My Mom's Chocolate Cake image

A simple, old-fashioned chocolate cake. Great with a chocolate glaze.

½ cup shortening
½ cup unsweetened cocoa powder
1 cup white sugar
1 egg
1 cup buttermilk
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract
1 ½ cups sifted all-purpose flour
½ cup hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
  • In a large saucepan, melt together the shortening and cocoa. Remove from heat and stir in sugar and egg. Mix buttermilk with baking soda, salt and vanilla, then blend into chocolate mixture. Beat in flour. Stir in hot water. Pour into prepared pan.
  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

2 ounces unsweetened chocolate, broken into pieces
1/2 cup boiling water
1/2 cup shortening
2 cups packed brown sugar
2 large eggs, separated
2 cups sifted cake flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup water
1/2 cup chopped walnuts
1 teaspoon vanilla extract
COCOA FROSTING:
6 tablespoons butter, softened
3-1/2 cups confectioners' sugar
1/2 cup baking cocoa
1-1/2 teaspoons vanilla extract
Pinch salt
4 to 6 tablespoons whole milk

Steps:

  • In a small bowl, stir chocolate in boiling water until melted; cool for 10 minutes. , In a bowl, cream shortening and brown sugar. Beat in egg yolks and chocolate mixture. Combine flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk. Gradually beat in water, nuts and vanilla. , In a small bowl, beat egg whites until soft peaks form; fold into batter. Pour into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until toothpick inserted in the center comes out clean. Cool on wire rack., In a bowl, cream butter. Combine sugar and cocoa; gradually add to butter with vanilla, salt and enough milk to achieve desired spreading consistency. Frost cake.

Steps:

  • Preheat the oven to 350 degrees F.
  • For the cake: Lightly grease a 9-by-13-inch cake pan with butter. Combine the flour, sugar and baking soda in the bowl of a stand mixer or mixing bowl. Combine the butter, cocoa and 1 cup water in a medium saucepan and bring to a boil while mixing. Add the cocoa mixture to the flour mixture, along with the buttermilk eggs and vanilla, and beat for 3 minutes. Pour into the prepared cake pan and bake until firm to the touch and a toothpick inserted in the center comes out clean, 30 to 40 minutes. Steps:

  • For the cake: Preheat the oven to 350 degrees F. Butter and flour 2 (8-inch) round cake pans. In a small bowl, pour 1 cup boiling water over the cocoa powder, whisking until smooth. Set aside. Continuously whisk over medium heat until the mixture comes to a boil. Boil and whisk for 1 to 2 minutes or until the mixture thickens. Remove the pan from the heat and add the chocolate chips, butter, and vanilla, stirring until combined and smooth. Pour into a bowl and cover with plastic wrap so that the wrap is touching the top of filling. Chill until ready to use.
  • For the frosting: In a large bowl, combine the butter and cocoa on medium speed until smooth. Add the vanilla. Alternate confectioner's sugar with heavy cream until the frosting reaches the desired consistency. Cook's Note: You may use more or less sugar and cream depending on when you reach the texture you prefer.
  • For the ganache: In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave on high 1 minute, then remove and whisk together. Return to microwave for 1 more minute on high, remove and whisk. Follow this step until the mixture becomes glossy, smooth and easily spreadable. If too thick you may add slightly more cream.
  • To assemble the cake: Place one cake layer on the cake plate. Cover top with chilled pastry cream until about a 1/2-inch high. You will not likely use all of the pastry cream but fit in as much of it as you can without it running over. Place the second cake layer on top of the filling. Smooth the sides and refrigerate for a few minutes to help it set up.
  • With a large ladle pour the ganache into the center top of the cake, moving the ladle in circular motions to spread over the top of the cake. Add more ganache and repeat the motion as needed until the top of the cake is covered and smooth. Clean any ganache that drips down the sides. Return to refrigerator for a few minutes to firm up the ganache.
  • Spread a thin layer of frosting around sides of cake only then go back over it adding more. Set aside any unused frosting for piping the bottom and top border. Do not frost over the ganache. Using a piping bag fitted with a large star or shell tip, pipe a border around the bottom of the cake and around the top edge of the cake to cover the line where frosting and ganache meet. Refrigerate for a few hours before serving.

