3 tablespoons olive oil
2 onions, chopped
2 celery stalks, cut into 1/2-inch pieces
1 carrot, peeled and cut into 1/2-inch pieces
1 red bell pepper, cut into 1/2-inch pieces
6 cloves garlic, finely chopped
1/2 cup chili powder
1 tablespoon ground coriander
1 tablespoon ground cumin
2 teaspoons dried oregano
1 teaspoon dried crushed red pepper, optional
2 (14 1/2-ounce) cans diced tomatoes with juices
1 (11 1/2-ounce) can tomato juice
1 (6-ounce) can tomato paste
1 (3-inch) piece Parmesan cheese rind, optional
2 teaspoons salt, plus more to taste
8 cups vegetable or chicken broth
2 (15 1/2-ounce) cans garbanzo beans, drained and rinsed
2 (15-ounce) cans cannellini beans, drained and rinsed
1/2 cup dried green lentils
3 cups broccoli florets
2 zucchini, cut crosswise into 1/2-inch thick rounds
2 yellow crookneck squash, cut crosswise into 1/2-inch thick rounds
1/2 cup freshly shredded Parmesan
1/4 cup thinly sliced fresh basil leaves

Steps:

  • Heat the oil in a heavy large stockpot over medium-high heat. Add the onions, celery, carrot, bell pepper, and garlic, and saute until the onions are translucent, about 15 minutes. Add the chili powder, coriander, cumin, oregano and crushed red pepper, and cook for 2 minutes. Stir in the tomatoes with their juices, tomato juice, tomato paste, cheese rind, and 2 teaspoons of salt. Add the broth, garbanzo beans, cannellini beans, and lentils. Stir in the broccoli, zucchini, and yellow squash. Bring to a simmer over high heat. Decrease the heat to medium. Simmer, uncovered, until the lentils are tender and the mixture thickens slightly, stirring often, about 20 minutes. Season the stew to taste with more salt, if desired.
  • Ladle the stew into bowls. Sprinkle with the shredded cheese and basil, and serve.

1 large onion, peeled and chopped
2 stalks celery, diced
1 carrot, peeled and diced
4 ounces smoked ham or 4 ounces tasso, cut into thin strips
1 tablespoon butter
2 garlic cloves, minced
2 (14 ounce) cans red kidney beans
4 cups vegetable broth
1 teaspoon Worcestershire sauce
2 tablespoons fresh parsley, finely chopped
1/2 teaspoon dried thyme
2 bay leaves
1 tablespoon lemon juice
salt & freshly ground black pepper, to taste
hot sauce, to taste

Steps:

  • In a large pot, melt butter.
  • Add onion; sauté until soft.
  • Add celery, carrot and garlic; sauté for a few minutes until soft but not browned.
  • Add kidney beans and their liquid, ham and vegetable broth. Simmer for about 15 minutes.
  • Add Worcestershire, parsley, thyme, bay leaves and lemon juice.
  • Bring back to a boil and simmer for 30 minutes.
  • Serve, passing the hot sauce!

3 quarts water
1 smoked ham hock, with meat attached
1 bay leaf
1 lb dried navy beans or 1 lb kidney bean
2 large onions, chopped
2 stalks celery, with leafy tops chopped
1 carrot, shredded
1/2 sweet red pepper, chopped
1 cup fresh parsley, chopped
1 tablespoon ground cumin
1 teaspoon dried oregano
1 -2 teaspoon creole seasoning
4 garlic cloves, minced
hot pepper sauce

Steps:

  • In large no-stick pot, combine the water, ham hock, and bay leaf. Bring to a boil over med-high heat. Reduce the heat to med-low, cover, and simmer for 1 hour. Uncover and simmer for 30 minutes.
  • Strain into a large bowl. Discard the bay leaf. Remove the meat from the bone. Trim off all visible fat and cut the meat into small dice. Set aside about 3/4 cup of the meat; reserve any remainder for another use. Defat the Stock.
  • Wash the pot with soapy water and rinse. Return the stock to pot.
  • Add the beans, onions, celery, carrots, red peppers, parsley, cilantro, cumin, oregano, Creole seasoning, and garlic. Set over med-high heat and bring almost to a boil. Reduce the heat to low, cover and simmer for 2 1/2 to 3 hours, or until the beans are tender.
  • Transfer 4 cups of the soup to a blender or food processor. Puree, then stir back into the soup. If the soup is not thick enough, continue pureeing in 1-cup batches until the soup is the desired consistency. (May also use a hand blender in this step.) Stir in the reserved ham. Season to taste with the hot-pepper sauce.

