SPICY CHEESE MICE
Celebrating Halloween? Then surprise your guests with these little mice-shaped cheese appetizers - perfect for a group.

Steps:
- In medium bowl, mix cheeses with spoon until blended. Place smoked almonds on small plate. For each mouse, shape 2 tablespoons cheese mixture into mouse shape; roll in smoked almonds.
- For tail, insert 1 carrot strip into wide end of each mouse. For ears, insert 2 sliced almonds, pointed side up, into narrow end. Cover with plastic wrap; refrigerate at least 2 hours or until firm.
- Serve cheese mice with pepper jelly and crackers. Store covered in refrigerator.

- Slice the cheese and put in the middle of a plate. Cut the hard boiled eggs in half and put around the cheese, with the narrow part of the egg facing in and egg yolk down. The egg white becomes the shape of the mice. Take the radish slices and put two in each egg white for the ears. So, smaller radishes are best. Place two peppercorns under the radish slices for eyes. Take the chives and cut into about 2-inch pieces and tuck into the other side of the egg white for a tail. Enjoy your mice and cheese!

CHEESE BITES (TOTALLY ADDICTIVE)
Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

Steps:
- Combine cheese, butter, flour, salt, and cayenne in a large bowl: knead into a dough.
- Roll dough into 1 inch balls and place on an un-greased baking sheet.
- If using olives, form each ball around 1 olive.
- If using pecans, press 1 pecan half onto each ball.
- Can bake them right now (see instructions below) or freeze for later.
- Place in trays in freezer for 30 minutes.
- Remove from freezer and place in freezer bags or container.
- Seal and freeze.
- Can bake them straight from freezer.
- Preheat oven to 425°F.
- Place cheese balls 3 inches apart on an un-greased baking sheet.
- Bake 15-17 minutes if frozen, 13-15 minutes if thawed.
MICE
Kids love them. I did growing up -- my mom use to make these around Christmas time, but great for anytime! You can make as many as you want. They are great to look at.

- Line a baking sheet with parchment paper.
- Chop the confectioners' coating into chunks, and place into a microwave-safe bowl. Heat the coating in the microwave oven on High for 30 seconds; then heat again 4 or 5 more times for 10 to 15 seconds each time until the coating is warm (not hot) and melted. Stir well until the chocolate coating is smooth and free of lumps. The coating should be about 95 degrees F (35 degrees C).
- Dry the cherries well with paper towels. Holding each cherry by the stem, dip it into the chocolate coating to just reach the bottom of the stem. Carefully lay the cherry on its side, so the stem sticks out the side. This will be the tail. Before the coating sets up, stick the flat side of an unwrapped chocolate kiss opposite the tail, to make a pointy-nosed face. Pick out two nicely shaped slivers of almond, and insert them between the chocolate kiss and the dipped cherry to make little ears. Use a toothpick to make two small dots of melted coating on the face for eyes; stick two little red candies to the coating dots. Repeat with the rest of the cherries. Allow the coating to set until firm and cool, about 30 minutes.

- Slice goat cheese into one inch pieces and place in a single layer on a large platter. Sprinkle olive oil, sun-dried tomatoes, black olives, basil and rosemary over the cheese.
- Using toothpicks, insert the garlic cloves into the cheese throughout the mixture.
- Allow the mixture to marinate 6 hours, or overnight, in the refrigerator. Remove the toothpicks, and serve with sliced French bread.

- Slice each block of cheddar cheese into twenty 1/4-in. slices. Cut each block of cream cheese into 18 slices. Create four 6-in.-long blocks of stacked cheeses, sandwiching 9 cream cheese slices between 10 cheddar slices for each stack.
