This delicious and moist Mirabelle plum cake recipe is very easy and quick to make. With freshly ground almonds, flour and mirabelle plums.

250 g mirabelle plums
125 g butter (softened)
85 g caster sugar
2 large eggs
80 g plain flour (sifted)
70 g ground almonds (freshly ground)
1/2 teaspoon baking powder
finely grated zest of 1/2 lemon
some sliced almonds

Steps:

  • Preheat the oven to 190 ° C. Line a 20 cm springform cake tin with baking paper.
  • Wash and stone the mirabelle plums.
  • Beat butter and sugar until pale and fluffy. Add the eggs one by one. If the mixture starts to curdle, add 1 tablespoon of the flour. When the mixture is creamy, add lemon and mix the remaining flour with the almonds and baking powder and beat under the butter mixture.
  • Put 5-10 mirabelle plums aside and fold the remaining mirabelle plums under the batter with a spatula. Cover with the remaining mirabelle plums and sprinkle with sliced almonds.
  • Bake on the middle rack for 30-40 minutes.
  • The cake is ready when a skewer inserted into the center comes out clean.
  • Let cool down and enjoy.

3/4 cup (1 1/2 sticks) unsalted butter, room temperature, plus more for pan
1 1/2 cups plus 2 tablespoons all-purpose flour (spooned and leveled)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup packed light-brown sugar
1/2 cup granulated sugar
3 large eggs
1 teaspoon pure vanilla extract
2 teaspoons finely grated lemon zest
1/4 cup sour cream
3 plums, halved, pitted, and cut into eighths
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 375 degrees. Butter an 8-by-2-inch or a 9-inch cake pan and line bottom with a round of parchment. In a large bowl, whisk together 1 1/2 cups flour, baking soda, and salt.
  • Using an electric mixer, beat butter and sugars until light and fluffy. With mixer on low, beat in eggs, one at a time, until incorporated; beat in vanilla and lemon zest. Beat in half the flour mixture, then sour cream. Add remaining flour mixture; mix just until combined.
  • Spread batter into pan and smooth top with a knife. In a bowl, toss plums with 2 tablespoons flour and sprinkle over batter.
  • Bake until cake is golden, about 30 minutes; loosely tent with foil and bake until cake pulls away from side of pan and a cake tester inserted in center comes out clean, about 35 minutes more. Let cake cool completely in pan. Run knife around cake edge and remove cake from pan. Dust with confectioners' sugar before serving.

  • Top layer cake : Combine softened butter and sugar. Spread the mix at the bottom of your mold and allow this to bake, in a pre-heat oven, for 10 minutes at 350F (180°C).
  • Pull the mold out of the oven and sprinkle with almond flakes. Wash, dry, halve and remove the seeds from the plums. Add the chopped fruit to the mold and arrange in a single layer on top of the almond and butter sugar mixture. Set aside.
  • Dough : With the help of a hand mixer, cream the softened butter and sugar together until creamy. Add the eggs and mix until smooth.
  • Add the almond powder, the baking powder, the vanilla extract and the milk. Whisk until everything is well mixed. Now, add the flour. It will be better if you add 1/3 and mix, add another third of the flour and mix again. Finally add the last third of the flour and mix until completly smooth.