2 cups dried navy beans
2 medium-sized tomatoes, coarsely chopped
2 scallions, coarsely chopped
2 tablespoons olive oil
1 stalk celery, coarsely chopped
3-4 large cloves garlic, coarsely chopped
1/2 teaspoon freshly ground black pepper
1-2 branches basil (1/4 cup loosely packed leaves)
1 1/2 teaspoon salt
Garnish and accompaniments: Freshly grated Parmesan or aged goat cheese, freshly ground black pepper

Steps:

  • You will need a large pot with a lid. Rinse beans in cold water to clean, then place in large saucepan, cover with 3 to 4 inches of cold water and bring to a boil. Skim off any foam, drain off water, and cover beans again with cold water to a depth of 3 to 4 inches. Put back on heat. As water heats, add tomatoes, scallions, oil, celery, garlic, black pepper, and basil. Cover and bring to a boil. Lower heat and simmer covered for 2 to 3 hours, until beans are cooked and tender. Check beans every so often to ensure that they aren't running dry. Add more water if necessary. Once beans are cooked, add salt, and bring back to a rolling boil for 3 to 5 minutes to thicken. Set aside until ready to serve, then reheat, and transfer to serving dish. Serve hot, topped with a sprinkling of grated cheese and of freshly ground black pepper. Put out pepper and extra cheese so guests can adjust flavorings as they wish.

1 medium sweet red pepper, chopped
1 jalapeno pepper, seeded and minced
2 tablespoons olive oil
3 garlic cloves, minced
3 cans (15 ounces each) black beans, rinsed and drained
3-1/2 cups vegetable broth
1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
1 can (4 ounces) chopped green chilies
1/3 cup sherry or additional vegetable broth
2 tablespoons minced fresh cilantro
1/2 cup fat-free sour cream
1/4 cup shredded cheddar cheese

Steps:

  • In a Dutch oven, saute onion and peppers in oil until tender. Add garlic; cook 1 minute longer., Stir in the beans, broth, tomatoes and chopped green chilies. Bring to a boil. Reduce heat; simmer, uncovered, for 25 minutes. Add sherry and cilantro; cook 5 minutes longer., Remove from the heat; cool slightly. Place half of soup in a blender; cover and process until pureed. Return to the pan and heat through. Top each serving with 2 teaspoons sour cream and 1 teaspoon cheese.

1 tablespoon vegetable oil, or as needed
4 (14.5 ounce) cans chicken broth
2 cups roughly chopped carrots
2 tablespoons chopped fresh parsley
2 teaspoons dried oregano
2 teaspoons red pepper flakes
½ teaspoon garlic powder
3 (15 ounce) cans black beans, drained and rinsed
1 cup frozen corn
2 cups cooked white rice

Steps:

  • Heat a 3-quart saucepan over medium-high heat. Saute onion in vegetable oil until tender, about 5 minutes. Remove from heat. Stir in broth, carrots, parsley, oregano, red pepper flakes, and garlic powder.
  • Bring to a boil over high heat. Reduce heat, cover, and simmer until carrots are fork-tender, about 10 minutes.

1 1/2 pounds green beans, stem ends removed
8 garlic cloves
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon freshly ground white pepper
Large pinch of paprika
Pinch of cayenne pepper
4 1/2 teaspoons extra-virgin olive oil (enough to lightly cover the pan)
3 tablespoons honey
1/4 cup Cognac

Steps:

  • Bring a large pot of salted water to a boil. Add the beans and garlic. Blanch for 3 minutes and drain.
  • In a small bowl, combine the salt and spices.
  • Heat a large saute pan over medium heat. Add the olive oil, honey, and the spice mixture. Let the honey "melt" together with the olive oil and spices.
  • Pat the drained beans and garlic cloves dry with paper towels, add them to the pan, and toss gently to coat them in the honey-spice mixture, 3 to 4 minutes.
  • Turn off the burner, pour Cognac into the pan, and flambe the beans until the alcohol is burned off. To flambe, ignite the alcohol by carefully touching the edge of the pan with the flame of a match or lighter. Novices are best off using fireplace matches or wooden kitchen matches instead of flimsy paper ones. Place the beans and garlic in a dish and serve, drizzling the remainder of the honey-spice mixture over them. Season with extra salt, if needed.
