Number Of Ingredients 11

2 cups chicken, cooked, cut in small bite-sized pieces
4 cups pasta, cooked and drained (approximately 2 cups uncooked); penne, cavatappi, or rigatoni works well
3 tablespoons butter
1 small onion, finely chopped
2 garlic cloves, minced
2 tablespoons flour
1/2 cup sour cream
1 cup milk
3 cups cheese, grated (cheddar, colby jack, Swiss, or a combination), with 1/2 cup reserved for sprinkling on top
1/2 teaspoon red pepper flakes
salt and black pepper to taste

Steps:

  • Preheat the oven to 350°F. Lightly grease the inside of a 9x13-inch baking dish. In a large skillet, melt the butter over medium heat and cook the onion and garlic until the onion is translucent, about 5 minutes, stirring occasionally. Add the flour and whisk together for about 1 minute, this will allow the flour to cook just a little before adding the other ingredients. Add the sour cream and milk, and continue whisking until the mixture has thickened. Remove from heat and add all but ½ cup of the cheese. Add the red pepper flakes, salt, and black pepper, cooked chicken, and cooked pasta. Stir together, then layer evenly in the bottom of the prepared baking dish. Sprinkle the remaining cheese evenly over the top of the casserole and bake for 30 minutes or until the cheese on top is melted and the sauce is bubbly. Remove the casserole and let it sit for about 15 minutes prior to serving.

1 ½ cups biscuit mix
½ cup grated Parmesan cheese
1 teaspoon salt
1 teaspoon ground black pepper
1 bunch fresh asparagus, trimmed

Steps:

  • Heat vegetable oil in a large skillet over medium heat.
  • Whisk milk and eggs together in a bowl.
  • Stir biscuit mix, Parmesan cheese, salt, and black pepper together in a separate bowl.
  • Dip asparagus into milk mixture.
  • Roll and coat asparagus in dry ingredient mixture. Repeat with a second layer for each asparagus.
  • Carefully place coated asparagus in the hot oil; fry until golden brown, 2 to 4 minutes.

This recipe came from Paula Deen who has a cooking show on the Food Network. This chicken is so good. The house seasoning is made in bulk. You can store this for several months.

4 eggs
1/3 cup water
1 cup hot red pepper sauce (does not make chicken spicy)
2 cups self rising flour
1 teaspoon pepper
2 1/2 lbs chicken, cut into pieces
peanut oil or vegetable oil
1 cup salt
1/4 cup pepper
1/4 cup garlic powder

Steps:

  • Mix seasoning together and store in airtight container for up to 6 months.
  • In medium bowl, beat eggs with water. Add enough hot sauce so mixture is bright orange.
  • In another bowl, combine flour and pepper. Season chicken with house seasoning. You can let the chicken sit in hot sauce for up to 1 hour. It will not make the chicken spicy.
  • Dip Chicken in egg and coat well with flour mix.
  • Heat oil to 300 degrees in deep pot. Don't fill pot more than half full of oil.
  • Fry chicken in oil until brown and crispy. Dark meat goes in first and takes 13-14 minutes. White meat takes 8-10 minutes.
  • Preparation depends on how long you let the chicken soak in hot sauce.

4 tablespoon butter
1 juiced lemon
salted water
5 to 6 spears per person asparagus
olive oil
to taste kosher salt

Steps:

  • Wash asparagus and line them up on a cutting boar with the tops even. Even up bottoms and cut off tough ends.
  • Bring a skillet or oval casserole filled half full of salted water to boil. Dump in asparagus all at once. When water returns to the boil, cook asparagus from 1 to 3 minutes depending on its size and your preference. Remove from pot and drain well.
  • Return asparagus to hot pan, squeeze lemon juice over top. Fry with olive oil and a little butter, being careful not to overcook. Add kosher salt to taste. Serve immediately.
  • To make sauce, melt 2 tablespoons butter and whisk in lemon juice.

1 lb fresh asparagus
1 cup all-purpose flour
1 cup whole buttermilk
1 large egg
1 tablespoon hot sauce
1 1/2 cups self-rising cornmeal mix
1 tablespoon cajun seasoning
peanut oil (for frying)

Steps:

  • Snap off tough ends of asparagus. Rinse asparagus with water, and leave damp.
  • Place flour in a resealable plastic bag; add asparagus, seal and shake to coat.
  • In a shallow dish, whisk together buttermilk, egg, and hot sauce.
  • In another shallow dish, combine cornmeal mix and Cajun seasoning.
  • Dip asparagus in buttermilk mixture; dredge in cornmeal mixture.
  • In a large Dutch oven, pour oil to a depth of 2 inches. Heat oil over medium heat to 365 degrees. Fry asparagus, in batches, 4-5 minutes, or until golden brown.
  • Drain on paper towels and serve with Creole Mustard Sauce.

