The Runner-Up recipe for 1994 in the San Francisco Chronicle, by Shirley Sarvis. As the pork braises, the sauce reduces and will look curdled. Not to worry. This is supposed to happen, and is important to the flavor of the finished dish.

1 (3 lb) boneless pork butt (shoulder)
salt and pepper
1 leaf fresh rosemary (from four 3-inch sprigs) or 1 1/2 teaspoons dried rosemary
2 1/2 cups milk
8 -10 large garlic cloves, peeled and finely chopped
8 -10 fresh sage leaves

Steps:

  • Preheat oven to 350 degrees. Trim excess fat from pork and tie the roast, if necessary. Wipe the meat dry. Season with salt and pepper and rub with the dried rosemary, if using.
  • Place the roast in a large, oiled Dutch oven, cover, and bake for 2 hours.
  • Remove the meat and skim off the fat from the pan juices. Return the roast to the pan. Pour 1/2 cup of the milk into the pan. Add the garlic, sage and fresh rosemary (if not using dried). Cover and braise until the meat is very tender, about 1 hour, turning once or twice (see note). Check occasionally, and add a little more milk, if necessary, to keep 1/4 inch of liquid in the pan.
  • Transfer the roast to a warm platter. Add any remaining milk to the pan and cook over high heat, stirring, until the mixture turns light brown and thickens to the consistency of heavy cream (you should have about 1 1/2 cups sauce). Season to taste with salt and pepper.
  • Carve the roast and spoon some of the cooking juices over each serving.

2 1/2-3 lbs boneless beef chuck shoulder pot roast
1/4 cup all-purpose flour
2 tablespoons olive oil
1/4 cup balsamic vinegar
2 small onions, halved, sliced
4 medium shallots, sliced
1/4 cup chopped pitted dates
1/2 teaspoon salt
1/4-1/2 teaspoon pepper

Steps:

  • Heat oven to 325°F Lightly coat beef pot roast with flour. Heat oil in Dutch oven over medium heat until hot. Brown pot roast; remove.
  • Add 1-1/2 cups water and vinegar to Dutch oven; cook and stir until brown bits attached to pan are dissolved. Return pot roast.
  • Add onions, shallots, dates, salt and pepper; bring to a boil. Cover tightly and cook in 325°F oven 2 to 2-1/2 hours or until pot roast is fork-tender. Remove pot roast; keep warm.
  • Cook liquid and vegetables over medium-high heat to desired consistency. Carve pot roast. Serve with sauce.

Great for casual entertaining, when you fancy a warming beef stew but with some more vibrant flavours. Can be frozen for up to 1 month.

3 tablespoons olive oil
6 garlic cloves, thinly sliced
1 tablespoon fresh gingerroot, peeled and shredded
6 scallions, sliced
1 red chili pepper, deseeded and thinly sliced (use more if you lite it spicy)
3 lbs stewing beef, cut into large pieces
2 tablespoons all-purpose flour, well seasoned with salt and pepper
salt and pepper
1 teaspoon Chinese five spice powder
2 star anise (optional)
2 teaspoons light brown sugar (or use whatever you've got)
3 tablespoons Chinese wine or 3 tablespoons dry sherry
3 tablespoons dark soy sauce, plus more to serve
2 cups beef broth

Steps:

  • Heat 2 tbsp of the oil in a large, shallow casserole.
  • Fry the garlic, ginger, scallions and chili for 3 mins until soft and fragrant. Tip onto a plate. Toss the beef in the flour, add 1 tbsp more oil to the pan, then brown the meat in batches, adding more oil if you need to. It should take about 5 mins to brown each batch properly.
  • Add the five-spice and star anise (if using) to the pan, tip in the gingery mix, then fry for 1 min until the spices are fragrant.
  • Add the sugar, then the beef and stir until combined. Keep the heat high, then splash in the wine or sherry, scraping up any meaty bits. Heat oven to 300°F
  • Pour in the soy and broth (it won't cover the meat completely), bring to a simmer, then tightly cover, transfer to the oven and cook for 1½-2 hrs, stirring the meat halfway through.
  • The meat should be very soft, and any sinewy bits should have melted away. Season with more soy.
  • This can now be chilled and frozen for up to 1 month.
  • Serve with steamed bok choy and white rice.

