Number Of Ingredients 17

1 cup butter, softened
3 cups packed brown sugar
4 large eggs, room temperature
3 teaspoons vanilla extract
3 cups all-purpose flour
3/4 cup baking cocoa
3 teaspoons baking soda
1/2 teaspoon salt
1-1/2 cups brewed coffee, cooled
1-1/3 cups sour cream
FROSTING:
12 ounces cream cheese, softened
6 tablespoons butter, softened
6 ounces unsweetened chocolate, melted
6 tablespoons brewed coffee
2 teaspoons vanilla extract
4-1/2 to 5-1/2 cups confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, cocoa, baking soda and salt; add to creamed mixture alternately with coffee and sour cream, beating well after each addition. , Pour into three greased and floured 9-in. round baking pans. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, beat cream cheese and butter until fluffy. Beat in the chocolate, coffee and vanilla until blended. Gradually beat in confectioners' sugar. Spread between layers and over top and sides of cake. Cover and refrigerate until serving.

This is a one bowl cake. You can substitute sour milk for buttermilk - mix 1 cup milk with 1 tablespoon vinegar or lemon juice and let stand for 10 minutes. Frost with Coffee Icing.

2 cups all-purpose flour
2 cups white sugar
⅔ cup unsweetened cocoa powder
½ cup vegetable oil
2 eggs
1 cup buttermilk
2 teaspoons baking soda
½ teaspoon salt
1 teaspoon baking powder
1 tablespoon instant coffee powder
1 cup hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9 inch round cake pans.
  • Measure flour, sugar, cocoa, oil, eggs, buttermilk, baking powder, soda, and salt into a mixing bowl. Dissolve instant coffee in hot water, and add to mixing bowl. Beat at medium speed for 2 minutes until smooth; batter will be thin. Pour into prepared pans.
  • Bake for 30 to 35 minutes, or until an inserted wooden pick comes out clean. Cool in pans for 10 minutes, and then turn out onto racks to cool completely.
  • Frost cooled cake with Coffee Icing. After frosting, melt some semisweet chocolate baking squares or chips in a double boiler. Drizzle chocolate around top outside edges letting it run down sides, or over top of cake.

Admittedly, the preparation of this loaf is a little bit fussy (not difficult, just a lot of steps). The result is well worth it, though. This is moist and dense...yum!

Number Of Ingredients 13

2 cups flour
2 tablespoons cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 eggs, separated and at room temperature
1/4 teaspoon cream of tartar
1 cup sugar
1/2 cup butter, at room temperature
2 tablespoons instant coffee
2/3 cup plain yogurt
1/4 cup strong coffee
2/3 cup chopped pecans (optional)

Steps:

  • Preheat the oven to 350°F Grease a 9 x 5 loaf pan, and line it with waxed paper.
  • Sift the flour and dry ingredients into a medium bowl and set aside.
  • Blend the egg whites in a large bowl until foamy, and blend in the cream of tartar. Gradually add 1/4 cup of sugar, beating until the whites are stiff and glossy. Set aside.
  • Combine 3/4 cup sugar, butter, yolks, and coffee granules in a large bowl and beat at medium speed until fluffy.
  • Reduce speed to low. Add the flour, yogurt, and coffee alternately to the egg yolk mixture, beating until blended after each.
  • Stir in 1/3 of the egg whites. Fold in the remaining egg whites and optional pecans.
  • Put the batter in the pan, smoothing the top. Bake for about one hour, until a cake tester comes out clean. Cool for 10 minutes before removing.

  • Preheat oven to 350°F and spray a 9x5-inch loaf pan with baking spray. Coat inside of pan with flour.
  • In a medium or large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt. Add eggs and vanilla and whisk to combine. Add vegetable oil, milk, and instant coffee. Whisk until completely incorporated and instant coffee has dissolved.
  • Pour batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. (A few crumbs are okay!) Let the cake cool in the pan for 10 minutes, and then transfer to a wire rack to cool completely.
  • To make the glaze, dissolve instant coffee in hot water (or use strongly brewed and cooled coffee). Whisk together coffee, vanilla, and powdered sugar until completely incorporated. Glaze will be thick but should be easy to drizzle with a spoon. (If not, add ½ tbsp water until desired consistency is reached.) Drizzle glaze over cake and let it set up for 15 to 20 minutes. Cut into slices to serve.