8 -10 fresh asparagus spears, washed and trimmed
2 tablespoons butter, divided
salt and pepper (or lemon pepper)
2 slices pumpernickel bread
2 slices monterey jack cheese
1 -2 tablespoon thousand island dressing (recipe follows)
3 slices red onions, cut into rings
1 1/2 cups mayonnaise
1 hard-boiled egg, crushed finely
1 cup ketchup
1/4 cup dill relish
salt and pepper
lemon pepper

Steps:

  • First,blanch the asparagus spears in boiling, salted water for 1 minute. Remove immediately to a bowl of ice water.
  • Melt 1 tablespoon of butter in a large skillet over medium heat. Add asparagus and saute lightly. Season with the salt and pepper, or lemon pepper. Remove asparagus from pan and set aside. Butter 2 pieces of the pumpernickle bread with the remaining 1 tablespoon butter. Place the bread in the same skillet, buttered side down, and grill on 1 side. Flip bread and place 1 piece of cheese on each slice of bread. Grill until cheese is melted and then remove from pan. Spread desired amount of dressing on top of each slice of bread. Arrange asparagus on top of cheese, rotating the spears. Place onion rings on top of asparagus. Cut sandwich in half. Garnish with pickle slices or parsley, if desired. Enjoy!
  • In a medium bowl, mix all ingredients together. Season with salt, pepper, and lemon pepper, to taste. Store it in an air-tight container and refrigerate until ready to serve.
  • Yield: 2 3/4 cups.

1 cup(s) buttermilk
1 - egg
2 - splashes hot sauce
1 1/2 cup(s) self rising corn meal
1 tablespoon(s) cajun seasoning
- veg oil for frying
CREOLE SAUCE
1/4 teaspoon(s) creole seasoning
1/4 teaspoon(s) garlic powder
1/4 cup(s) onion powder
3 tablespoon(s) creole mustard
2 teaspoon(s) dry ranch dip seasoning
2 - shakes hot sauce
- lemon juice of 1/2 of lemon
2/3 cup(s) sour cream
- salt to taste

Steps:

  • Rinse drain and snap off ends of asparagus.
  • Shake asparagus in flour in plastic bag.
  • Mix wet ingredients of buttermilk, egg and hot sauce. Dredge in wet ingredients.
  • Then mix corn meal and cajun seassoning and dip asparagus in.
  • Then put in hot oil and fry til golden brown (just a few mins).
  • You Can eat just as is or make the creole sauce that Is at bottom of recipe.

1 (13 ounce) cranberry sauce, sliced into 1/2-inch thick rounds (jelly style)
2 cups all-purpose flour, divided
2 tablespoons sugar
1 pinch salt
1 teaspoon baking powder
1 cup water
oil, for frying

Steps:

  • Lay the cranberry sauce rounds out in a single layer on a parchment paper-lined sheet pan and freeze for 4 hours or until solid.
  • In a shallow bowl, place one cup of the flour. In another shallow bowl combine the remaining cup of flour with the sugar, salt, and baking powder. Pour in the water and stir together until smooth. Let the batter rest for 15 minutes.
  • Heat the oil in a deep-fryer or large Dutch oven to 375 degrees F.
  • Dredge the frozen cranberry sauce rounds in the flour. Then dip rounds in the batter and gently place in the oil. Fry until golden brown, about 3 minutes. Transfer to a paper towel-lined plate to drain.
  • Serve and enjoy immediately.

2 tablespoons garlic powder
1 tablespoon baking powder
1 tablespoon salt
2 large eggs
1 cup buttermilk
2 cups Italian-seasoned bread crumbs
½ cup grated Parmesan cheese
1 bunch fresh asparagus, trimmed
1 cup peanut oil for frying, or as needed

Steps:

  • Mix together flour, paprika, garlic powder, baking powder, and salt in one bowl, eggs and buttermilk in another, and bread crumbs and Parmesan cheese in a third.
  • Coat each asparagus stalk in the flour blend, dunk into the egg mixture, then roll in the bread crumbs. Transfer to the refrigerator and let them rest for 30 minutes; this will help the breading stick during frying.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Fry asparagus in the hot oil, working in batches as needed, until breading is golden brown, about 4 minutes. Transfer to a paper towel-lined plate to drain excess grease. Serve hot.

1 egg, beaten
plain breadcrumbs, for dredging
4 cups cooked elbow macaroni, drained
2 cups grated cheddar cheese

1/2 teaspoon salt
1 cup milk

Steps:

  • Heat 2 inches of oil in a large, heavy Dutch oven to 350 degrees F.
  • Dredge each Cheesy Mac square in flour, then egg, and then bread crumbs to coat. Fry for about 1 minute on each side until golden brown. Drain on paper towels before serving.
  • Preheat oven to 350 degrees F.
  • Once you have the macaroni cooked and drained, place in a large bowl and while still hot, add the Cheddar. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes. Top with additional cheese, if desired.

1 cup 2% milk
3 ounces cream cheese, cubed
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup shredded cheddar cheese

  • In a large skillet, saute asparagus and onions in 1 tablespoon of butter until crisp-tender, about 8 minutes.
