LOGA'S MICROWAVE CHICKEN
Microwave adapted version of recipe given to me by old friend from Ceylon. Can be baked in oven too.

Steps:
- In a large, round microwave safe casserole dish combine the ketchup, curry powder and cayenne powder and mix together. Add chicken pieces and turn to coat. Arrange chicken legs in a fan, with the thin part of the legs in the center of the dish. Cover and cook in the microwave on high for 12 to 15 minutes or until chicken is cooked through and juices run clear.

- Arrange chicken, thickest parts to outside edges in glass pie plate, 10x1 1/2 or 9x1 1/4 inches (sides of chicken will touch).
- Cover dish with plastic wrap, folding back one corner or edge 1/4 inch to vent steam. Microwave on Medium (50%) 14 to 16 minutes or until juice of chicken is no longer pink when center of thickest pieces are cut and temperature reaches 170°. Let stand 5 minutes.
- Cool slightly; cut into desired size of pieces.

- In a microwave-safe bowl, combine the tomato sauce, Italian seasoning and garlic powder. Cover and microwave on high for 2 minutes; stir. Cook at 50% power for 3-5 minutes or until mixture simmers, stirring once; set aside. , In a bowl, combine the crumbs, Parmesan cheese and parsley. Dip the chicken into egg, then roll in the crumb mixture. Place in a lightly greased shallow 3-qt. microwave-safe dish. Cover and microwave on high for 10-12 minutes, rotating a half turn after 5 minutes. , Pour tomato mixture over chicken; sprinkle with mozzarella. Cook, uncovered, at 50% power for 3-5 minutes or until meat juices run clear.

- To make the BBQ Sauce.
- In a medium microwave safe bowl add everything except the chicken.
- Cook, covered on 100% power 8-10 minutes, until vegetables are tender, stirring twice:cover and set aside.
- Cooking the chicken.
- In a 12x8-inch microwave-safe baking dish, place chicken in a single layer with the thicker pieces on the ends.
- Cook covered, on 100% power for 10 minutes, rearranging once.
- Discard drippings.
- Spoon BBQ sauce over the chicken pieces.
- Cook on 100% power 6-8 minutes, until chicken juices run clear, rearranging once.

- Take whole chicken and make diagonal slits in breast and thighs.
- Rub chicken with olive oil followed by salt and pepper ensuring slits are also prepared with spice.
- Place in a glass casserole dish suitable for microwave.
- I use a 900 Watt combination microwave oven, program grill and microwave for 30 - 40 minutes depending on size of chicken on full power.
- Turn chicken every 10 minutes to ensure even grilling.
