- In a small bowl, dissolve yeast in warm water. Meanwhile, in a large bowl, combine the boiling water, shortening, sugar and salt. Allow to stand 3 to 4 minutes or until shortening is melted and sugar is dissolved. Add the yeast mixture and eggs and mix well. Add 2 cups of flour; beat until smooth. Add enough remaining flour to form a soft dough (do not knead). , Place in a greased bowl, turning once to grease top. Cover and refrigerate overnight. Turn dough onto a floured surface. Form a 2-1/2-in. ball. Roll into a 5-in. rope; shape into a knot. Repeat with remaining dough. , Place on a greased baking sheet. Cover and let rise in a warm place until doubled, about 30 minutes. Bake at 350° for 20-25 minutes or until golden brown.

- Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. My mother was always experimenting with recipes. She had a knack for combining the right ingredients. This is one of my most treasured recipes she shared with me.

- In a small skillet, saute onion and garlic in butter until tender. Stir in herbs; cool. In a food processor, dissolve yeast in warm water. Add the sugar, salt and onion mixture. Add flour; cover and process until dough forms a smooth ball. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a floured surface; divide into 24 pieces. Shape each into a ball. - In a standing mixing bowl with dough hook, dissolve yeast in warm water. Let sit until lightly foamy, then stir in sugar and add egg, salt, warm milk, and 4 ounces of butter. Slowly add 5 cups flour, adding more as needed to make an elastic dough. Mix well, then roll out to floured surface and knead dough for about 5 minutes.
- Place dough in buttered bowl, cover with towel, and set in a warm place to rise until double in bulk, about 1 hour.
- Lightly oil the muffin pan. Punch down dough and form dough into 1-inch balls. Place 3 balls in each muffin tin. Fill muffin pan, cover with towel, and allow to rise an additional 1/2 hour.
- Preheat oven to 425 degrees F.

- COMBINE 2 cups flour, sugar, salt and yeast in large bowl; mix well. Heat water, milk and 1/2 cup butter in small saucepan until very warm (120 degrees to 130 degrees F). Add warm liquid and egg to flour mixture; blend at low speed until moistened. Beat 3 minutes at medium speed. By hand, stir in an additional 2 1/2 to 3 cups flour until dough pulls cleanly away from sides of bowl.
- SPRAY large bowl with no-stick cooking spray. Knead in 1 1/4 to 1 3/4 cups flour on floured surface until dough is smooth and elastic, 8 to 10 minutes. Place dough in prepared bowl; cover loosely with greased plastic wrap and cloth towel. Let rise in warm place (80 degrees to 85 degrees F) until light and doubled in size, 45 to 60 minutes.
- PUNCH down dough several times to remove all air bubbles. Divide dough in half. To make Pan Rolls, lightly spray two 13 x 9-inch pans with no-stick cooking spray. Divide each half of dough into 16 equal pieces. Shape each into a ball, pulling edges under to make a smooth top. Place balls, smooth side up, in prepared pans. Cover; let rise in warm place until light and doubled in size, 20 to 30 minutes.
- HEAT oven to 400 degrees F. Uncover dough. Bake 16 to 20 minutes or until golden brown. Immediately remove rolls from pans; cool on wire racks for 15 minutes. Brush with melted butter. Serve warm or cool.
- Tip: To make dough a day ahead, after first rise time, punch down dough, cover and refrigerate dough overnight. Shape dough as directed in recipe; let rise a second time until light and doubled in size, 25 to 35 minutes.

- BOW KNOT ROLLS: Lightly spray cookie sheets with no-stick cooking spray. Using half of dough, divide dough into 16 equal pieces. On lightly floured surface, roll each piece into a 9-inch rope. Tie each into a loose knot. Place 2 to 3 inches apart on prepared cookie sheets. After rising, bake 12 to 15 minutes or until golden brown. Yield: 16 rolls
- SWIRL ROLLS: Lightly spray cookie sheets with no-stick cooking spray. Using half of dough, divide dough into 16 equal pieces. On lightly floured surface, roll each piece into an 8-inch rope. Beginning at center, make a loose swirl or coil with each rope; tuck end under. Place 2 to 3 inches apart on prepared cookie sheets. After rising, bake 12 to 15 minutes or until golden brown. Yield: 16 rolls
- CROWN ROLLS: Lightly spray 12 muffin cups with no-stick cooking spray. Using half of dough, divide dough into 12 equal pieces. Shape each into a ball, pulling edges under to make a smooth top. Place 1 ball, smooth side up, in each prepared muffin cup. Using kitchen scissors dipped in flour, cut balls of dough into quarters almost to bottom. After rising, bake 14 to 18 minutes or until golden brown. Yield: 12 rolls
- CRESCENT ROLLS: Lightly spray cookie sheets with no-stick cooking spray. Using half of dough, divide dough in half again; shape each half into a ball. On lightly floured surface, roll each ball into a 12 inch round. Spread each with 1 tablespoon softened butter. Cut each round into 12 wedges. Beginning at wide end of wedge, roll toward point. Place, point side down, 2 to 3 inches apart on prepared cookie sheets. Curve ends to form a crescent shape. After rising, bake 12 to 15 minutes or until golden brown. Yield: 24 rolls
- CLOVERLEAF ROLLS: Lightly spray 12 muffin cups with no-stick cooking spray. Using half of dough, divide dough into 12 equal pieces; divide each into thirds. Shape each into a ball, pulling edges under to make a smooth top. Place 3 balls, smooth side up, in each prepared muffin cup. After rising, bake 14 to 18 minutes or until golden brown. MOM'S DINNER ROLLS
Freshly baked dinner rolls are always tasty and this recipe makes an excellent dough. These are tender, fluffy yeast rolls. Or, you can smear the dough with softened butter, cinnamon, and sugar to make yummy cinnamon rolls. It's a classic recipe you'll use over and over. Easy to make, skip buying the frozen rolls and try these yeast dinner rolls the next time you want fresh bread.

