EASY CHICKEN CURRY
Chicken breasts sauteed and simmered with onion, olive oil and curry powder. Simplest chicken curry you'll ever make! Serve over hot cooked rice with a little side of mango chutney, if desired.

Steps:
- Heat oil in a large skillet over medium heat. Add onion and saute until soft and golden brown. Slowly stir in curry powder. Once ingredients are blended together, add chicken breasts. Cover skillet and simmer over medium low heat for about 45 minutes or until chicken is cooked through and no longer pink inside.
- Remove cover from skillet and cook for an additional 15 minutes, until sauce reduces. (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!)

CHICKEN CURRY IN A HURRY

- Heat the butter in a large skillet over medium-high heat. Add the garlic, onion and sweet potato to the skillet and cook, stirring, for 2 minutes. Sprinkle the curry powder over the vegetables and continue cooking for another minute. Reduce the heat to medium low and pour in the coconut milk and broth, stirring to combine. Mix in the honey and salt. Allow the sauce to heat up until gently simmering.
- Add the chicken to the sauce, tossing to coat, and allow it to simmer until warmed through, about 3 minutes. Turn off the heat. Mix in the chopped cilantro, hot sauce and lime juice.
- Ladle the soup into bowls. Garnish with mango cubes, cilantro leaves and lime wedges.
INDIAN CHICKEN CURRY (MURGH KARI)
This is a really good recipe for spicy Indian chicken curry. It's pretty easy to make and tastes really good!

- Sprinkle the chicken breasts with 2 teaspoons salt.
- Heat the oil in a large skillet over high heat; partially cook the chicken in the hot oil in batches until completely browned. Transfer the browned chicken breasts to a plate and set aside.
- Reduce the heat under the skillet to medium-high; add the onion, garlic, and ginger to the oil remaining in the skillet and cook and stir until the onion turns translucent, about 8 minutes. Stir the curry powder, cumin, turmeric, coriander, cayenne, and 1 tablespoon of water into the onion mixture; allow to heat together for about 1 minute while stirring. Mix the tomatoes, yogurt, 1 tablespoon chopped cilantro, and 1 teaspoon salt into the mixture. Return the chicken breast to the skillet along with any juices on the plate. Pour 1/2 cup water into the mixture; bring to a boil, turning the chicken to coat with the sauce. Sprinkle the garam masala and 1 tablespoon cilantro over the chicken.
- Cover the skillet and simmer until the chicken breasts are no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Sprinkle with lemon juice to serve.

MIRJ'S HEART-ATTACK-ON-A-PLATE CHOPPED CHICKEN LIVER
This is my locally famous chopped liver. It's definitely not healthy, but it is really good. I have been promised kingdoms and children have been named after me because of my chopped liver. ;-)

Steps:
- Cook the livers until done in any way you prefer.
- I grill them under the broiler.
- Chop the onions medium-coarsely and fry in the oil until browned, but not burnt.
- You have to babysit the onions, constantly stirring, so they don't burn.
- This can take some time, pull up and chair with a good book, or do other things but keep an eye (and nose) out for the onions.
- With the steel knife, grind the livers in a food processor.
- Add the hard-boiled eggs and give it another whirl until they are incorporated with the liver.
- Add the onions and any extra oil from the bottom of the pot.
- Scrape every last bit of onion into the food processor bowl, this is where the major flavor comes from.
- Add salt and pepper to taste.
- You can also add any other spices that you like, but this detracts from the traditional flavor of Jewish chopped liver.
- Whirl everything around in the food processor until it reaches the consistency you want.
- Some people prefer it coarse, some like it very fine, almost pate-like.
- Scrape the chopped liver into a serving bowl and chill in the fridge for at least 2 hours.
- Serve with crackers or challah.
- Try to avoid the temptation to just shovel it into your mouth with a spoon directly from the bowl.
MIRJ'S HODI CHICKEN -- A CURRY CREATION
This recipe is an Indian twist based on one of my favorite creations (Recipe #24987). I serve this on plain basmati rice or couscous. It's been a big hit recently in my family. I like to use chicken breasts, but you can also use 2 chickens, cut up into servings. As an aside, my trick to grating fresh ginger is to store it in the freezer, then grate the frozen root on a Microplane grater.

- Cut up the chicken breasts into 3 inch pieces, or into any size you prefer.
- Marinate the chicken breasts in the olive oil, paprika, black pepper and salt. Give it a good massage, a relaxed chicken is a tasty chicken. You don't have to marinate this for long, 10 minutes should be enough, but overnight works just as well.
- Brown the chicken until cooked through. I just brown it in the marinade, but you may want to add some more oil to the pan if you think it needs it.
- Set aside.
- To make the sauce, coarsely chop the onion.
- Saute the onions in the vegetable oil until wonderfully caramalized and golden brown.
- Add the garlic, ginger, garam masala, brown sugar and black pepper. Give it all a good stir.
- Add the coconut milk. Keep the sauce on a boil until it has cooked down to the consistency you prefer. YOU DECIDE this part, you can have it thick and gooey or keep it more liquidy and saucy.
- Once it has reached the your preferred consistency, add the salt to taste.
- Add the red pepper pieces and cook for another three minutes or so, stirring constantly until slightly softened by the heat of the sauce.
- Add the cooked chicken to the sauce, mix to cover and heat through.
- Serve over plain rice or couscous.
