These cheesy Crab Melts are an old-fashioned favorite with a creamy crab mixture and melted cheese on top of an English muffin.

1/3 cup mayonnaise
1/4 cup very finely chopped celery
2 tablespoons finely chopped onion
1/2 teaspoon garlic powder
1/2 teaspoon TABASCO sauce
1 (6-ounce) can lump crab
2/3 cup shredded cheddar cheese
chopped fresh parsley
4 English muffins, (split)

Steps:

  • Preheat broiler.
  • In a medium bowl, stir together mayonnaise, celery, onion, garlic powder, and TABASCO sauce.
  • Fold in crab meat and cheddar cheese.
  • Spread mixture evenly on English muffin halves. Sprinkle with fresh parsley.
  • Broil until cheese is melted and mixture is bubbly.

3 tablespoons mayonnaise
5 teaspoons finely chopped celery

4 thin slices cheddar cheese
4 thin slices Monterey Jack cheese
Paprika

Steps:

  • Preheat broiler. In a small bowl, mix crab, mayonnaise, celery and green onion until blended. Place muffin halves on an ungreased baking sheet., Broil 4-6 in. from heat until toasted. Spread with crab mixture. Top with tomato and cheeses; sprinkle with paprika. Broil until bubbly.

1/2 cup diced red bell pepper
1/2 cup chopped cooked artichoke heart
2/3 cup sliced green onion, divided
1/4 cup mayonnaise
1/4 cup sour cream
1 teaspoon grated lemon zest
4 slices sourdough bread or 4 slices French bread, toasted
1 1/2 cups sharp cheddar cheese, sliced

Steps:

  • In medium bowl, combine crab, artichoke hearts, bell pepper, all but 3 tbsp green onion, mayonnaise, sour cream, and lemon zest; mix well.
  • Spread over bread slices; arrange cheese slices over crab mixture to cover.
  • Place sandwiches on baking sheet. Place under broiler until cheese softens, about 2 minutes.
  • Sprinkle with remaining 2 tbsp green onion.

1 1/2 cups fresh lump crabmeat
2 hard-boiled eggs, chopped
1 tablespoon lemon juice
1/3 cup mayonnaise
1/3 cup chili sauce
4 mini hamburger buns
2 Cheddar or Swiss cheese slices, cut to fit
chopped parsley for garnish

Steps:

  • Combine crabmeat with remaining ingredients except Cheddar cheese. Spread on split hamburger buns; place on broiler pan. Broil 5 inches from heat 6-7 minutes. Cover with cheese slices and return to oven until cheese is melted. Top with chopped parsley and serve while hot.

One of my mom's recipes I've doctored up a bit. A favorite since childhood! For a healthy version you can make the following substitutions: light ranch dressing for mayonnaise; mozzarella for cheddar cheese; sour dough for croissants

1 lb imitation crabmeat, crumbled
1/3 cup mayonnaise
2 green onions, minced
1 medium garlic clove, finely minced
1/2 cup medium sharp cheddar, shredded
1/8 teaspoon pepper (to taste)
1/2 cup medium sharp cheddar, sliced
4 croissants

Steps:

  • Pre-heat oven to 400 degrees.
  • Combine crab meat, mayo, green onion, garlic, shredded cheddar and pepper in a medium bowl.
  • On cookie sheet, lay croissants out open faced. Spread crab mixture over bottom half and lay cheese slices over top half. Bake in oven until browned. About 15 minutes.
  • I serve with a light green salad.

10 slices white sandwich bread, quartered
12 slices honey ham, chopped
1 ½ cups shredded Swiss cheese
2 tablespoons spicy brown mustard
2 tablespoons mayonnaise
20 dill pickle slices
20 toothpicks

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Divide quartered bread slices evenly between 2 large baking sheets .
  • Combine ham, Swiss cheese, mustard, and mayonnaise in a large bowl and mix well. Place 1 tablespoon of mixture on top of each piece of bread on 1 of the baking sheets.
  • Bake topped bread in the preheated oven for 4 minutes. Add baking sheet with plain bread to the oven and continue baking 3 minutes more.
  • Remove both baking sheets from the oven. Place a dill pickle slice on each topped bread slice; cover with a piece of plain toasted bread. Secure each mini sandwich with a toothpick.
