CLASSIC SOUTHERN MACARONI AND CHEESE

Steps:
- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch ovenproof casserole dish.
- Bring a large pot of salted water to a boil. Add the macaroni and cook until tender (a little more than al dente), about 12 minutes. Drain well in a colander.
- In a large bowl, combine the macaroni, cheese, milk and eggs. Add some salt and pepper. Transfer to the prepared dish.
- Bake until golden brown and bubbly, about 30 minutes. Transfer to a rack to cool slightly before serving.

Steps:
- Preheat oven to 350°F. Melt 3 Tbsp. of the butter in large saucepan on low heat. Add garlic; cook 1 min. or until tender, stirring constantly. Add flour; cook and stir 1 min. Gradually add milk, stirring until well blended; cook until thickened, stirring constantly. Add VELVEETA; cook until melted, stirring frequently. Add the macaroni and ham; mix lightly.
- Pour into 1-1/2-qt. baking dish; sprinkle with the shredded cheese. Set aside. Melt remaining 1 Tbsp. butter; mix with the bread crumbs. Sprinkle over macaroni mixture.
- Bake 20 min. or until heated through.

- Preheat oven to 400 degrees. Set a large pot of salted water to boil and butter an 8-inch square baking dish. In a small bowl, combine tomatoes, olives, and oregano.
- Cook pasta 2 minutes less than package instructions; drain pasta and return to pot. Meanwhile, melt butter in a medium saucepan over medium. Add garlic; cook until fragrant, 1 minute. Add flour and cook, stirring constantly, 1 minute. Whisk in milk and bring to a boil. Reduce heat to medium-low; simmer, whisking constantly, until sauce thickens, 3 minutes. Remove from heat; whisk in 4 ounces feta. Stir in tomato mixture. Season with salt and pepper. Pour mixture over pasta; stir to combine.
- Pour pasta mixture into dish and top with 4 ounces feta. Bake until sauce is bubbling and cheese begins to brown, 20 to 25 minutes.

MEXICAN-STYLE MACARONI AND CHEESE

- Preheat oven to 350 degrees F.
- Make macaroni and cheese according to package directions. Transfer to a medium-size baking dish or casserole dish.
- Sprinkle Mexican seasonings over top of macaroni and cheese. Sprinkle cheese blend over top to cover. Place in oven and bake for 5 minutes, or until cheese is melted.
SOUTHERN STYLE MACARONI AND CHEESE
Very cheesy, very easy and oh so good! This is my family's absolutely favorite mac and cheese. I can't even think about making a different recipe without getting, "what, are you nuts?". You can bake this in the oven or use the crockpot method. Hope you like this as much as we do!

Steps:
- Cook macaroni per package directions using the lower end of the cooking times as you will be cooking it more in the oven.
- Drain macaroni and put into oven proof casserole.
- Add all the ingredients except for the sliced cheddar.
- Mix well.
- Cover macaroni mixture with sliced cheddar.
- Oven cooking: Bake in 350º oven for 25-30 minutes until cheese is melted and casserole is heated through.
- Crockpot cooking: Cook 3-4 hours on low.

- Preheat oven to 350 degrees.
- In a pan cook butter, salt, pepper and flour and stir until smooth.
- Remove from heat add milk, return to heat and bring to a boil.
- Boil 1 minute.
- Remove from heat and add cheese, stir until melted.
- Pour over elbows, sprinkle with breadcrumbs and bake at 350 degrees for 30 minutes.
