These easy Almond Joy Cookies take just four ingredients and don't even require a mixer! No beating, no chilling, just mix 'em up and throw 'em in the oven EASY! You're going to love these ooey gooey fabulous cookies!

Ingredients

1 14 oz bag sweetened coconut flakes
2 cups semi-sweet chocolate chips
2/3 cup chopped lightly salted almonds (I used Blue Diamond Low Sodium Lightly Salted - light blue bag)
1 14 oz can sweetened condensed milk (regular or fat-free works)

Steps:

Preheat the oven to 325F.
Line a large baking sheet with parchment paper and set aside.
In a large bowl combine coconut, chocolate chips, almonds, and sweetened condensed milk.
Stir until combined.
Scoop out dough with a cookie scoop onto prepared baking sheet.
Moisten the tips of your fingers with water and shape into discs. Pat the tops flat.
Bake cookies for 12 to 14 minutes or until tips of coconut are just starting to turn golden brown.
Let cool on baking sheet.
Store cookies in an airtight container.

This is a delicious change from the ordinary chocolate chip cookie! This recipe has been slightly modified from the original recipe which I found in "Home for the Holidays" from the Company's Coming series.

Ingredients

1 1/2 cups margarine
2 cups brown sugar, packed
1 cup white sugar
4 large eggs
2 tablespoons almond flavoring
4 2/3 cups flour
2 teaspoons baking soda
2 teaspoons salt
21 ounces milk chocolate chips
1 cup slivered almonds, lightly toasted

Steps:

Cream margarine & both sugars in large bowl.
Beat in eggs, one at a time.
Add almond flavouring.
Stir flour, baking soda & salt into sugar mixture.
Mix well.
Add chocolate chips & almonds.
Drop by teaspoon onto greased cookie sheet.
Bake for 10-12 minutes, until golden brown.

1/2 cup butter, softened
1/2 cup packed dark brown sugar
1/3 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup milk chocolate chips
1 cup sliced almonds

Steps:

In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine the flour, salt and baking soda; gradually add to the creamed mixture and mix well. Stir in chocolate chips and almonds. , Roll into 1-in. balls. Place 2 in. apart on greased baking sheets. Bake at 375° for 9-11 minutes or until edges are firm. Remove to wire racks to cool.

Combine flour, cocoa, baking powder, baking soda and salt; gradually add to butter mixture, beating to form smooth dough. Stir in small chocolate chips. If necessary, refrigerate dough about 1 hour or until firm enough to handle.
Heat oven to 350°F. Shape dough into 1-1/8-inch balls; roll in sugar. Place about 2 inches apart on ungreased cookie sheet. Place three slivered almonds on top of each ball; press slightly.
Bake 9 to 10 minutes or until set. Cool slightly. Remove from cookie sheet to wire rack. Cool completely.
