MAPLE AND MISO SHEET-PAN SALMON WITH GREEN BEANS

Maple and Miso Sheet-Pan Salmon With Green Beans image

For a weeknight salmon that's impressive enough for entertaining, look no further. Salty miso paste and sweet maple syrup are the backbone of this simple, flavor-packed marinade, which is about as involved as this uncomplicated recipe gets. Here, the fish soaks up the sauce as the oven gets hot, and the snappy green beans roast in the same amount of time as the fillets. Start some rice when you walk in the door and you'll have dinner on the table in under a half hour.

Time 20m

Yield 4 servings

Number Of Ingredients 16

4 (6-ounce) skin-on salmon fillets, about 1-inch thick
Kosher salt
Freshly ground black pepper
4 teaspoons maple syrup
1 tablespoon white or brown miso
1 tablespoon rice wine vinegar
2 teaspoons soy sauce
1 garlic clove, grated
1 pound green beans, trimmed
2 tablespoons olive oil
Pinch of red-pepper flakes (optional)
1/4 teaspoon toasted sesame oil (optional)
1/4 cup roughly chopped cilantro, both leaves and tender stems
4 lime wedges, for serving
Flaky sea salt, for serving (optional)
Cooked white rice, for serving (optional)

Steps:

  • Heat oven to 400 degrees and line a sheet pan with parchment paper or foil. Season the salmon fillets well with salt and pepper, and place them on a plate or in a large shallow bowl.
  • In a small bowl, whisk together the maple syrup, miso, rice wine vinegar, soy sauce and garlic. Pour the mixture on top of the salmon and gently massage the marinade all over the fish. Let marinate while the oven comes to temperature.
  • Meanwhile, in a medium bowl, toss together the green beans with the olive oil, red-pepper flakes and sesame oil (if using) and season generously with salt and pepper. Lay the salmon fillets on the sheet pan skin side down and spread the green beans out surrounding the fillets.
  • Arrange the salmon skin side down on the sheet pan and bake until the salmon is opaque and the green beans are cooked through, about 12 minutes. Right before serving, scatter with cilantro and a good squeeze of lime. Season with flaky sea salt and serve with rice, if desired.

MISO-LIME GLAZED SALMON

Miso-Lime Glazed Salmon image

This savory miso-lime glazed salmon dish is an unbelievably easy way to add a twist to a classic salmon dinner. It pairs well with roasted veggies and sticky rice.

Provided by Eliza Roth

Time 30m

Number Of Ingredients 13

2-3 salmon filets
Glaze:
1/2 cup mirin
1/3 cup light miso paste
1/4 cup soy sauce
3 tbsp brown sugar
1/2 a lime juiced
sesame seeds for garnish
Wasabi Citrus Crema:
3 tbsp lemon lime or yuzu juice
2 tbsp mayonnaise
A hint wasabi can alter to spice preference
salt and pepper to taste

Steps:

  • Preheat the oven to 400° F. Prepare a baking sheet with foil and lightly grease.
  • In a small saucepan over low heat, whisk together mirin, miso paste, soy sauce, brown sugar, and lime juice. Leave on low heat to simmer and thicken.
  • Heat a well-oiled pan over medium-high heat. Add salmon filets face down to get a good sear. This may take 2-3 minutes per side. Then, remove from heat.
  • Place the salmon filets on the baking sheet. Spoon about half of the glaze onto the salmon.
  • Bake in the preheated over for about 10 minutes or until cooked to your liking.
  • While the salmon cooks, prepare the crema. Whisk together the mayonnaise, citrus juice, a dollop of wasabi, and some salt and pepper to taste.
  • Remove salmon from oven.
  • Plate! Spoon the remaining glaze over the top of the salmon and sprinkle with sesame seeds. Drizzle crema over top. This dish pairs well with sticky rice and roasted green beans and carrots.

