ORANGE-MAPLE SYRUP MARINADE FOR CHICKEN

Steps:
- Combine all ingredients in a bowl.Put chicken in a bag. Add marinade. Close bag and shake vigorously.Refrigerate for 2 to 12 hours.Remove meat and discard marinade.
CHICKEN MARINADE
Steps:
- In a small bowl, whisk together the lemon juice, mustard, 1 teaspoon salt and 1/2 teaspoon pepper. While whisking, slowly add the olive oil until the vinaigrette is emulsified. Set aside.
- Place the chicken breasts in a baking dish large enough to hold them in a single layer and sprinkle generously with salt and pepper on both sides. Pour half the marinade over the chicken, reserving the other half to use later. Allow the chicken to marinade for at least two hours in the refrigerator.
- Preheat the oven to 350 degrees F.
- Roast the chicken for 35 to 40 minutes, or until cooked through. Remove the chicken from the oven and pour the remaining marinade over the top of the chicken. Cover the dish with aluminium foil and allow to rest for 10 minutes.

CHICKEN MARINATED IN BUTTERMILK AND NUTMEG

- Place the chicken pieces in a plastic bag and add the buttermilk, garlic cloves, nutmeg, mace, honey and thyme. Season.Close the bag and shake so that all the chicken pieces are coated with marinade.Refrigerate at least 4 hours.After the marinating time has elapsed, preheat the grill to medium heat.Remove the chicken pieces from the bag and, with your fingers, remove excess marinade.Place the chicken on a baking sheet and discard the marinade.Season the chicken pieces and cook on the BBQ slowly for about 20 to 25 minutes.Obvisously, the 4 thigh pieces will take longer to cook than breast meat.Remove the chicken from the grill and serve with coleslaw and some hash-browns.
QUICK CHICKEN MARINADE
I love to use this marinade while grilling. You might want to cover grill grates with tin foil to keep chicken from sticking.

MEDITERRANEAN CHICKEN MARINADE
This is a yummy, flavorful marinade that livens up bland chicken dinners. However, this could also be used on pork chops, fish and turkey! I made this with brown rice and used some of the unused marinade as a sauce to pour over the rice. DELICIOUS!!!

- Whisk vinegar, soy sauce, olive oil, parsley, basil, oregano, garlic powder, and black pepper together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, at least 4 hours.
- Preheat grill for medium-low heat and lightly oil the grate. Drain and discard marinade.
- Grill chicken on the preheated grill until no longer pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

My sister was kind enough to share this wonderful marinade. It tastes better than just teriyaki sauce. This marinade sauce is awesome. The perfect marinade. To use the marinade, pierce up to 4 pounds of chicken pieces all over with a fork and marinade 2 hours before cooking as desired.
