JOSE'S OATMEAL PEANUT BUTTER CHOCOLATE CHIP COOKIES

Steps:
- In a food processor pulse 1 cup oats until ground fine. In a large bowl stir together ground oats, remaining 1/2 cup whole oats, flour, baking powder, baking soda, and salt.
- In another large bowl with an electric mixer beat together butter and sugars until light and fluffy and beat in vanilla and peanut butter. Add eggs, 1 at a time, beating well after each addition, and gradually beat in flour mixture. Add chocolate chips and grated chocolate, beating just until combined. Chill cookie dough, covered, at least 2 hours and up to 1 week.
- Preheat oven to 325°F.
- Form rounded tablespoons of dough into balls and arrange about 2 inches apart on ungreased baking sheets. Flatten balls slightly.
- Bake cookies in batches in middle of oven 15 minutes, or until just pale golden. Cool cookies on baking sheet 5 minutes and transfer to racks to cool completely.
OATMEAL PEANUT BUTTER AND CHOCOLATE CHIP COOKIES

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream together the butter, brown sugar and white sugar. Beat in the eggs one at a time, then stir in the peanut butter, water and vanilla. Combine the flour and baking soda, stir into the creamed mixture. Finally, stir in the rolled oats and chocolate chips. Drop by teaspoonfuls onto an unprepared cookie sheet.
- Bake for 8 to 10 minutes in the preheated oven, until the cookies are lightly toasted on the edges. Remove from the baking sheet to cool on wire racks.

PEANUT BUTTER-CHOCOLATE CHIP OATMEAL COOKIES

- Preheat oven to 350 degrees. Stir together oats, flour, baking soda, baking powder, and salt in a medium bowl; set aside.
- Put sugars, butter, and peanut butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 5 minutes. Mix in eggs and vanilla.
- Reduce speed to low. Add oat mixture, and mix until just combined. Mix in peanuts and chocolate chips.
- Using a 1 1/2-tablespoon ice cream scoop, drop balls of dough 2 inches apart on baking sheets lined with parchment paper.
- Bake cookies, rotating sheets halfway through, until golden brown and just set, 13 to 15 minutes. Let cool on sheets on wire racks 5 minutes. Transfer cookies to wire racks to cool completely.
CHOCOLATE CHIP BLENDED OATMEAL COOKIES

- Preheat the oven to 350 degrees F. Line baking sheets with parchment paper.
- In a large bowl with a handheld electric mixer or in a stand mixer fitted with the paddle attachment, add the butter, brown sugar, granulated sugar, baking soda, baking powder, and salt. Mix well until light and fluffy, 1-2 minutes, scraping down the sides of the bowl as needed.
- Add the eggs and vanilla. Mix until well-combined, scraping down the sides of the bowl as needed.
- Measure the oats into a blender or food processor and process until the oats are blended into a coarse powder.
- Add the oats and flour to the bowl and mix until a few dry streaks remain. Add the chocolate chips and mix until evenly combined.
- Scoop the cookie onto the prepared baking sheets (I use a #40 cookie scoop - it holds a couple tablespoons of dough), spacing them a few inches apart. See note for making/baking large bakery-style cookies.
- Bake for 10-12 minutes until just lightly golden around the edges but not too dark. Remove to a cooling rack and let cool completely.

This recipe is a bit different than the others posted basically just in the amount of oats and that this does not use chopped peanuts. This has been an old standby for my family from the time I was a kid.

- Add egg and beat together well.
- Sift flour, baking soda, salt and cream of tartar together.

- Cream brown sugar, margarine (or butter), peanut butter and buttermilk together.
- Combine flour, oats, baking powder, salt in a separate bowl.

- Preheat oven to 350.
- Cream butter and both sugars. Creaming means simply to beat until fluffy.
- Beat in eggs, one at a time, then beat in vanilla.
- Stir together flour, baking powder, salt, cinnamon and oats.
- Add to mixture and slowly beat until blended. Stir in nuts, chocolate and chips.
- Drop by tablespoonfuls an inch or so apart onto parchment covered or sprayed cookie sheet.
- Bake 12-15 minutes. Don't over bake!

OATMEAL CHOCOLATE CHIP COOKIES
This recipe is from my aunt Becca who gets requests all of the time from family to make these. She mixes them by hand, so I do too. They'd probably turn out just as well using a mixer though. The butter in the recipe really makes them good. This recipe makes quite a few so feel free to halve the recipe or make it all and freeze the cookies for another day.

- Cream together butter and sugars by hand with a wooden spoon.
- Add eggs, one at a time, beating after each addition.
- Stir in vanilla.
- In a separate bowl, combine flour, oats, salt, baking soda and baking powder.

- Preheat the oven to 300 degrees F (150 degrees C). Grease cookie sheets. Stir together the flour, baking soda, salt and oats; set aside.
- In a medium bowl, cream together the butter and brown sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Mix in the dry ingredients until well blended before stirring in the chocolate chips. Drop by heaping spoonfuls onto the prepared cookie sheet at least 3 inches apart. Flatten cookies to 1/2 inch thick.
