Mung Bean Sprouts (How to Sprout Mung Bean at Home and Salad) image

Homemade mung bean sprouts with traditional Chinese way and a simple salad recipe.

300 g homemade fresh mung bean sprouts
1 teaspoon salt
1 tsp finely chopped spring onion
1 teaspoon minced garlic
1 teaspoon roasted sesame seeds
1 teaspoon light soy sauce
1 teaspoon salt
1 tablespoon sesame oil
1 teaspoon chili pepper powder ( , optional)

Steps:

  • Wash the mung bean sprouts and remove any roots or bad ones.
  • Add around 1 teaspoon of salt in water. Bring the water to a boiling and then rinse the mung bean sprouts for 1 minute.
  • Transfer out and rinsing in cold water for around 1 minute. Use your hand to squeeze o remove excess water.
  • Mix with sauces and serve.

Here is an easy mung bean sprout salad to serve along with your kimchi and other accompaniments.

2 cups water
1 pound mung bean sprouts
1 baby carrot, cut into matchsticks
1 green onion, cut into 1-inch pieces
1 teaspoon sesame oil
1 teaspoon crushed garlic
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon sesame seeds

Steps:

  • Bring water to a boil in a saucepan. Add mung beans; cook until tender, about 5 minutes. Drain. Rinse under cool running water to stop the cooking process. Drain well; transfer to a bowl.
  • Combine baby carrot and green onion in a small microwave-safe bowl. Cover with water and place in the microwave for 30 seconds. Drain.
  • Stir baby carrot and green onion into the bean sprouts in the bowl. Add sesame oil, garlic, salt, pepper, and sesame seeds; mix by hand until combined.

  • Next morning rinse your beans, place into damp cheesecloth/into clean jar/ or sprouting basket. If you use the cheesecloth or colander place a bowl underneath which will collect excess water. Cover or make sure no light hits the mung beans, it's important or the beans will get bitter.
  • In the evening same day, check your mung beans, rinse them again, drain off excess water. Keep in the dark again.
