- 1. To make the meringue: Preheat the oven to 350°F. Line the bottom and sides of a 10-by-15-inch jelly roll pan with parchment paper and grease it lightly. Lightly grease the top rim of the pan and set aside.2. In a stand mixer set on medium-low speed, beat the egg whites and cream of tartar until foamy. Increase to high speed, slowly add the sugar, and beat until glossy, stiff peaks form. Dust the meringue with the cornstarch, then fold it in with the vanilla.3. Smooth the meringue into the prepared pan and bake for 30 minutes. It will be puffy and high. Cool for 5 minutes, then loosen any edges that stick to the pan. Gently turn it over onto a sheet of parchment dusted with powdered sugar. Cool for 10 minutes, then peel off the paper.4. To make the filling: In a medium bowl, mix together the mascarpone, cream, and sugar until blended. Stir in 1 teaspoon orange flower water until blended. Taste, adding additional orange flower water in drops as needed.5. To assemble: Spread the filling over the meringue. Beginning at a short side, carefully roll up the meringue, using the parchment paper to support it. Chill for 2 to 3 hours before serving. Slice the roulade, and serve it plain or with any of the suggested fruit toppings. It is best served within 4 hours.Notes: Baker's or superfine sugar is available in supermarket baking sections. For a quick substitute, whirl 1 cup of granulated sugar at a time in a processor or blender until fine, about 20 seconds.Orange flower water is available in supermarket liquor sections. - Position rack in center of oven and preheat to 400°F.
- Line 15 x 10 x 1-inch baking sheet with parchment paper (or waxed paper) extending 2 inches over ends of pan.
- Grease the parchment paper with shortening.
- Beat egg whites in large bowl until soft peaks form.
- Gradually add 1¼ cups sugar, beating until meringue is stiff and shiny.
- Spread meringue evenly in prepared baking sheet.
- Bake until pale golden, about 8 minutes.
- Reduce oven temperature to 325°F.
- Bake until meringue is slightly firm to touch on top but soft inside, about 8 minutes longer.
- Remove baking sheet from oven.
- Run knife around pan sides to loosen meringue.
- Turn out onto sheet of parchment paper.
- Carefully peel off parchment paper.
- Cool meringue 25 minutes.
- Whip cream and vanilla in medium bowl to stiff peaks.
- Mix sliced strawberries and preserves in another medium bowl.
- Spoon the strawberry mixture over meringue, leaving 1-inch border on all sides.
- Spread whipped cream over strawberry mixture.
- Starting at one long side, gently roll up meringue jelly-roll style, enclosing filling.
- Place roulade, seam side down, on platter.
- Refrigerate at least 1 hour and up to 4 hours.
- Dust roulade with powdered sugar.
- Cut into slices.
- Transfer to plates.
- Garnish with whole strawberries, if desired.
- Serve roulade chilled.
BROWN SUGAR ROULADE WITH BURNT HONEY APPLES
If the flavors of winter could be rolled into one, then this meringue roulade would be the result: Warming cinnamon, burnt honey, sweet apples and tangy orange come together to make a dessert fit for the festive season. Make sure all your individual components have completely cooled before assembling, as you don't want to create any excess moisture in the roulade. Get ahead by making the apples and cream the day before, then keeping them refrigerated until needed. Feel free to make this roulade your own by swapping out pears for apples, cardamom for cinnamon or more whipping cream for mascarpone. So long as you stick to the basic technique, the flavors are yours to play with.

