Serve this over a mixed green salad with tomatoes, avocado and grape tomatoes. This is a great dressing to serve with at a southwestern cookout. The recipe is from Sabroso summer 2006 edition.

  • Whisk to blend; add sugar and salt to taste.
  • Serve over crisp, chilled greens.

12 dried New Mexico red chile pods
3 cups boiling water
2 cups honey
2 tablespoons red chile powder
2 tablespoons cumin

Steps:

  • Deseed the chiles, and place in a bowl. Reconstitute them by pouring on 3 cups boiling water and allowing them to soak about 5 minutes. Drain the chiles and reserve 1-cup of the liquid.
  • Process the chiles with the reserved water in a blender or food processor until fine. Strain and transfer pulp into a mixing bowl. Add the honey, chile powder, and cumin and mix well. Refrigerate for 1 hour to blend flavors.
  • This glaze is excellent on grilled fish, roasted or grilled chicken, or roast pork.

8 dried tomatoes (oil-free)
3/4 cup hot water
1 garlic clove, peeled and coarsely chopped
1/4 cup extra virgin olive oil or 1/4 cup apple juice
2 tablespoons orange juice concentrate
3 -4 tablespoons apple cider vinegar
1 teaspoon tamari or 1 teaspoon reduced sodium soy sauce
1 teaspoon red chili powder
1/4 teaspoon black pepper
1/4 teaspoon salt (optional)

Steps:

  • Soak the dried tomatoes in the hot water for 20 to 30 minutes, or until they become soft and plump.
  • With a slotted spoon, transfer the tomatoes to a food processor and add the garlic; chop finely.
  • Pour tomato-soaking water into the processor and blend well.
  • Add the olive oil or apple juice, orange juice concentrate, 3 tablespoons vinegar, soy sauce, chile powder, pepper and salt if using.
  • Process until the dressing is creamy.
  • Taste and add another tablespoon vinegar if needed.
  • Pour into a jar, cover and refrigerate until ready to use.

1 yellow onion, chopped
2 (14.5 ounce) cans stewed tomatoes
1 (15 ounce) can tomato sauce
1 (15 ounce) can light red kidney beans, drained and rinsed
1 (15 ounce) can dark red kidney beans, drained and rinsed
1 (8 ounce) jar mild salsa
¼ cup chili seasoning mix
½ teaspoon garlic powder

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef, sausage, and onion in the hot skillet until beef and sausage are completely browned, 7 to 10 minutes; drain and discard grease.
  • Stir stewed tomatoes, tomato sauce, light red kidney beans, dark red kidney beans, mild salsa, chili seasoning mix, and garlic powder into the beef mixture; bring to a boil, reduce heat to medium-low, and cook at a simmer until the flavors meld, 90 minutes to 2 hours.

4 dried ancho chiles
4 dried New Mexico chiles
3 cups chicken stock
½ white onion, diced
3 cloves garlic, minced

Steps:

  • Make a slit in each of the ancho chiles and New Mexico chiles with a sharp knife, and remove the seeds and stem. Place the chiles in a large saucepan, and add the chicken stock, onion, and garlic. Bring the mixture to a boil over high heat, then reduce heat to medium, and simmer until the chiles have softened, about 15 minutes.
  • Pour the chile mixture into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the mixture moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the chile mixture right in the cooking pot.
