2 medium onions, chopped
2 teaspoons canola oil
3 garlic cloves, minced
2 teaspoons minced fresh gingerroot
2 teaspoons ground coriander
1 teaspoon ground turmeric
1/2 teaspoon dried thyme
1/4 teaspoon ground allspice
5 cups vegetable broth
2 cups cubed peeled sweet potato
3 cups chopped fresh kale
1 cup frozen sliced okra
1 cup coconut milk
1 cup canned diced tomatoes, drained
1 cup canned black-eyed peas, rinsed and drained
2 tablespoons lime juice

Steps:

  • In a Dutch oven, saute onions in oil until tender. Add the garlic, ginger and spices; cook 1 minute longer., Stir in broth and potato. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Stir in kale and okra. Return to a boil; cover and simmer 10 minutes longer or until potato is tender. Add the milk, tomatoes, peas and lime juice; heat through.

3 medium sweet potatoes
1 teaspoon vegetable oil
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1 garlic clove, crushed
1 teaspoon dried basil
2 cups skim milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground allspice

Steps:

  • Pierce sweet potatoes several times with a sharp knife and bake in a 350°F oven 1 hour or until tender.
  • When cool enough to handle, peel, place in a large bowl and mash with a fork or potato masher.
  • Heat oil in a medium saucepan over medium heat. Add onion, celery, garlic and basil.
  • Cook, stirring frequently, 10 minutes or until vegetables are tender.
  • Add small amounts of water as necessary, about a tablespoon at a time to prevent sticking.
  • Gradually sit milk into saucepan. Add mashed sweet potatoes, salt, pepper, and allspice.
  • Cook, stirring frequently, until soup just begins to boil.
  • Serve right away or remove from heat and cover until serving time.

2 small sweet potatoes, diced into 1 inch cubes (about 3 pounds)
2 1/2 cups unsweetened coconut milk
6 cups chicken broth
2 medium limes, juice of
3 tablespoons ginger, finely grated (or minced)
2 tablespoons fresh lemon juice
1 tablespoon fresh lime juice
1/4 teaspoon sea salt
1 1/2 lbs large shrimp, peeled and deveined
4 large bananas, peeled and cut into 1/2 inch thick slices
1 cup unsweetened coconut, lightly toasted
1 cup sliced unblanched almonds, lightly toasted
1/2 cup cilantro, chopped
1 lime, cut into 8 wedges

Steps:

  • For the soup, place sweet potatoes, a cup of the coconut milk and the broth in a stock pot. Bring to a low boil and simmer 15 minutes until the sweet potatoes are soft.
  • Place potatoes and liquid in a food processor and blend until smooth, adding lime juice and the remaining coconut milk as needed.
  • For the shrimp, mix together the ingredients in a plastic bag. Marinade the cleaned shrimp for one hour in the fridge. Broil or grill shrimp for five minutes until done.
  • For the bananas, place banana slices in a single layer in a shallow baking pan. Broil 2-3 minutes. Turn bananas over and broil another minute or two until they are a bit soft and lightly browned.
  • Ladle soup into bowls and top with shrimp. Serve condiments in small bowls on the side.

2 large sweet potatoes, peeled and cubed
1 tablespoon butter
1 onion, sliced
2 garlic cloves, mashed
4 cups chicken stock
1/2 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
2 tablespoons fresh ginger, grated
1/4 cup peanut butter
1 lime, juice of
2 tablespoons chopped fresh cilantro
1 teaspoon salt
1 large plum tomato, seeded and diced
1/2 cup sour cream
1 teaspoon grated lime zest

Steps:

  • For sauce:.
  • In a small bowl, stir together the sour cream and lime zest. Set aside.
  • For Soup:.
  • Melt the butter in a dutch oven pre-heated over medium heat. Add onion and garlic, and cook for about 5 minutes, until lightly browned.
  • Add sweet potatoes, and chicken stock. Season with cumin, chili flakes and ginger. Bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, until potatoes are tender. Add the peanut butter.
  • Puree the soup in a blender in small batches, return to heat. Stir in lime juice, and salt.
  • Ladle into warm bowls, and top with a scoop of the reserved sour cream sauce, some diced tomato, and a sprinkle of cilantro.

Rich and thick. Almost a stew,it makes a great light winter meal. Uses 1 pot and 1 cutting board and a salad bowl, easy on the clean up I added a dollop of sour cream and a sprig of parsley for presentation. SIDES spinach salad whole grain rolls.

1 roasted sweet potato
1 tablespoon olive oil
1 chopped onion
3 garlic cloves
1 cubed white potato
10 ounces chicken broth or 10 ounces vegetable broth, for vegetarian
1 1/2 teaspoons thyme
1/8-1/4 teaspoon cayenne pepper
salt & pepper
1 cup half-and-half cream
3 ounces Baby Spinach
3 ounces red leaf lettuce
8 black olives, chopped in half
8 green olives, chopped in half
7 marinated artichoke hearts
herb salad dressing

Steps:

  • Roast the sweet potato in its jacket. I roasted mine until it was carmelized and the skin very loose.
  • Saute onions and pressed garlic for about 3 minutes over medium high heat.
  • add potato and saute for another 3 minutes.
  • add broth (I used homemade stock so I added a chicken cube for extra umph), spices, and sweet potato
  • simmer until potatoes are soft.
  • meanwhile assemble the salad ingredients (do not add dressing until served.
  • The whole grain rolls can be wrapped in tinfoil and warmed in the oven.
  • Remove from burner, mash soup with potato masher
  • add half and half.
  • reheat but not to a boil.
  • Serve soup in soup bowls with a dollop of sour cream or yoghurt in the middle and a sprig of parsley ( if you give the soup a quick swirl with a spoon it gives a nice decorative effect) Salad can be served out of a salad bowl or on side plates with warmed rolls.

1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, chopped
1 red bell pepper, diced
4 cups chicken broth
1/3 cup lime juice (fresh)
1 cup cooked chicken (diced- one breast)
1 cup rice (precooked)
1 cup tomatoes, chopped
1/2 cup cilantro, chopped
salt and pepper

Steps:

  • In a large saucepan heat the oil and saute the onion, garlic and bell pepper until soft and fragrant (this takes several minutes).
  • Add the chicken broth and bring to a boil.
  • Now add the lime juice, chicken and rice and wait for the mixture to boil again.
  • Throw the tomatoes and cilantro and turn off the heat. Season with the salt and pepper and serve.
  • I like to cut corn tortillas into thin strips with scissors and spray with PAM. I then bake in a hot oven for about 15 minutes until well toasted and sprinkle on top of the soup to serve!

1/2 cup orange juice (I use fresh)

  • In dutch oven over medium high heat,combine chicken broth,sweet potatoes,carrots and 2 tsp.
  • Rosemary.

  • In medium skillet,combine butter,onion and garlic over medium heat.
  • Stirring constantly,cook 8 minutes or until onions are translucent,transfer to large food processor.
  • Reserving liquid,transfer sweet potato mixture to food processor,process until smooth.
  • Stir pureed mixture into liquid.
  • Stir in orange juice,salt and peppers.
  • Return to low heat,cook 10 minutes or until heated through.
  • Garnish each serving with fresh rosemary.
