MEXICAN HAT DANCE SPUDS

- Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 15-17 minutes or until tender, turning once., Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in sloppy joe sauce; heat through. , Cut an "X" in the top of each potato; fluff pulp with a fork. Spoon meat mixture into potatoes; sprinkle with cheese and green onions.

MEXICAN GRILLED CHEESE SANDWICHES
With a trio of prepared ingredients, this twist on a classic sandwich is fun and easy.

Steps:
- Heat griddle to 350°F or heat 12-inch skillet over medium heat. Top 2 slices of the bread with cheese; cover with remaining bread.
- In small bowl, mix butter and taco seasoning mix. Spread half of mixture on one side of each sandwich.
- Place sandwiches, buttered sides down, on hot griddle. Spread top sides with remaining butter mixture. Cook 5 to 7 minutes, turning once, until golden brown on both sides and cheese is melted. Serve with salsa as a dip.

SPUD'S TWICE-BAKED TATERS
A family favorite! Potatoes are baked, then re-stuffed for a second baking with a decadent mixture of potato, cheese, bacon and green onion. Great for all occasions!

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Place potatoes on a baking sheet and pierce once with a fork. Bake for one hour. Remove from oven and let cool for about 10 minutes.
- Reduce oven temperature to 350 degrees F (175 degrees C).
- Slice potatoes in half and scoop the potato flesh into a bowl, leaving some to form a shell. Place potato skins in a lightly oiled casserole dish.
- Season potato mix with Diamond Crystal® Kosher Salt and pepper. Add the butter and begin to mash with a fork. Add sour cream, half of the cheese, and the cream. Continue to mash and stir until creamy. Stir in the bacon and half the green onion.
- Scoop filling evenly into potato shells, mounding as necessary. Sprinkle with remaining cheese and green onion.
- Bake until cheese is melted, about 20 minutes. Let cool five minutes before eating.

These potatoes are total 'man-food' and I've never met a person that didn't like them. They must be cooked over a grill, oven roasting just doesn't turn out the same.

Steps:
- Preheat an outdoor grill for medium heat.
- Line the bottom of a 9x13 inch foil roasting pan with half of the butter, garlic, lemon pepper, and salt-free spicy seasoning blend. Place half of the potatoes, green bell pepper, yellow bell pepper, orange bell pepper and onion in the roasting pan and cover with the remaining butter, garlic, lemon pepper, and seasoning blend. Mix in the remaining potatoes, green bell pepper, yellow bell pepper, orange bell pepper and onion. Pour in the beer until it reaches just below the top layer of vegetables.
- Cover pan with foil, place pan on the grill grate, and cook 1 1/2 hours, or until the potatoes are tender. Remove pan from the grill, cover with the shredded cheese, and let stand until the cheese has melted.
