MEXICAN TURKEY BURGERS RECIPE
These are the BEST Mexican Turkey Burgers. Tender, seasoned turkey burgers + crunchy slaw, fresh pico, and a creamy avocado sauce make these perfect for an easy, healthy, and delicious dinner!

Steps:
- Cook patties according to package directions.
- Place coleslaw, cabbage, and cilantro into a medium sized bowl. Set aside.
- In a small bowl, whisk together lime juice, olive oil, and honey.
- Toss together slaw and dressing.
- Season with salt and pepper and serve immediately.*
- Combine all ingredients into a food processor.
- Pulse together until smooth.
- Season with salt, to taste and serve immediately!

MEXICAN TURKEY BURGERS
Inspired by Mexican tortillas, American burgers, and delicious breadcrumb coatings, I created this recipe. The whole family loves it, and whoever gets this recipe in hand passes it on. So I thought it was time to share it with you.

Steps:
- Preheat oven to 450 degrees F (230 degrees C). Coat a medium baking dish with cooking spray.
- Heat the olive oil in a skillet over medium heat, and saute the onion, green pepper, and garlic 5 minutes. Remove from heat, and cool slightly.
- In a small bowl, mix the salsa and 1/2 the corn. In a large bowl, mix the onion mixture with the turkey, taco seasoning, and 2 tablespoons of the salsa mixture. Divide into 6 patties, and press into the breadcrumbs to lightly coat on all sides. Arrange coated patties in the prepared baking dish.
- Bake the patties 10 minutes in the preheated oven. Drain any liquid from the dish, turn patties, and spread with the remaining salsa mixture. Continue baking 10 minutes, to an internal temperature of 165 degrees F (75 degrees C).
- Warm the tortillas in the microwave, about 30 seconds on High. Wrap the cooked turkey patties in the warmed tortillas with sour cream and lettuce. Sprinkle with remaining corn to serve.

I serve this without the roll for a great low-carb meal. If you decide to use a roll, drain the Pico de Gallo before placing on top of the burger to prevent the bun from getting wet. Fresh cilantro is a must for the Pico de Gallo. While you may choose to use a little cooking spray, it is not necessary as the burgers, at first a little sticky, will firm up as they cook.

- In a bowl, mix together the tomatoes, the 1/3 cup chopped onion, 2 of the 4 cloves of minced garlic, serrano chile pepper, lime juice, and cilantro. Stir in salt and pepper to taste, and set aside.
- Place the ground turkey in a bowl. Add the egg, the 1/2 onion, minced, remaining 2 cloves minced garlic, coriander, celery salt, chili powder, cumin, and chopped parsley. Using your hands, work the mixture until all ingredients are evenly blended. Form mixture into 4 patties.
- Heat a large, non-stick skillet for medium-high heat. Cook the turkey burgers for 5 minutes per side, or until no longer pink in the center and juices run clear. Reduce the heat as necessary during cooking. Serve with Pico de Gallo salsa.

- For Pico: Combine all vegetables. Add lime juice, olive oil, salt, pepper, and cayenne, and stir. For best taste, allow to chill for an hour.
- For burgers: Mix all ingredients together except for salt and pepper, and form into six medium patties. Sprinkle freshly ground pepper and salt on both sides, to taste. Grill on medium high for about ten minutes, flipping once. Juice should run clear. For a fresh new take, serve burger bun-less with the pico. Or, serve on bun with monteray jack cheese and pico. Great with grilled pineapple and rice.
- NOTE: make sure the jalepenos are completely seeded, and that the white inner ribs have been removed.
