- Bring sugar and water to a boil in a small saucepan; cook until sugar dissolves. Let cool. Meanwhile, prepare an ice-water bath. Bring a small pot of water to a boil. Add mint; cook until vibrant green, about 30 seconds. Remove from water, and transfer to ice-water bath. Drain; squeeze out excess water. Puree mint and sugar syrup in a blender until smooth. Let stand for 15 minutes. Strain; discard solids. Refrigerate until cool.
FRESH VANILLA MINT ICE CREAM
This homemade vanilla mint ice cream is naturally flavored and infused with torn mint leaves and whole vanilla beans. A delicious, creamy, and refreshing treat for the summer months!

- Combine the milk and heavy cream in a medium saucepan. Tear the mint leaves into small pieces (you want to release as much oil from the leaves as possible to infuse maximum flavor), and add to the milk and cream mixture. Place over medium-low heat and heat until just steaming. Remove from the heat, cover with a lid, and allow the fresh mint to infuse in the milk and cream mixture for at least one hour.
- Strain the mint milk mixture through a fine-meshed sieve into a medium bowl. Press the mint leaves with the back of a wooden spoon to release as much oil as possible (the cream milk mixture might be light green in color, don't worry!).
- In a separate large mixing bowl, whisk together the egg yolks and sugar until smooth and pale yellow in color.
- Transfer the strained milk mixture back into the same saucepan and heat over medium heat until just beginning to boil. Remove from the heat immediately. Temper the hot milk mixture into the egg yolks slowly, whisking continously with your other hand as you pour. Transfer the mixture back into the saucepan, and heat over low heat, stirring constantly, until the ice cream base has thickened considerably and coats the back of a wooden spoon.
- Once the ice cream base is thick, pour it through a fine-meshed sieve into a large heat-proof bowl. Place the vanilla bean pod on a cutting board and slice it in half lengthwise with a pairing knife. Using the back of your knife, scrape the vanilla bean caviar and whisk it into the ice cream base. Add the scraped vanilla bean halves to the mixture as well. Set the bowl in an ice bath, stirring every 10 minutes or so, until the base has cooled. Place ice cream base in an airtight container and set in the refrigerator until it has completely chilled.
- Remove the ice cream base from the fridge. Remove the scraped vanilla pod from the ice cream and discard. Churn the ice cream in an ice cream maker according to the manufacturer's instructions. Place the ice cream in an airtight container, cover the surface of the ice cream lightly with parchment paper or plastic wrap (I use this type of container, which works great!).
- Freeze the ice cream for a minimum of 4 to 6 hours, or until firm enough to scoop.

MALTED VANILLA ICE CREAM
Steps:
- To make the ice cream base: Stir the gelatin into 1/2 cup of cold water in a small bowl; Set the mixture aside (this will bloom into a semi-solid state).
- Heat 2 cups of the milk in a saucepan over medium-low heat, stirring occasionally. When the milk begins to steam remove it from the heat. And stir in the gelatin. Stir until the gelatin is fully dissolved.
- Put the malted milk powder into a blender. Add 2 cups of the cold milk. Blend well, stopping to scrape down the sides with a spatula. (If there's no blender handy, just beat the malted milk well into the milk until there are no lumps).
- Pour the malted milk mixture into the ice cream maker. Add the heavy cream and stir. Stirring constantly, mix in the hot milk and gelatin mixture. Add the remaining milk, sugar, vanilla, and salt and stir until the sugar dissolves.
- To freeze the ice cream: Assemble the dasher, position the can lid, put the can in the tub and secure the crank assembly. Turn the crank to make sure everything is put together correctly.
- Find the little hole in the side of the tub near the top of the can. Make sure that the hole is open. Drop about 2 cups of crushed ice into the tub. Sprinkle the ice with 1/2 cup rock salt, evenly covering it. Repeat this process. Now someone should begin turning the crank, which remain in motion until the ice cream is frozen.
- Continue to add ice and salt in the proportion above until you have reached the top level of the can and continue cranking. In about 20 minutes the crank will become very difficult to turn. This indicates that the ice cream is done.
- Remove the crank assembly. Pull the can up a bit in the tub. Wipe the ice and salt from the lid and the top of the can. Remove the lid. Pull up the dasher and scrape it off with a rubber spatula. Most people dig in right at this point and enjoy the ice cream even though it is still a little soft. Others like to remove the can and put it in a freezer (or put the ice cream into smaller containers) and harden the ice cream for a few hours before eating.
MINT SIMPLE SYRUP
Fresh mint leaves are steeped with sugar and water to create a minty fresh sweet syrup to add a refreshing lift to cocktails, mocktails, pastry glazes, and frozen desserts. Store in the refrigerator for up to 1 month.

- Stir together the sugar and 3/4 cup water in a small saucepan. Bring to a simmer over medium heat and cook until the sugar completely dissolves, 3 to 5 minutes. Turn off the heat. Use your hands to tear the bunch of mint in half and add it to the saucepan. Using a spoon, press down the mint to make sure that it is completely submerged. Allow the syrup to cool to room temperature in the saucepan, about 1 hour. Strain the mixture through a fine-mesh strainer set over a small bowl or liquid measuring cup. Use the back of a spoon to press down on the mint to extract as much flavor as possible. The syrup can be used immediately and will keep in the refrigerator for up to 2 weeks.

- Gather the ingredients.
- In a small saucepan over medium-high heat, bring the water and sugar just to a boil, whisking to dissolve the sugar. Add the mint leaves.
- Reduce the heat to a simmer and cook, without stirring, until the syrup is slightly reduced and syrupy, about 10 minutes.

EASY MINT CHOCOLATE CHIP ICE CREAM

- In a large bowl, stir together the milk, cream, sugar, salt, vanilla extract and peppermint extract until the sugar has dissolved. Color to your liking with the green food coloring.
