ROAST BEEF & CHEESE SANDWICHES
Tender, juicy, flavorful roast beef - there's just something about it. Whether braised or done in the slow cooker it's always a hit at my house. These Roast Beef Sandwiches are juicy, cheesy, and loaded up with amazing flavors! Whether you're making one for lunch, trying to use up leftovers, or you're making a dozen of these for game-day, they are a guaranteed winner!

Steps:
- In a medium sauce pan, add beef and stock. Bring to a low simmer.
- Continue to cook for approximately 10 minutes or until most of liquid has reduced.
- Melt 1 tablespoon of butter in a sauce pan, add onion. Season with salt and pepper.
- Cook onion until just slightly brown.
- Heat oven to 375 degrees.
- Gently open hoagie rolls spread butter on insides of each. Place on a sheet tray and toast until golden brown then remove from oven.
- Increase oven temperature to 425 degrees.
- Using tongs or a slotted spoon, place a large helping of roast beef on each roll. Sprinkle with with cheese and place on sheet tray.
- Place in oven for 5-8 minutes or until cheese is melted.
- Top with onions and serve immediately.
MINI ROAST BEEF AND CHEESE SANDWICHES

- Preheat the oven to 375 degrees F.
- For the secret sauce: Combine the ketchup, apple cider vinegar, Worcestershire sauce, garlic powder and hot sauce in a small microwave-safe bowl. Microwave until just simmering, about 30 seconds. Keep warm, covered.
- For the sandwiches and Cheddar sauce: Lay the slider buns cut-side up on a rimmed baking sheet and bake until warmed through, about 8 minutes.
- Meanwhile, combine the processed cheese, Cheddar, milk and paprika in a small saucepan and warm over medium-high heat, stirring, until melted and smooth, about 2 minutes. Take off the heat and keep warm, covered.
- Spread both sides of the buns lightly with the secret sauce. Place a few slices of roast beef on each bottom half of the buns. Rewarm the cheese sauce if necessary, then spoon some of the cheese sauce on top of the meat. Cover with the top half of the buns and serve immediately.

- Lay sliced bread on bread board.
- Paint tops of bread slices generously with melted butter.
- Flip bread slices over.
- Spread mayonnaise generously on each slice of bread.
- Assemble two sliced bread pieces with roast beef, cheese and 1/2 teaspoon diced green chilies.
- Sprinkle with salt. Top sandwiches with other two slices of bread, mayo side down, butter side up.
- Grill sandwiches on medium high heat griddle, with lots of butter on the grill beneath, until bottoms of sandwiches are golden brown and cheese begins melting.
- Carefully flip sandwiches over using two utensils and grill again until bottom bread is also golden brown and cheese is melted.
- Remove two sandwiches from griddle, slice each in half and arrange on two plates. Garnish plates.
- Serve with dill pickles, yellow mustard, prepared horseradish and lots of napkins.
- French fries, onion rings and cole slaw make wonderful additions to this meal.
