Chow Mein Hotdish, also known as Minnesota Hotdish or Chow Mein Casserole is classic midwestern casserole comfort! This ground beef and rice casserole with creamy soup and a crunchy chow mein noodle topping, is super easy to throw together or can be made ahead and frozen!

3 lbs ground beef (* I use lean ground beef)
1.5 cups chopped celery
1/2 cup water
2 whole medium onions
2 cups cooked rice (* I used brown instant rice)
10 ounce - can of cream of tomato soup/condensed tomato soup
10 ounce - can of cream of mushroom soup
1/2 -14 oz pkg dry (crispy) chow mein noodles
3 tbsp soy sauce
dry (crispy) chow mein noodles
additional soya sauce
green onions, chopped ((optional))

Steps:

  • Preheat oven to 350 degrees F/ 175 degrees C and spray the inside of a large casserole dish with non-stick cooking spray.
  • Brown ground beef in large skillet with chopped onion over medium- high heat.
  • Cook celery in 1/2 cup water in microwave (covered) for 4- 5 minutes until soft. Drain off remaining water.
  • Add celery, tomato soup, mushroom soup and rice to ground beef.
  • Combine ground beef mixture with chow mein noodles (dry) into prepared casserole dish and sprinkle on soya sauce.
  • Bake in oven for 20 minutes. Serve warm.

Minnesota-Style Chow Mein image

If you live in the Midwest, specifically Minnesota, you've probably eaten what we recognize as chow mein. MN chow mein can be traced back as early as the 1920s; adapted to fit the American palate. Actual Chinese chow mein is a lot closer to what we know as lo mein; stir fried noodles with meat and vegetables. Our version of chow mein consists of a brown slurry of ground pork and celery served over rice, topped with crispy fried chow mein noodles. Additions to the chow mein can include chicken, mushrooms, shrimp, and a variety of vegetables. You can find this particular style of chow mein on just about every Chinese American menu. You won't find our indigenous version of chow mein in China.

1 lb ground pork
1 bunch celery (chopped 1/2" thick)
1/2 medium onion (diced)
8 oz mushrooms (thinly sliced)
1 cup water
1 cup cold water
3 tbsp cornstarch
2 tbsp light soy sauce
1 tbsp dark soy sauce
2 tsp beef bouillon
1 tsp molasses
1/2 tsp black pepper
white rice (cooked)
chow mein noodles

Steps:

  • Brown the ground pork in a large sauté pan over medium high heat.
  • Add the celery, onions, and mushrooms. Continue cooking for 5 minutes.
  • Pour in 1 cup of water. Cover. Reduce the heat to medium. Simmer for 5 minutes.
  • Mix together the cold water, cornstarch, soy sauces, molasses, and beef bouillon.
  • Pour the slurry in the chow mein.
  • Simmer for 2 minutes until thickened.

1/4 cup oyster sauce
1 tablespoon soy sauce
3 cloves garlic, minced
2 teaspoons freshly grated ginger
1 teaspoon Sriracha
1 (16-ounce) package Hong Kong-style pan-fried noodles
Kosher salt and freshly ground black pepper, to taste
2 tablespoons canola oil
1 (3.5-ounce) package shiitake mushrooms
4 baby bok choy, coarsely chopped
1 cup mung bean sprouts, rinsed and drained

Steps:

  • In a small bowl, whisk together oyster sauce, soy sauce, garlic, ginger and Sriracha; set aside. Heat 1 tablespoon canola oil in a large skillet or wok over medium high heat. Add noodles and cook, stirring constantly, until golden brown and crispy, about 3-4 minutes; set aside. Heat remaining 1 tablespoon canola oil in the skillet. Add mushrooms, and cook, stirring often, until tender, about 3-4 minutes. Stir in bok choy until just wilted, about 1 minute. Stir in noodles and oyster sauce mixture until well combined, about 2 minutes. Stir in bean sprouts. Serve immediately.

1 cup sliced mushrooms (or 1 can)
3/4 cup biased cut celery
1/2 cup sliced water chestnuts
2 tablespoons oil
2 cups cooked chicken strips
1 (16 ounce) can bean sprouts, drained
1 (14 1/2 ounce) can chicken broth
1 tablespoon water
1 tablespoon cornstarch
salt
white pepper
1 dash Accent seasoning (msg)

Steps:

  • Cook vegetables in oil- until tender.
  • Add chicken and bean sprouts.
  • Add the broth- bring to slight boil.
  • Add salt, pepper and Accent to taste.
  • Make a mixture of the cornstarch and water.
  • Add this mixture to other ingredients for thickening.
  • Serve over rice or chow mein noodles.
