MEXICAN BREAKFAST CASSEROLE



Mexican Breakfast Casserole image

A spicy spin on your average American breakfast casserole. Feel free to change anything in this recipe. This was really delicious as it is, but I'm always looking for ways to improve it! Enjoy! Top with your favorite hot sauce or even taco sauce.

6 slices bacon, chopped
4 potatoes, shredded
1 onion, chopped, or to taste
1 (10 ounce) can diced tomatoes with green chile peppers
1 (10.75 ounce) can condensed cream of chicken soup
1 cup milk
3 eggs, or more to taste
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a large casserole dish.
  • Place bacon in a skillet and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 8 minutes. Drain on paper towels.
  • Cook and stir potatoes and onion in the skillet until golden brown, about 10 minutes. Add bacon and diced tomatoes; stir until heated through, 3 to 5 minutes.
  • Pour potato mixture into the casserole dish.
  • Whisk cream of chicken soup, milk, and eggs together in a bowl. Pour over potato mixture in the casserole dish.
  • Bake in the preheated oven until eggs are set, about 40 minutes. Sprinkle Cheddar cheese on top. Continue baking until cheese is melted, about 5 minutes more.

14 ounces pinto beans
2 tablespoons canola oil
1 garlic clove, minced
1/2 onion, chopped
1 fresh jalapeno pepper, sliced and seeded
1/2 avocado, sliced
4 eggs
4 -6 corn tortillas
3 sprigs fresh cilantro
hot sauce
3 slices bacon, cooked and crumbled

Steps:

  • Drain beans, saving liquid. Saute garlic, jalapeno and onion until onion is translucent. Add beans and mash with potato masher or fork. Add small amount of bean liquid if needed. Keep warm.
  • Fry the eggs over medium.
  • Steam tortillas.
  • On a plate, lay down two tortillas, top with bean mixture, crumbled bacon and two eggs. Garnish plates with two slices of avocado and a few sprigs cilantro. Serve with hot sauce and extra tortillas.

2 tablespoons olive oil
3 corn tortillas, cut into 1/2 inch pieces
1 medium onion, finely chopped
1 jalapeno pepper, seeded and finely chopped
1 clove garlic, minced
1 small tomatoes, finely chopped
1 teaspoon dried oregano
4 eggs, lightly beaten
1/2 cup shredded sharp cheddar cheese (2 ounces)
1/2 cup salsa

Steps:

  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the tortilla pieces and cook for 2 to 3 minutes, until they begin to get crisp, stirring occasionally.
  • Add the onion, jalapeño pepper, and garlic, and saute for 1 to 2 minutes, or until the onion is transparent.
  • Stir in the tomato and oregano; mix well.
  • Add the eggs and stir to scramble until the eggs are set.
  • Remove the skillet from the heat, add the cheese,and stir until the cheese is melted.
  • Top with the salsa and serve.
