Crunchy Apple Mixed Greens Salad image

Whenever our staff celebrates a birthday or a special occasion, "Mary's Apple Salad" is always at the top of the wish list! The ingredients can also be prepared the day before and put together in a flash for our teachers' 20 minute lunch time.-Mary Robertson, Louisville, Kentucky

2 packages (5 ounces each) spring mix salad greens
2 large apples, chopped
2 cups bagel chips, coarsely crushed
1-1/2 cups honey-roasted peanuts
1 cup (4 ounces) crumbled blue cheese
DRESSING:
1/3 cup sugar
1/3 cup canola oil
1/4 cup cider vinegar
1 tablespoon poppy seeds
1-1/4 teaspoons dried minced onion
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper

Steps:

  • In a large salad bowl, combine the first five ingredients. In a small bowl, whisk the dressing ingredients. Drizzle over salad; toss to coat.

5-1/3 cups mixed salad greens
2 medium apples, cut into 3/4-inch pieces
2 tablespoons crumbled feta cheese
LEMON HONEY SALAD DRESSING:
4 teaspoons lemon juice
2-1/2 teaspoons honey
3/4 teaspoon fat-free reduced-sugar vanilla yogurt
1 teaspoon canola oil
1/4 teaspoon minced fresh garlic
Dash salt
Dash white pepper
Dash ground nutmeg

Steps:

  • In a large salad bowl, combine the salad greens, apple and feta cheese. In a jar with a tight-fitting lid, combine the salad dressing ingredients; shake well. Drizzle over salad; toss to combine.

2 cups chopped cameo apples or 2 cups braeburn apples
1/4 cup crumbled blue cheese (SUBSTITUTION fresh grated parmesan for the blue cheese)
2 slices bacon, cooked and crumbled
4 cups mixed salad greens

Steps:

  • To prepare dressing, combine first 5 ingredients in a small bowl, stirring well with a whisk.
  • To prepare salad, combine apples, cheese, and bacon.
  • Drizzle dressing over apple mixture; toss gently to coat.
  • Serve over mixed greens.

6 cups tightly packed mixed baby salad greens
4 oz. KRAFT Organic Mild White Cheddar Cheese, cubed
1 Granny Smith apple, sliced
1/2 cup dried cranberries
4 slices cooked OSCAR MAYER Natural Smoked Uncured Bacon, crumbled

Steps:

  • Whisk first 4 ingredients until blended.
  • Toss salad greens with remaining ingredients in large bowl.
  • Serve salad with the vinaigrette on the side.

2 slices bacon, crisp-cooked, drained, crumbled
4 cups torn mixed salad lettuce greens
1 package Keebler® Club® Original cracker

Steps:

  • 1. In small bowl whisk together lemon juice, honey, oil and pepper.2. In medium bowl toss together apples, cheese and bacon. Drizzle with lemon mixture. Toss to coat. Arrange greens on 4 serving plates. Spoon apple mixture on top. Serve with crackers.

1/2 cup sliced zucchini
1 cup mixed fruit (Blueberries; Strawberries, quartered; blackberries; raspberries; pineapple; mandarin orange segments)
1/3 cup orange juice
4 teaspoons salad oil
4 teaspoons brown mustard
1 1/2 teaspoons sugar
1 1/2 teaspoons snipped of fresh mint or 1/4 teaspoon dried mint, crushed
1/4 teaspoon salt
1/8 teaspoon white pepper

Steps:

  • In a large salad bowl, mixed together mixed greens, mushrooms, zucchini and fruit.
  • In a jar combine the dressing ingredients; cover and shake until combined.
  • Pour over salad just before serving, toss to coat.