- In a large mixing bowl, proof yeast in the 1/2 cup lukewarm water, with half the sugar dissolved in it.
- In a 2-cup measuring cup, heat the milk and butter together until the butter is melted.
- When the yeast is bubbly, add 1 cup flour and beat well.
- Then add eggs, salt, and another cup flour. Beat well.
- Last, add the warm milk and butter, remaining sugar, then 3 cups flour and mix by hand; gradually adding another cup of flour.
- Turn out onto silicone mat or floured surface and knead until you have worked in the flour.
- Work until the dough is only slightly sticky.
- Set in a warmed oven covered by a tea towel, to rise.
- When the dough is doubled in size, remove from oven.
- Using two 9x13" pans, form dough into dinner roll shapes and place dough into the pans (20 per pan).
- When rolls have doubled in size, bake in a 375 F preheated oven for 13- 15 min.
- When out of the oven, brush with melted butter.
MOM'S WHITE DINNER ROLLS
this is a GREAT sweet dough recipe that my mom made all growing up. It is great for rolls, cinnamon rolls, orange rolls, bread, etc. one trick for shaping the rolls: roll dough into circle about 1/2 thick. use pizza cutter to cut circle into 12 triangles (cut in horizontal, then vertical, then those sections in thirds). circle the dough around your finger until the end and slide it off your finger. :) Good luck. these are great. :)

- warm milk in microwave,
- put the butter in the milk to soften.
- Put warm water in a bowl and dissolve the yeast in it.
- Add the eggs, sugar and salt along the side of the yeast bowl, but do not stir yet.
- Add the milk and butter to yeast mixture once milk is cool enough to prevent killing yeast.
- Add flour a cup at a time until a soft dough is made.
- Knead about 200 times.
- Rise for 45 minute.
- Shape rolls to your desired shape (I usually roll dough into circle, cut into 12 triangles and roll.).
- Rise again.
- Bake at 350 for about 22 minutes.
- This recipe is great for cinnamon rolls, orange rolls, bread, etc. :).

MOM'S MELT-IN-YOUR-MOUTH DINNER ROLLS
My mom made these rolls for every occasion I can remember. They are originally in a little cookbook by Beverly Nye from Cleveland, Ohio. They are practically no fail, since there is no kneading involved. They are always light, tender, and delicious, and so popular that I usually plan on at least two per person rather than the one indicated here. They are also really convenient since you make the dough the night before and refrigerate it for the first rise. The times indicated do not include refrigerating overnight or the 2 hours they take to raise before baking. (P.S. Thanks for the photo Danielle)

- Dissolve yeast in warm water and add 1 tablespoon sugar and baking powder. Allow to stand for 20 minutes.
- Meanwhile scald milk. Add margarine, 1/3 cup sugar and salt. Cool a little and then add eggs. (I do this step in my 4 c glass measure in the microwave.).
- Combine all with flour. Cover and refrigerate overnight. (The dough will more than double in bulk, so make sure your container is big enough. If it looks like it might outgrow its bowl, you can always punch it down once or twice without any ill effects.).
- Two hours before serving, divide dough into thirds and roll out into large circles about 9 inches in diameter on a floured surface. The dough will be sticky, but don't worry. It will quickly come together and handle really well with a few sprinklings of flour (not too much). Cut into 8 wedges and make crescent rolls by starting at the wide end and rolling up. Place on greased pans to rise, covered with clean towels.
- Bake at 425 degrees for 8-10 minutes. Mom always rubbed the hot rolls with a stick of butter when they came out of the oven, and I do, too. It makes them so beautiful.
