shell. Mix together sugar, flour, nutmeg, and cinnamon. Sprinkle this mixture over apples in shell.
- Melt the butter stir into the cream; pour liquids over apples.
- Bake in preheated oven until apples are tender, filling is bubbling, and crust is golden brown, about 35 minutes. Allow to cool to room temperature, and then refrigerate to allow filling to set.

GELATO ALLA CREMA (EGG CREAM GELATO)
This is my husband's favorite flavor of gelato. It is the antique flavor similar to an egg custard. It serves nicely with fruit or even a piece of pie!

Steps:
- Combine milk and cream in a saucepan and warm over low heat until foam forms around the edges. Remove from heat.
- Combine egg yolks, sugar, scraped vanilla bean seeds, and chestnut flour in a large bowl and beat with an electric mixer until frothy. Gradually pour warm milk into egg yolk mixture, whisking constantly.
- Return mixture to saucepan; add scraped vanilla bean and cook over medium heat, stirring with a wooden spoon until the mixture gels slightly and coats the back of the spoon. If small egg lumps begin to show, remove from heat immediately.
- Pour mixture through a sieve or fine strainer into a bowl. Cover, and chill for several hours or overnight.
- Pour mixture into an ice cream maker, and freeze according to manufacturer's instructions. Transfer to a sealed container, and freeze until firm. If the gelato is too firm, place it in the refrigerator until it reaches the desired consistency before serving.
