Honey-Mustard Turkey Burgers image

Burgers made with ground turkey are a lean alternative to beef burgers, providing you choose turkey ground from the breast. Regular ground turkey, which is a mixture of light and dark meat and some skin, contains almost as much fat as lean ground beef. A honey-mustard mixture keeps these low-fat patties moist and succulent.

¼ cup coarse-grained mustard
2 tablespoons honey
1 pound ground turkey breast
¼ teaspoon salt
¼ teaspoon freshly ground pepper
2 teaspoons canola oil
4 whole-wheat hamburger rolls, split and toasted
Lettuce, tomato slices and red onion slices, for garnish

Steps:

  • Prepare a grill.
  • Whisk mustard and honey in a small bowl until smooth.
  • Combine turkey, 3 tablespoons of the mustard mixture, salt and pepper in a bowl; mix well. Form into four 1-inch-thick burgers.
  • Lightly brush the burgers on both sides with oil. Grill until no pink remains in center, 5 to 7 minutes per side. Brush the burgers with the remaining mustard mixture. Serve on rolls with lettuce, tomato and onion slices.

2 slices white sandwich bread (about 1 ounce each)
1 pound (93 percent lean) ground turkey
2 ounces cheddar cheese, coarsely grated (about 1/2 cup)
1/2 small onion, coarsely grated
Coarse salt and freshly ground pepper
1 teaspoon olive oil
12 party-size rolls
Lettuce, sliced tomatoes, ketchup, and mustard, for serving (optional)

Steps:

  • In a food processor, pulse bread until fine crumbs form. Transfer to a medium bowl; add turkey, cheese, and onion. Season with salt and pepper, and mix gently just until combined. Form twelve 2-inch patties (about 3 tablespoons each).
  • In a large nonstick skillet, heat oil over medium heat. Cook patties until browned and cooked through, about 5 minutes per side. Serve on rolls with lettuce, tomatoes, ketchup, and mustard, if desired.

Memorial day is just around the corner and for many of us this means family get-togethers. It always makes me very happy to see families spend time in their backyards to celebrate with neighbors and loved ones. Planning the menu is very important, it's also important to think about the kids of the house. It's always a good idea to have chopped fruits and a pasta salad, but as mothers we're always thinking of what type of meat our kids will eat without a problem. In my experience, burgers are always a great success. However, I've noticed that regular burgers are just too big for kids, so I thought preparing mini burgers might be a better idea. Turkey meat and honey mustard made a great combination. I'm sure kids and adults will love it!

1 lb ground turkey
1/4 teaspoon salt
1/4 teaspoon ground pepper
2 tablespoons honey mustard
1/3 teaspoon finely chopped white onion
1 package butter rolls or mini hamburger buns
Tomato slices, to taste
Lettuce, to taste
Mayonnaise, to taste
Ketchup, to taste

Steps:

  • Preheat the oven to 375° F.
  • Mix the meat, salt, pepper, mustard and onion in a large bowl.
  • Create 8 mini burgers then bake for 20-25 minutes or until the meat is cooked completely. Flip half way through the cooking time.
  • Remove from the oven and let sit for 5 minutes.
  • Place the rolls in a baking dish and bake for 5-6 minutes until they're browned.
  • Cut them in half, and then add mayo, ketchup, lettuce, tomato and the burger. Serve immediately.

¼ cup minced red onion
1 tablespoon Dijon mustard
1 teaspoon coarse salt
1 tablespoon olive oil, or as needed
4 whole wheat hamburger buns
1 cup baby arugula
1 avocado - peeled, pitted, and sliced
4 slices green bell pepper
¼ cup grated Parmesan cheese

Steps:

  • Mix ground turkey, minced red onion, Dijon mustard, and coarse salt in a bowl; form into 4 patties and refrigerate 30 minutes.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Drizzle olive oil over the burgers.
  • Cook burgers on the preheated grill until no longer pink in the center and the juices run clear, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Serve on whole wheat hamburger buns topped with baby arugula, avocado, green bell pepper, and Parmesan cheese.