I'm submitting it for a request for recipes and ideas for a sleep-over/birthday party event. It's from my Mom, it's old, I have no idea where it came from. No need to drag out the mix-master for this, just a bowl and a pot is all you need.

2 cups sugar
2 cups flour
1/4 cup cocoa powder
1 cup water
1/2 lb butter
1/2 cup buttermilk
2 eggs, beaten
1 teaspoon baking soda

1/4 lb butter
6 teaspoons milk
1 lb confectioners' sugar
chopped nuts (we like chopped pecans) (optional)

Steps:

  • Combine sugar and flour in a large bowl.
  • Boil 1/4 C cocoa, water, 1/2 lb butter in a medium sized sauce pan.
  • Pour chocolate mixture over flour and sugar mixture and stir well.
  • Add buttermilk, beaten eggs soda and vanilla.
  • Pour into a jelly roll pan (which is, roughly, 11x15 and 1 inch deep), bake at 400° for 20 minutes.
  • While cake is baking, make frosting.
  • Combine frosting ingredients, except for confectioners sugar, in the same sauce pan used for chocolate mixture above (saves washing dishes).
  • Boil, then add confectioners sugar.
  • Pour over hot cake, sprinkle with nuts, and let set for an hour or two.
  • Serve and watch the smiles and requests for the recipe.

1 box(es) (4 oz) chocolate pudding, instant
4 - eggs
1 cup(s) sour cream
1/2 cup(s) warm water
1/2 cup(s) vegetable oil
1 1/2 cup(s) chocolate chips
1 can(s) chocolate frosting, or use this homemade recipe
FROSTING
8 tablespoon(s) butter
4 tablespoon(s) unsweetened cocoa
1/3 cup(s) whole milk
4 cup(s) powdered sugar, sifted

Steps:

  • Bake in a 9x13 pan, or a bundt pan. For rectangular pan, grease the bottom of pan only. For a bundt pan, lightly coat the inside of pan with cooking spray, and coat with flour, shaking out any excess flour. Preheat oven to 350.
  • In a large bowl, combine the cake mix, pudding, eggs, sour cream, warm water, and oil. Beat on low for 1 minute, then scrape the sides of the bowl with a spatula. Increase speed to medium and beat for 2-3 minutes. Gently fold in chocolate chips, distributing evenly throughout batter.
  • Scrape the batter into the prepared pan, smoothing the top with a spatula. For the 9x13 pan, bake for 35-40 minutes, until toothpick inserted in center comes out clean. For a bundt pan, Bake 45-50 minutes or until it just starts to pull away from the sides of the pan and springs back when lightly pressed.
  • (9x13) Cool completely and frost
  • (Bundt pan) Cool on wire rack for 20 minutes. Carefully run a sharp knife around the edge of the cake pan. Invert the cake onto the rack to cool completely. To frost, set inverted cake onto a platter or cake plate and spread the warm frosting over the cooled cake with smooth strokes. Set aside until the frosting has set, about 20 minutes.
  • Use a can of chocolate frosting, or make your own. This frosting recipe makes about 4 cups of frosting, so you can divide the recipe if you need less.
  • To make frosting: Melt butter in a medium saucepan over low heat. Add cocoa and milk, stirring constantly until the mixture comes to a boil. Immediately remove the pan from the heat. Add powdered sugar and stir unil the frosting is thick and smooth. Use immediately while frosting is warm, or it will harden. To reheat, return the pan to low heat and stir until frosting softens.

  • CAKE:
  • Preheat oven to 350°F. Place chocolate and butter in top of double boiler or in bowl over a pot of simmering water; heat until chocolate is completely melted. Stir in vanilla. Remove from heat. Mix flour, granulated sugar, cream of tartar, baking soda and salt in large bowl. Add chocolate mixture, milk, eggs and sour cream; mix well. Pour into greased 9-inch square baking pan.
