In my Mexican steak fajitas recipe, tender strips of sirloin pick up plenty of spicy flavor from a marinade seasoned with cayenne pepper and cumin. This colorful dish is speedy and satisfying. -Shirley Hilger, Lincoln, Nebraska

Number Of Ingredients 14

1/4 cup orange juice
1/4 cup white vinegar
4 garlic cloves, minced
1 teaspoon seasoned salt
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 pound beef top sirloin steak, cut into 1/4-inch strips
1 medium onion, thinly sliced
1 medium green pepper, thinly sliced
1 medium sweet red pepper, thinly sliced
2 tablespoons canola oil, divided
6 flour tortillas (10 inches)
Optional: Shredded cheddar cheese, picante sauce and sour cream

Steps:

  • In a large bowl, combine the orange juice, vinegar, garlic and seasonings; add the beef. Turn to coat; set aside. In a skillet, saute onion and peppers in 1 tablespoon oil until crisp-tender; remove and set aside., Drain and discard marinade. In the same skillet, cook beef in remaining 1 tablespoon oil until it reaches desired doneness, 2-4 minutes. Return vegetables to pan; heat through. Spoon meat and vegetables onto tortillas. If desired, top with cheese and serve with picante sauce and sour cream.

This is simple, quick and family friendly dish for Mexican steak and rice that is ridiculously easy to make. If you love the flavours of fajitas then this Mexican rice recipe is going to be a welcome addition to your cookbook. In the recipe below, we've used strips of quick frying steak but you could easily make this recipe using chicken or turkey steaks instead. You'll notice there is white rice in the dish, but don't worry, you needn't be worried by the seemingly "high GI" of white rice. The GI value is more or less redundant when the food is eaten with other foods especially when the other foods provide a source of fibre, protein and fat. 150 g white rice, uncooked weight
1 tbsp olive oil
1 green pepper, sliced
1 red pepper, sliced
2 red onions, sliced
400 g frying steak or chicken breast, sliced into long strips
2 tbsp Mexican/Cajun/Fajita spice mix
1 tbsp tomato puree

Steps:

  • To start, bring rice (dry weight) to the boil cook according to the directions on the packet.
  • Heat the olive oil in a large pan or work over a medium heat and add the chopped peppers and onions and fry until brown.
  • Remove the veg from the pan and add the steak and fry for a couple of minutes or until it is cooked.
  • Just like you would do with fajitas, add the vegetables back to the pan and mix through with the steak.
  • Add the spice mix and mix through and cook for a further minute.
  • Once the rice has cooked, drain it then add it to pan with the meat and vegetables along with the tomato puree and cook, stirring constantly for about a minute. Serve.

  • FOR THE GARLIC LIME RICE: Rince the rice in a fine mesh strainer under cold running water for 2 minutes, using your fingers to rub the rice to remove any starch, set aside. Heat the butter in a large sauté pan over medium heat. Add the rinsed rice and allow to toast for 2-3 minutes, stirring frequently so the rice doesn’t stick or burn. Add the garlic, continue to cook for 30 seconds or until the garlic is fragrant. Add the chicken broth, salt, and lime juice and allow to come to a boil, stir just once to break up lumps. Cover, reduce heat to low and allow the rice to cook for 12-15 minutes or until the water dries up. Let stand for 5 minutes before adding cilantro and fluffing with a fork.
  • ASSEMBLE: Arrange the rice and steak in a bowl, and go crazy with the topping possibilities! Make it your own!
