1 tablespoon buttery spread or oil
4 (4 ounce) tilapia fillets, cut into chunks
1 (5.4 ounce) package Knorr® Fiesta Sides™ - Mexican Rice
4 cups torn romaine lettuce leaves
1 fresh tomato, chopped
½ red onion, diced

Steps:

  • Mix cumin and chili powder together and sprinkle over tilapia chunks to coat.
  • Heat non-stick skillet over medium-high heat and melt buttery spread or oil. Saute tilapia on each side until cooked through, 2 to 3 minutes per side. Remove from pan and set aside.
  • In same skillet, prepare Knorr® Fiesta SidesTM - Mexican Rice according to package directions. Transfer tilapia to the rice mixture.
  • Divide lettuce between four salad bowls or plates. Divide the rice and tilapia mixture among the dishes. Top with tomatoes and onions. Serve with your favorite light dressing, such as Ranch.

Olive oil, for brushing
1 cup cooked brown rice
2 (15-ounce) cans pinto beans, drained and rinsed
1 red bell pepper, seeded and finely chopped
1 bunch green onions, sliced
1 small jalapeno, seeds and rib removed, diced
3 tablespoons olive oil
Juice of 1 lime
1 teaspoon cumin
1 clove garlic, finely chopped
3 tablespoons chopped fresh cilantro
Kosher salt and freshly ground black pepper
1 cup crumbled queso fresco or feta cheese

Steps:

  • Preheat the grill to medium-high heat.
  • Brush corn with olive oil, and season with salt and pepper. Grill for 5 to 6 minutes, rotating on all sides, until the corn has some nice charred spots. Let cool and remove corn kernels from the cob.
  • Add corn, brown rice, beans, red bell pepper, jalapeno, and green onions to a large bowl.
  • In a smaller bowl, whisk together the olive oil, lime juice, cumin, garlic, cilantro, and salt and pepper. Fold dressing into the veggies and top with the crumbled cheese and toss.

1 teaspoon grated lime zest

1 tablespoon vegetable oil
1 (15 ounce) can reduced-sodium black beans, rinsed and drained
1 (15.25 ounce) can no-salt-added whole-kernel corn, drained
1 ¾ cups water
2 tablespoons medium chunky salsa
¼ teaspoon cumin
¼ teaspoon chili powder
1 (5.4 ounce) package Knorr® Fiesta Sides™ - Yellow Rice
Salt and pepper to taste

Steps:

  • Pat tilapia filets dry with paper towels and season both sides with salt and pepper.
  • In large skillet, heat oil and add tilapia filets. Cook until fish releases easily with a spatula; flip and cook until fish is cooked through and flakes easily with a fork, 5 to 8 minutes. Remove from skillet and set aside, tenting loosely with foil to keep warm.
  • Add beans, corn, water, salsa, cumin, chili powder and contents of rice package to skillet, stir well. Bring to a boil, cover and reduce heat. Simmer until water has been absorbed and rice is tender, about 7 minutes.
  • Place rice in a serving dish and top with fish. Serve immediately.

Or grilled and chilled chicken breast. Of course if you do that it stops being a side dish and becomes a main course, but why not? The longer it's chilled the better.

¼ cup diced carrot
1 jicama, peeled and diced
1 (10.5 ounce) can black beans
½ cup lemon juice
1 pinch cayenne pepper, or to taste
1 (3.5 ounce) can sliced jalapeno peppers
¼ cup white vinegar
1 teaspoon sugar
1 teaspoon salt
2 tablespoons olive oil
1 cup white rice
1 ¼ cups chicken broth
1 (2.25 ounce) can sliced black olives
2 green onions, minced
¼ red bell pepper, seeded and diced
¼ green bell pepper, seeded and diced
½ cucumber, seeded and diced
½ bunch chopped fresh parsley
¼ bunch cilantro, chopped
1 teaspoon seasoned salt

Steps:

  • Bring a small saucepan of water to a boil; cook diced carrot in boiling water briefly, about 2 minutes. Drain immediately and plunge into a bowl of ice-cold water; drain.
  • Mix jicama, black beans, lemon juice, and cayenne pepper in a bowl; toss to coat. Cover bowl with plastic wrap. Stir blanched carrots, jalapeno peppers, vinegar, sugar, and salt together in a bowl; cover bowl with plastic wrap. Store both bowls in refrigerator 8 hours to overnight.
  • Heat olive oil in a saucepan over medium heat; cook and stir rice in hot oil until opaque, 5 to 7 minutes. Pour chicken broth over rice; bring to a boil, cover the saucepan, reduce heat to medium-low, and cook until the liquid is absorbed completely, 20 to 25 minutes. Spread cooked rice onto a large platter and cool completely in refrigerator.
  • Stir chilled rice with jicama mixture and carrot mixture in a bowl; add black olives, green onions, red bell pepper, green bell pepper, cucumber, parsley, cilantro, and seasoned salt to the rice mixture and toss to combine.

3/4 cup chopped green pepper
1/2 cup chopped red onion
1 medium carrot, chopped
1 tablespoon canola oil
3 garlic cloves, minced
1 package (16 ounces) frozen corn, thawed
1 can (15 ounces) black beans, rinsed and drained
2 medium plum tomatoes, chopped
1 cup salted peanuts
1/3 cup minced fresh cilantro
2/3 cup olive oil
1/3 cup lemon juice
1/2 to 1-1/2 teaspoons cayenne pepper
1/2 teaspoon ground cumin

Steps:

  • In a large saucepan, bring water and rice to a boil. Reduce heat; cover and simmer for 15 minutes. Remove from the heat. Let stand for 5 minutes or until rice is tender. Rinse rice with cold water and drain. Place in a large bowl. , In a small skillet, saute the green pepper, onion and carrot in oil until crisp-tender. Add garlic; cook 1 minute longer. Add to rice.
