APPLE CRISP
One of the definitive desserts of fall, apple crisp is easy and economical. Test kitchen tip: Empire, Gala, or Braeburn apples are especially good in this recipe.

- Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
- In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.
GO-TO APPLE CRISP

- To make the topping, mix the flour, oats, brown sugar, pecans, baking powder, baking soda and salt in a medium bowl. Stir while drizzling in the melted butter, then set aside.
- Pour the apple pie filling into a 9-by-13-inch baking dish. Spoon the topping evenly over the top.
- Bake until golden and crisp, 40 to 45 minutes.
- Serve warm, topped with vanilla ice cream or whipped topping.

- Preheat the oven to 350 degrees F.
- For the apples: In a large bowl, combine the apples with the brown sugar, cornstarch, lemon juice, orange juice, diced butter and cinnamon and reserve.
- For the crisp: In a mixing bowl, combine the flour, brown sugar, oats, cinnamon and salt. Add the butter and, using your hands, rub the mixture until it resembles crumbs. Cover and refrigerate for about 20 minutes.
- Pour the apple mixture into an 8-by-8-inch baking pan. Sprinkle on the caramel squares and salt. Place the crisp mixture on top of the apples, scattering evenly without pressing it down. Bake until crispy and golden brown, 40 to 45 minutes. Let cool.
- Serve warm with vanilla ice cream if desired.

- Preheat the oven to 400 degrees. Position a rack in the center of the oven.
- To prepare the fruit, place the lemon juice in a large bowl. Peel, core, and cut the apples into 1/2-inch wedges, tossing the pieces in the lemon juice as they are cut, to prevent browning.
- To the apples, add the granulated sugar, cinnamon, and flour. Toss to combine and pour into a buttered 8-by-8-inch square or oval baking pan. Scatter the butter on top.
- Make the topping in the same bowl. Combine the oats, brown sugar, nuts, flour, salt, and optional spices. Cut in the butter using a pastry blender, a fork, or two knives. Sprinkle the topping evenly over the fruit and bake on the center rack for 40 to 45 minutes, until the topping is dark golden and the apples are bubbling. Cool slightly on a wire cooling rack. Scoop out with a large spoon to serve in bowls.
LAUREL'S APPLE CRISP RECIPE

- Preheat oven to 375. Place the sliced apples in an ungreased 2 qt. casserole or 8 inch square baking dish. Sprinkle with the cinnamon, water and lemon juice. Combine topping ingredients. Mix until crumbly. Sprinkle the crumb mixture evenly oover the apple mixture. Bake for 25-35 minutes or ntil the apples are tender and te topping is golden brown. Remove from oven and serve warm with cream, ice cream or whipped cream, if desired. Note: I doubled the recipe and put it in a 9X12 pan, using only a cup of brown sugar. Bake for 40 minutes. For softer apples, pre-cook the apples in microwave for a few minutes.

MS. LAMORTE'S APPLE CRISP
I have been making this apple crisp every year for Thanksgiving and other holidays for 10 years! Ms. Lamorte, my first grade teacher made it with the whole class and it instantly became a tradition to make every year. It is very simple, but so full of flavor. We always serve it hot with vanilla ice cream.