MISO-MARINATED SALMON

Miso-marinated salmon image

Ever wondered what to do with the Japanese paste miso? This variation of a classic Nobu fish dish is a great place to start

Provided by Good Food team

Categories     Dinner, Lunch, Main course, Snack, Supper

Time 30m

Number Of Ingredients 9

3 tbsp pale (shiro) miso paste
2 tbsp mirin
1 tbsp sugar
1 tbsp saké (optional)
2 x 100g salmon fillets
half a cucumber
2 tsp rice wine vinegar
1 tsp vegetable oil
pinch caster sugar

Steps:

  • Stir together the miso, mirin, sugar and sake, if using. Place the salmon fillets on a plate or in a medium food bag and cover with the miso marinade. Leave in the fridge for at least 30 mins or, better still, overnight.
  • Heat oven to 200C/fan 180C/gas 6. Lightly oil a baking tray. Use kitchen paper to wipe off the marinade (don't be tempted to wash it off as you will lose some of the flavour). Place the fillets on the baking tray, skin side down. Cook in the oven for 15 mins until the fish flakes easily and is cooked through.
  • Meanwhile, make the cucumber salad. Using a vegetable peeler, shave the cucumber into long, thin ribbons. Whisk together the rice wine vinegar, oil and sugar. Toss the cucumber ribbons in the dressing, then curl them up on two plates. Serve with the salmon and some plain white rice sprinkled with toasted sesame seeds.

MISO-GLAZED FISH

Miso-Glazed Fish image

Most recipes for miso-glazed fish are for salmon, because fatty fish are well suited for this preparation and salmon is particularly delicious. Nobu Matsuhisa is known for his miso-marinated black cod, which he marinates for two to three days. I can't imagine finding fish fresh enough to marinate for that long, so in my recipe I marinate the fish for a few hours before broiling and then finishing, if necessary, in the oven. The marinade is based on the Matsuhisa recipe, but I've reduced the sugar considerably.

Categories     dinner, easy, main course

Time 3h30m

Yield 4 servings

Number Of Ingredients 6

1/4 cup mirin
1/4 cup sake
3 tablespoons white or yellow miso paste
1 tablespoon sugar
2 teaspoons dark sesame oil
4 salmon, trout, Arctic char, mahi mahi or black cod fillets, about 6 ounces each

Steps:

  • Combine the mirin and sake in the smallest saucepan you have and bring to a boil over high heat. Boil 20 seconds, taking care not to boil off much of the liquid, then turn the heat to low and stir in the miso and the sugar. Whisk over medium heat without letting the mixture boil until the sugar has dissolved. Remove from the heat and whisk in the sesame oil. Allow to cool. Transfer to a wide glass or stainless steel bowl or baking dish.
  • Pat the fish fillets dry and brush or rub on both sides with the marinade, then place them in the baking dish and turn them over a few times in the marinade remaining in the dish. Cover with plastic wrap and marinate for 2 to 3 hours, or for up to a day.
  • Light the broiler or prepare a grill. Line a sheet pan with foil and oil the foil. Tap each fillet against the sides of the bowl or dish so excess marinade will slide off. Place skin side up on the baking sheet if broiling.
  • Place the fish skin side down on the grill, or skin side up under the broiler, about 6 inches from the heat. Broil or grill for 2 to 3 minutes on each side, until the surface browns and blackens in spots. If necessary (this will depend on the thickness of the fillets) finish in a 400-degree oven, for about 5 minutes, until the fish is opaque and can be pulled apart easily with a fork.

  • Whisk together the miso, wine, brown sugar, ginger and lime zest in a large bowl. Add the filets, turning them evenly to coat with the marinade, taking care not to break the filets. Allow to marinate for 15 minutes while you make your side dishes or set the table.
  • Line a roasting pan with aluminum foil and place the filets on the foil evenly spaced, skin side up. Broil for about 3 to 4 minutes or just until skin is beginning to brown. Carefully flip filets over and cook for another 3 to 4 minutes or until salmon is done to your liking; we like the filets medium rare. Serve with lime wedges.
