MEDITERRANEAN-STYLE TURMERIC LEMON CHICKEN SOUP



Mediterranean-Style Turmeric Lemon Chicken Soup image

This is the chicken soup you'll be making on repeat! Prepared Mediterranean-style with loads with fresh lemon juice, veggies, herbs, and warm spices, this turmeric lemon chicken soup is nutritious and comforting in the best way. Make it your own and add different veggies or even a handful of chickpeas for some bulk. See suggestions and notes within the post.

Number Of Ingredients 13

1 pound boneless chicken breast
1 yellow onion, (quartered)
4 large garlic cloves, (divided (2 whole, 2 minced))
Extra virgin olive oil
2 carrots, (peeled and thinly sliced into rounds)
1 teaspoon coriander
1 teaspoon Aleppo Pepper
½ teaspoon ground ginger
½ teaspoon turmeric
2 cups baby spinach
¼ cup chopped fresh dill
½ cup chopped fresh parsley
Juice and zest of 2 lemons

Steps:

  • In a large Dutch oven or pot, combine the chicken with 6 cups of water. Season generously with salt and pepper. Add the onion and 2 whole garlic cloves. Bring to a boil over medium-high heat, then lower the heat and let simmer gently for 15 to 20 minutes or until the chicken is cooked.
  • When ready, remove the chicken from the pot and carefully shred it using two forks. Strain the broth using a mesh strainer over a large bowl. Discard the onion and garlic. Set the broth in its bowl aside for now.
  • Carefully wipe the pot and return to the heat. Add a couple tablespoons extra virgin olive oil and warm over medium heat. Add the minced garlic, carrots, and spices.
  • Return the shredded chicken to the pot. Stir to combine. Season with kosher salt.
  • Add the cooking broth and bring to a boil, then lower the heat to medium-low, and cover partly. Cook for another 15 to 20 minutes (the carrots should be tender and cooked through).
  • Stir in the spinach, herbs, and lemon juice and zest. Transfer to serving bowls. Enjoy!

1 1/2 lb chicken legs
1 medium onion, halved
1 small carrot, peeled and halved
3 sprig(s) flat-leafed parsley, tied together
1 bay leaf
6 peppercorns, whole black
sea salt, to taste
1/2 c medium grained rice
2 Tbsp canola oil
1 Tbsp butter
1 tsp tomato paste
1 tsp red pepper paste*
1 Tbsp flour
1 tsp mint, dried
1/2 c chickpeas, canned or cooked
lemon wedges for garnish

Steps:

  • 1. In a large pot, bring 5 cups water to boil. Add chicken, onion, carrot, parsley, bay leaf, peppercorns and salt to taste. Reduce heat, cover, simmer until chicken is tender - about 45 minutes.
  • 2. Remove chicken and let cool. Remove skin and bones and tear into bite-sized pieces. Strain and reserve cooking liquid.
  • 3. In a medium pot, boil 1 cup water. Add rice, and cook according to package directions. Add 4 cups of reserved chicken stock (add water to measure 4 cups) and the chicken. Cook for an additional 4 minutes.
  • 4. Meanwhile, heat oil and butter in small fry pan. Stir in tomato and red pepper pastes, flour and mint. Mix well, pour over soup, stirring it in. Add chickpeas and cook until warmed through. Serve with lemon wedges.

2 cups diced cooked turkey
2 cups cooked long grain rice
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/4 teaspoon pepper
6 cups chicken broth, divided
2 tablespoons cornstarch
1/4 to 1/3 cup lemon juice
1/4 to 1/2 cup minced fresh cilantro

Steps:

  • In a large saucepan, combine first 4 ingredients and 5-1/2 cups broth. Bring to a boil; cook 3 minutes. , In a small bowl, mix cornstarch and remaining broth until smooth; gradually stir into soup. Bring to a boil; cook and stir until thickened, 1-2 minutes. Remove from heat; stir in lemon juice and cilantro.

MEDITERRANEAN LEMON-RICE SOUP



Mediterranean Lemon-Rice Soup image

Known as Avgolemono in Greece and Aarshe Saak in the Middle East, this tangy velvety soup is a staple at many meals. Aarshe Saak typically has small meatballs in it, while Avgolemono traditionally has rice and no meat. However, there are many regional and personal variations, and this is mine. This version I came up with has has chicken and spinach/mushrooms to make it more filling. Feel free to omit these ingredients or experiment! Note: I always "eyeball" quantities when I cook, so these amounts may not be perfectly exact- always adjust quantities to taste :)

1 large yellow onion
1 -2 garlic clove, minced
2 -3 tablespoons vegetable oil
1 -2 tablespoon turmeric (or to taste)
1 cup cooked chicken, diced finely (approximately)
5 -6 cups water (preferably broth) or 5 -6 cups chicken broth (preferably broth)
1/2 cup rice (short-grain is best)
couple handfuls spinach leaves, washed and chopped
1 cup mushroom, chopped
1/4-1/3 cup cornstarch (amount may vary)
2 lemons, juice of
2 -4 eggs, beaten
salt, pepper to taste

Steps:

  • Heat the oil in a saucepan. Chop the onion finely, and add it along with the garlic. When the onions are translucent, add the turmeric (it will look like a lot, but have no fear!). Add the chicken, and stir around until well blended. Add the water or chicken stock.
  • Bring to a boil, and add the rice. Lower heat, cover and simmer for about 20 minutes, stirring very gently once or twice.
  • Remove cover, add the chopped vegetables, cook for about 5 minutes longer. Dissolve the cornstarch in some cold water (to prevent clumps), and slowly add it to the soup, mixing well. Add the lemon. Heat for another 5-10 minutes on medium heat-- if it is too thin, you can add some more cornstarch.
  • Now for the fun part! Remove the saucepan from heat. In a bowl, beat the eggs together very well. SLOWLY pour the eggs into the soup, whisking very quickly with a fork (if you are too slow stirring or dump the eggs in too fast, you will end up with something akin to egg-drop soup!). After all the eggs are in the soup, continue whisking for a few minutes. If you get it right the first time, the soup should be very yellow and have a velvety texture.
  • Season with salt/pepper, taste and adjust the lemon juice or water amounts if needed. Garnish with mint, dill or lemon wedges (if desired) and serve!

2 quarts turkey stock or chicken stock
4 celery stalks, with leaves, thinly sliced
2 leeks, white part only, cleaned and sliced
4 garlic cloves, green shoots removed, thinly sliced
Salt
freshly ground pepper to taste
Juice of 1 to 2 lemons, to taste
1/2 pound zucchini, sliced
2 cups shredded leftover turkey (optional)
1/2 cup basmati rice, cooked
1/4 cup chopped cilantro

Steps:

  • Bring the stock to a simmer, and add the celery, leeks, garlic, salt, pepper and lemon juice. Simmer gently for 30 minutes. Add the zucchini and leftover turkey, if you have it, and simmer for another 10 to 15 minutes. Stir in the rice and the cilantro. Taste and adjust seasonings, and serve.
