FROZEN MOCHA MARBLED LOAF

2 cups finely crushed Oreo cookies (about 20 cookies)
3 tablespoons butter, melted
1 package (8 ounces) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
2 cups heavy whipping cream, whipped
2 tablespoons instant coffee granules
1 tablespoon hot water
1/2 cup chocolate syrup

Steps:

  • Line a 9x5-in. loaf pan with foil. In a bowl, combine the cookie crumbs and butter. Press firmly onto the bottom and 1-1/2 in. up the sides of prepared pan. , In a large bowl, beat cream cheese until light and fluffy. Add milk and vanilla and mix well. Fold in whipped cream. Spoon half of the mixture into another bowl and set aside. Dissolve coffee in hot water; fold into remaining cream cheese mixture. Fold in chocolate syrup. , Spoon half of the chocolate mixture over crust. Top with half of the reserved cream cheese mixture. Repeat layers. Cut through layers with a knife to swirl the chocolate (pan will be full). Cover and freeze for 6 hours or overnight. , To serve, lift out of the pan; remove foil. Cut into slices.

Classic banana bread gets a facelift with the addition of espresso and mini chocolate chips studded throughout. It all comes together with a sweet espresso glaze.

Nonstick cooking spray, for greasing
2 cups all-purpose flour, plus more for dusting
1/4 cup plus 2 tablespoons instant espresso powder
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1 cup granulated sugar
1/2 cup vegetable oil
4 very ripe bananas, mashed (about 2 cups)
2 large eggs
1 teaspoon pure vanilla extract
1 cup mini semisweet chocolate chips
1/2 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with nonstick cooking spray; dust with flour and tap out the excess.
  • Combine the 2 cups flour, 1/4 cup espresso powder, the baking soda, baking powder, cinnamon and salt in a large bowl. Whisk together the granulated sugar, oil, bananas, eggs and vanilla in another large bowl until smooth. Fold in the flour mixture, a third at a time, until just combined after each addition. Fold in 3/4 cup of the chocolate chips. Pour the batter into the prepared pan.
  • Bake until the bread starts to puff and is just set at the edges, about 40 minutes. Reduce the oven temperature to 325 degrees F, then continue to bake until a toothpick inserted into the center comes out clean, about 35 minutes more. Transfer the pan to a wire rack to cool completely, about 3 hours. Flip the bread out of the pan and place onto a serving platter.
  • Just before serving, mix the confectioners' sugar with the remaining 2 tablespoons espresso powder and 1 tablespoon water in a small bowl until smooth. Spread the glaze on top of the banana bread and sprinkle with the remaining 1/4 cup chocolate chips.

1 ¼ cups milk
¼ cup white sugar
1 ½ tablespoons unflavored gelatin
1 tablespoon instant coffee granules
¼ teaspoon salt
½ teaspoon vanilla extract
¼ cup white sugar
2 cups heavy whipping cream
waxed paper
21 chocolate wafer cookies

Steps:

  • Beat egg yolks in a bowl. Reserve eggs whites.
  • Heat milk, egg yolks, 1/4 cup sugar, gelatin, instant coffee, and salt over medium heat, stirring constantly, until gelatin dissolves, about 5 minutes. Remove from heat and stir in vanilla extract. Chill until gelatin mixture is thickened to the consistency of unbeaten egg whites, about 1 hour.
  • Beat egg whites in a glass or metal bowl until foamy. Gradually add 1/4 cup sugar, continuing to beat until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds. Fold gelatin mixture into egg whites.
  • Beat heavy cream in another until stiff peaks form. Fold egg white-gelatin mixture into whipped cream until evenly blended.
  • Line a loaf pan with waxed paper.
  • Spread about 1/4 the cream mixture into prepared loaf pan. Layer about 7 wafers over cream mixture. Repeat layers, ending with the cream mixture. Cover and refrigerate until set, about 3 hours.

1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the flour, sugar, cocoa, coffee granules, baking soda and salt. In another bowl, beat eggs, sour cream and butter until smooth. I was inspired one day in culinary school after one of our bread baking sessions and came up with this bread. I have tweaked it a little bit to improve it. It is good served with a sweet cinnamon butter.

Number Of Ingredients 12

6 cups ap flour
3/4 cup cocoa powder
3/4 cup brown sugar, packed
1/2 cup super strong coffee (I've used espresso and New Orleans iced coffee concentrate)
1 1/2 cups warm water
1 tablespoon yeast
1 egg
3 tablespoons butter
2 tablespoons bittersweet chocolate chips
1 teaspoon salt
2 tablespoons milk
2 tablespoons melted butter

Steps:

  • Heat the coffee and water to 110 - 130 deg F.
  • Melt the chocolate chips and butter together.
  • In the bowl of a standing mixer, mix 4 c flour, salt, brown sugar, yeast and cocoa powder.
  • On low speed, slowly add the water and coffee.
  • Mix until incorporated, scraping the sides of the bowl as necessary.
  • Add the chocolate/butter mixture and the egg.
  • Increase the speed of your mixer to medium, add the remaining flour a couple of tablespoons at a time, until the dough forms a ball and scrapes the sides of the bowl pretty well clean.
  • Knead in the mixer for 5 - 7 minutes, until the dough is smooth and elastic.
  • Remove the dough from the bowl, knead briefly on a very lightly floured counter.
  • Form the dough into a ball, place it back in the bowl, cover it with a lint free towel and let it rise until doubled in size - 45 minutes to an hour.
  • Punch the dough down, shape into two round loaves. Cover and let rise again, until double, about 30 - 45 minutes.
  • Preheat the oven to 350.
  • Mix the 2 tbsp milk and the 2 tbsp melted butter in a small bowl. Brush over the tops of your loaves.
  • Bake for 35 - 40 minutes.

2 cups whipping cream, whipped
2 tablespoons instant coffee granules
1 teaspoon hot water
1/2 cup chocolate syrup

Steps:

  • line a 9-in. x5-in. x3-in loaf pan with foil.

  • Sift powdered sugar, flour, and 1/4 cup cocoa powder together 3 times. Beat egg whites and cream of tartar with an electric mixer on medium to high speed until soft peaks form (tips curl). Gradually add granulated sugar, about 2 tablespoons at a time, beating until soft peaks form (tips stand straight). Sift about one-fourth of the flour mixture over beaten egg whites; fold in gently. Repeat sifting and folding in the remaining flour mixture three more times, using one-fourth of the flour mixture each time. Spread batter in prepared pan.
  • Bake in a 375 degree F oven for 23 to 25 minutes or until top springs back when lightly touched. Loosen edges. Immediately invert cake onto a large wire rack; remove pan. Carefully peel off waxed paper. Cool thoroughly.
  • For filling, in bowl dissolve coffee granules in milk; add topping mix. Beat with an electric mixer on low speed until combined. Then beat on high speed until mixture form stiff peaks (4 to 5 minutes). Fold in yogurt.