3 tablespoons all-purpose flour
1 1/4 teaspoons salt, divided
1/2 teaspoon fresh ground black pepper, divided
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 (3 lb) boneless chuck roast, trimmed
4 ounces pancetta, cubed (approx 1/4 inch)
3 garlic cloves, sliced
1 tablespoon canola oil
1 tablespoon butter
1 1/2 cups onions, chopped
2 cups chianti wine
1 1/4 cups fat free low-sodium beef broth
3 sprigs fresh basil
3 sprigs fresh marjoram
1 bay leaf
4 carrots, peeled and diagonally cut into (3/8-inch-thick)
6 parsnips, peeled and diagonally cut into (3/8-inch-thick)
1/4 cup water
1 tablespoon cornstarch

Steps:

  • Preheat oven to 300°.
  • Combine flour, 1/4 teaspoon salt, 1/4 teaspoon pepper, cinnamon, and cloves, stirring well. Make several small slits on outside of roast with a paring knife; stuff with pancetta and garlic slices. Roll roast; secure at 1-inch intervals with twine. Sprinkle roast with remaining 1 teaspoon salt and 1/4 teaspoon pepper. Coat surface of roast with flour mixture, patting with your hands so it adheres.
  • Heat oil and butter in a large Dutch oven over medium heat. Add roast to pan; cook 15 minutes, turning to brown on all sides. Add onion to pan around roast; cook 5 minutes or until browned. Stir in wine and broth. Place basil, marjoram, and bay leaf on a double layer of cheesecloth. Gather edges of cloth together; tie securely. Add cheesecloth bag to pan; bring to a boil. Cover and bake at 300° for 2 1/2 hours, turning roast every 45 minutes. Nestle carrots and parsnips in pan; cook 1 hour or until roast is tender enough to cut with a spoon.
  • Transfer roast and vegetables to a platter. Discard twine; keep beef warm. Strain wine mixture through a sieve into a large bowl; discard cheesecloth bag. Return wine mixture to pan; bring to a boil. Cook 10 minutes. Combine 1/4 cup water and cornstarch in small bowl, stirring with a whisk. Add cornstarch mixture to pan, and bring to a boil. Cook for 1 minute, stirring constantly. Remove from heat. Taste and adjust seasoning, if desired.

3-4 tbsp olive oil
6 garlic cloves, thinly sliced
good thumb-size piece fresh root ginger, peeled and shredded
1 bunch spring onions, sliced
1 red chilli, deseeded and thinly sliced
1 ½kg braising beef, cut into large pieces (we used ox cheek)
2 tbsp plain flour, well seasoned
1 tsp Chinese five-spice powder
2 star anise (optional)
2 tsp light muscovado sugar (or use whatever you've got)
3 tbsp Chinese cooking wine or dry sherry
3 tbsp dark soy sauce, plus more to serve
500ml beef stock (we used Knorr Touch of Taste)
steamed bok choi and steamed basmati rice, to serve

Steps:

  • Heat 2 tbsp of the oil in a large, shallow casserole. Fry the garlic, ginger, onions and chilli for 3 mins until soft and fragrant. Tip onto a plate. Toss the beef in the flour, add 1 tbsp more oil to the pan, then brown the meat in batches, adding the final tbsp oil if you need to. It should take about 5 mins to brown each batch properly.
  • Add the five-spice and star anise (if using) to the pan, tip in the gingery mix, then fry for 1 min until the spices are fragrant. Add the sugar, then the beef and stir until combined. Keep the heat high, then splash in the wine or sherry, scraping up any meaty bits. Heat oven to 150C/fan 130C/gas 2.
  • Pour in the soy and stock (it won't cover the meat completely), bring to a simmer, then tightly cover, transfer to the oven and cook for 1½-2 hrs, stirring the meat halfway through. The meat should be very soft, and any sinewy bits should have melted away. Season with more soy. This can now be chilled and frozen for up to 1 month.
  • Nestle the cooked bok choi into the pan, then bring to the table with the basmati rice straight away and tuck in.