- Heat the oven 425 degrees Fahrenheit/220 degrees Celsius.
- Make the apple filling: Add the honey, vanilla seeds and bean (pod), bay leaves, cinnamon stick, ground cinnamon and flaky salt to a large, oven-proof sauté pan. Cook over medium heat until the honey is deeply brown and almost burned, stirring often. (Don't be afraid to take it to the edge; you want it to be very dark.) This process can take anywhere from 6 to 10 minutes, so make sure you keep an eye on it. Off the heat, whisk in the orange juice. Gently pour 5 tablespoons/65 grams of the burnt honey into a heatproof bowl. Pick out the bay leaves and vanilla beans (pods), and add them to the bowl.
- To the sauté pan with the remaining burnt honey, stir in the apples and olive oil. Transfer to the oven for 20 minutes, stirring halfway through, until the apples have softened and caramelized but still retain their shape. Set aside to cool completely. Pick out the cinnamon stick and add it to the reserved burnt honey bowl. Keep the oven on.
- Make the roulade: Line an 11-by-15-inch (30-by-40-centimeter) baking sheet (baking tray) with parchment paper.
- Add the egg whites to the bowl of a stand mixer fitted with the whisk attachment and beat on medium-high speed for 1 to 2 minutes, until soft peaks form. Combine both sugars in a bowl, then gradually add them to the mixer, 1 tablespoon at a time, whisking continuously on medium-high for 5 to 6 minutes, until the mixture becomes a thick, glossy meringue. Reduce the speed to low and add the vanilla, vinegar, cornstarch (cornflour) and cinnamon, then scrape the sides of the bowl, if needed. Turn the speed to medium and whisk for 1 minute to fully combine.
- Spoon the meringue onto the prepared tray and use an offset spatula to spread it out evenly about 3/4-inch thick so it measures about 10 by 14 inches (25 by 35 centimeters). Once the apples have cooked, transfer the meringue to the oven and immediately turn the heat to 375 degrees Fahrenheit/200 degrees Celsius. Bake for 32 minutes, until the meringue is crusty on top and lightly browned. Set aside to deflate and cool completely, about 45 minutes.
- Meanwhile, make the cream: Add the mascarpone, whipping cream and confectioners' sugar (icing sugar) to a stand mixer fitted with the whisk attachment. Beat on medium speed for about 1 minute, until soft peaks form. Stir in 1 tablespoon orange zest.
- Place a clean tea towel on top of the cooled meringue and quickly invert the whole thing onto a work surface. Lift off the pan (tin) and peel away the parchment paper. Spread three-quarters of the cream evenly all over the meringue. Top evenly with the burnt honey apples. (Reserve any liquid released from the apples for another use.)
- Starting with the longest side closest to you and using the tea towel to assist you, roll the meringue up and over, so that the edges come together to form a log, gently pulling away the tea towel as you roll. Slide the meringue onto a long tray or platter, seam-side down. Use a serrated knife to trim off 3/4 inch (2 centimeters) from the sides to create neat edges. (You can nibble on these, if you like!) Refrigerate to firm up, at least 30 minutes (and up to 3 hours if you're getting ahead).
- To serve, spoon the remaining cream down the length of the roulade. Top artfully with the bay leaves, vanilla pods and cinnamon stick. Drizzle with the reserved burnt honey syrup and sprinkle with the extra zest.

- First, make the ganache. Whisk the coffee and melted chocolate together until you have a smooth, glossy mixture. Leave to cool and thicken, stirring occasionally.
- Heat the oven to 180C/160C fan/gas 4. Line a 23 x 32cm baking tray with baking parchment. For the meringue, beat the egg whites and a pinch of salt with an electric whisk until stiffened slightly.
- Add 1 tbsp of the caster sugar to the egg whites, then whisk again to stiff peaks. Repeat with the rest of the sugar, a spoonful at a time, until the mixture is thick and shiny. Spread evenly into the tray, then bake for 15-20 mins, or until crisp to the touch and lightly golden in places. Leave to cool completely.
- For the mascarpone cream filling, put the cream, sugar, mascarpone and liqueur, if using, in a medium bowl and whisk until thickened.
- To assemble, sift some icing sugar over a large sheet of baking parchment, then carefully flip the cooled meringue onto it. Lift off the tin and peel away the baking parchment. With a short end facing you, score a line 2cm into the edge of the meringue. Spread the ganache evenly over the meringue, then top with the cream, smoothing it with a palette knife, then carefully roll into a roulade, starting from the scored end and using the parchment to help. Transfer to a serving plate and dust with cocoa powder.

- Preheat your oven to 200C/180C Fan. Line a Swiss Roll tin with parchment paper – Mine was about 23cmx33cm.
- Whisk the egg whites with an stand mixer – I use my Kitchen Aid until they form stiff peaks – when you reach this stage, start adding the sugar 1tsp at a time. Once all of the sugar is incorporated it should be glossy, add in the lemon zest and keep whisking for a couple of minutes.
- Spread the mixture onto the parchment within the swiss roll tin so that its as even and flat as you can get it – Bake the meringue in the oven for 10 minutes, and then lower the temperature of the oven to 180C/160C Fan and bake for another 20 minutes.
- Leave the Meringue to cool in the tin for about 15 minutes, and then turn it out onto a fresh bit of parchment (top of the meringue will be the side on the new parchment paper) and peel off the old bit of parchment and leave it to cool fully.
